The Allegrini family has been contributing to the history of Valpolicella since the 16th century. Giovanni Allegrini, the visionary, is considered the architect of its rebirth. A man they called "il ragno delle botti", the cellar master spider, because he wandered restlessly between his barrels, always in search of perfection. His son Franco carried on the legacy, revolutionising the Appassimento with the construction of the Terre di Fumane – a state-of-the-art drying facility that precisely controls temperature, humidity and air circulation. Since 2022, the winery has been in the hands of the third generation: Francesco, Giovanni, Matteo and Silvia. The Amarone comes from vines that have been rooted for over 30 years on the hills of Fumane, between 450 and 520 metres above sea level, on clay and limestone soils of volcanic origin. Corvina Veronese and Corvinone each make up 45 per cent of the cuvée, supplemented by Rondinella and Oseleta. After the manual harvest in September, the transformation begins: the grapes rest for four months in the fruttaio, losing 40 to 45 per cent of their weight and concentrating sugar and aromas. Gentle pressing in January, followed by 25 days of maceration at a controlled temperature. Ageing: 18 months in new barriques, a further seven months in large barrels and finally 14 months in the bottle – a total of over three years before the wine leaves the winery.

Gaio Valerio Catullo came from Verona. He wrote in Latin, with passion and precision, about love and loss, about the transience and intensity of the moment. Bertani has dedicated this Ripasso to him – not by chance, but because the wine strives to embody the same character: intense, authentic, born of the deepest regional conviction. Catullo follows the historic Ripasso method in its most rigorous form. After the Amarone Classico has been produced, the pomace is put to use once more: the Valpolicella is passed over these residues, ferments a second time, and absorbs colour, tannins and complexity. The ratio is strict: for every bottle of Bertani Amarone Classico, exactly one bottle of Catullo is produced. No more is possible. The Ripasso is therefore inextricably linked to the Amarone.

The lily is the flower of all flowers in Valpolicella and this exceptional Riserva is dedicated to the best of them. The grapes for this new flagship of the winery, produced in very small quantities, grow on 300-metre-high soils of mainly limestone with some sandy silt in the Monti Garbi district of the municipality of Mezzane di Sotto. The vines have an average age of 40 years and produce only small yields. After harvest, the grapes are selected twice by hand. The Lilium Est is aged for three years in new Bordeaux barriques, the laths of which have been dried outdoors for 36 months. Before it goes on sale, it remains in the bottle for at least another four years.

At the beginning of the 20th century, La Fabriseria referred to the parish council of Sant'Ambrogio, the Fabbriceria, commissioned to build a new church. Grandfather Riccardo Tedeschi was one of the Fabbriceri – and it was customary for each councillor to bring his best wine to the meeting. At the end, a toast was made to God and good work. This rite sealed contracts and friendships; today it seals one of the most precious wines of the house. In 2000, the family acquired the seven-hectare vineyard in Le Pontare, between Fumane and Sant'Ambrogio, and planted it with exceptional density: 7,200 vines per hectare in Guyot training, at an altitude of 450 metres with a view of the entire valley, Verona and Lake Garda. The soil tells of the Cretaceous period: pink-white limestone marl, rich in calcium carbonate and iron oxide, interspersed with grey-yellow clay slate – a terrain that provides structure and balance, aromatic complexity and longevity.

This immensely popular and elegant classic Amarone from Zenato comes from Sant'Ambrogio, the heart of the Valpolicella Classico region, where the family has been based since 1960. Corvina makes up eighty per cent of the blend, complemented by Rondinella, Oseleta and Croatina – all grown on the slopes of the Costalunga vineyard. Following the hand-harvest in October, the appassimento process begins: the grapes rest in shallow crates for four months, losing water whilst concentrating their sugar and aromas. Pressing does not take place until January, followed by slow fermentation in contact with the skins. The wine then matures for thirty-six months in large Slavonian oak barrels before being released following further bottle ageing.

At the beginning of the 20th century, Caterina Zardini lost her husband. What remained were ten children, a hundred hectares of land in the heart of Valpolicella Classica and a winery that her husband Carlo Campagnola had built up with passion – he had won the prize for the best Recioto in the region in 1907. Caterina could have handed over the estate. But she didn't. She took over the work and continued to run the winery with all her children, laying the foundations for five generations of a wine family that is still rooted in Marano di Valpolicella today. This Amarone bears her name, a tribute.

Two stone crosses stand in the vineyard of Le Pontare, probably of Celtic origin, signposts for pilgrims on the path to a nearby sanctuary. According to legend, Dante Alighieri also passed by here on his wanderings through the Veneto, perhaps in search of that vin pretto – the pure wine – which he praised so highly in his Convivio. If you stand between these crosses today, at 450 metres above sea level, you can look down over the entire Valpolicella Classica valley, Verona and the shimmering waters of Lake Garda.

Giovanni Allegrini had a way of assessing the skills of Oenologist: he had them make Recioto. No other wine from Valpolicella demands so much patience, sensitivity and intuition – and no other reveals so relentlessly whether someone truly understands what this landscape is capable of. Since 1990, his children have dedicated this very wine to their father, the man who shaped Valpolicella like no other. Recioto is one of the oldest wines in the world, known since Roman times. It shares the appassimento technique with Amarone – but differs in one crucial decision: fermentation is naturally halted before all the sugar has been converted into alcohol. Sweetness remains. What was stopped too late in Recioto became Amarone – bitter, dry, great. Recioto is the father. The best grapes from the highest slopes, hand-harvested, then dried for five months on wooden racks in the Fruttaio. After gentle pressing, fermentation in steel, then 14 months’ ageing in new barriques, a further two months in large casks, and approximately two years’ bottle ageing.

Giovanni Allegrini used to describe his vineyard in a way that no Oenologist would ever use: "The morning sun, dispelling the shadows of the night, awakens nature and gently caresses the grapes." He was proud of this slope – “The wild mountain” – because its eastern exposure ensures that the first light of day hits the grapes before the heat arrives. A consistent ripening, subtle and patient, like everything that aims to be truly good. Fieramonte is the estate’s highest and most demanding vineyard. Corvina Veronese provides the structure and red fruit. Corvinone the body. Rondinella the freshness. And Oseleta – one of the rarest, oldest Veronese grape varieties – almost forgotten, preserved by Allegrini – adds a dark, tannic complexity that no other wine from the appellation possesses to the same degree.

There are stories that take time. This Amarone rested for ten years in a single 30-hectolitre Slavonian oak barrel – a decade of patient ageing, of slow metamorphosis, of quiet perfection. Only 2,500 numbered bottles and 200 magnums were bottled from the 2013 vintage, each in its own wooden crate, a monument to the philosophy that Carla Prospero Zenato formulates as follows: "Ci sono storie che richiedono il loro tempo" – there are stories that demand their time.

Dal Forno's Amarone della Valpolicella 2018 is, as always, convincing across the board. With a little air, the tannins soften and release a variety of intense dark aromas and flavours. Dark chocolate, cloves, violets, plums and blackberry jam coat every inch of the palate in a stunning Amarone that captures all the best qualities of the vintage. When Romano Dal Forno's wines are on a roll, there's nothing quite like it, and that's certainly the case here. Needs a lot of air when young, experienced connoisseurs will practise patience. There is no announcement calendar for this wine. No planned release date, no market strategy. Marco Dal Forno has opened his treasure trove – and pulled out the 2011. That's all you need to know. Romano Dal Forno makes his decisions in the vineyard, not in the cellar. Only vines over ten years old provide grapes for the Amarone – only the best sites on Monte Lodoletta. After the harvest, three months of appassimento in the drying rooms of the well-ventilated Lodoletta: the berries lose up to 40 per cent of their weight, what remains is concentration in its purest form. Fermentation in steel tanks with computer-controlled pump-overs, at least 24 months in new barriques, then years – many years – in the bottle. The vintage itself was full of surprises: started cool, exploded in August, cooled down for the harvest.

In the gentle hills of Mezzane di Sotto, where the Monti Garbi rise majestically over the eastern Valpolicella, lies the centrepiece of the Tenuta Sant'Antonio: Campo dei Gigli – the field of lilies. The oldest vines of the brothers Armando, Tiziano, Paolo and Massimo Castagnedi are rooted here, on calcareous white soils with sandy-loamy inclusions at an altitude of 300 metres. A single vineyard that produces a unique wine. Since 1989, the Castagnedi family has embodied the revolution that changed Valpolicella forever: quality instead of quantity, while everyone else was still focussing on quantity. Forty-year-old vines, trained on the traditional Pergola Veronese with only 3,300 vines per hectare, bear the cuvée of 70% Corvina and Corvinone, 20% Rondinella and 5% each of Croatina and the rare Oseleta. The appassimento – the mystical drying period of at least three months – transforms the hand-picked grapes into concentrated essence.
