The Montecucco Rosso Riserva is the centrepiece of production: the wine that most directly expresses the philosophy of the estate. Italian passion meets Swiss precision – is how the Tipa Bertarelli family itself describes its approach. In the glass, this is convincing every year anew. 80% Sangiovese, 10% Ciliegiolo, 10% Cabernet Sauvignon – grapes from vineyards on sandstone, marl and clay at 300 metres. Spontaneous fermentation on natural yeast in temperature-controlled steel tanks, followed by 16 months of ageing: the Sangiovese in 40-hectolitre oak barrels, Ciliegiolo and Cabernet in 500-litre French oak Liters.

The grapes undergo a 6–8-hour cold maceration before pressing – a process that releases the fine fruit flavours from the skins. Fermentation takes place at a controlled 19 °C in stainless steel.

Col Fondo has been part of the Adami product family since the early 1900s. Initially, grandfather Abele and later father Adriano bottled the wine in spring. This then began to ferment again in the warmer months of May and June, producing what is known in Veneto as "vin col fondo". The origin of the name is easy to explain: it is due to the yeasts that settle at the bottom of the bottle after all the residual sugar has been consumed, causing the wine to develop in an exciting way over time. It always comes onto the market about a year later.

Gewürztraminer polarises opinion. Some love the opulence, the rose blossom, the exotic heaviness. Others avoid it for this very reason. Alois Lageder has a clear stance on this: Gewürztraminer should be aromatic – but not overwhelming. It should show juiciness, drinkability and mineral depth. No perfume that overwhelms. A grape variety that shows what it can do without forgetting its limits. The answer lies in the diversity of its origins: twelve winemaking partners in Margreid, Kurtatsch, Tramin and the Eisack Valley – 230 to 740 metres above sea level, calcareous and volcanic soils side by side in rare diversity. The warm Unterland sites provide substance and fruit, while the cooler Eisack Valley delivers freshness and finesse. Temperature-controlled fermentation in steel and partly in large wooden barrels, a small percentage fermented and macerated on the intact grapes. Matured mainly in steel on the fine lees for around four months.

In the vineyards of Eppan and Kaltern, between 350 and 500 metres above sea level, Pinot Noir finds the alpine conditions that allow it to mature into an elegant interpretation of the Burgundian grape variety. The grapes thrive on moraine debris with limestone and gravel in a temperate climate with cooling winds, which give the variety its characteristic freshness and aromatic clarity. The St. Michael-Eppan winery, one of the leading cooperatives in South Tyrol since 1907, cultivates its vineyards with respect for the grape and favours environmentally friendly cultivation with targeted yield regulation. After temperature-controlled fermentation in stainless steel tanks, the wine matures for six months in large Slavonian oak barrels. This ageing method preserves the fruitiness and varietal elegance, while the wood adds subtle spice and structural depth without masking the fine varietal aromas.

Since the 16th century, the Allegrini family has been one of the driving forces behind Valpolicella. Then, at some point, the desire arose to produce a white wine from Lake Garda. The Tenuta Oasi Mantellina in Pozzolengo – the southern shore of Lake Garda, in the province of Brescia – became their answer. The name reflects what this patch of land is: a natural oasis, rich in biodiversity, swept by the breezes of Lake Garda, on clay-rich moraine soils that give the Turbiana its characteristic minerality. 96% Turbiana, 4% Cortese, hand-harvested in September, gentle pressing, stainless steel, four months on the lees, two months in bottle.

Stone. The word needs no explanation – and certainly not in South Tyrol. The name describes the soil on which these vines grow: a 150 metre deep alluvial fan that the Sirmian and Nalles streams have carried down from the mountains into the valley over thousands of years. Alluvial rock, clay, marl – a soil that stores water well, releases heat slowly and gives the Sauvignon Blanc that salty minerality that is immediately recognisable in the glass. The vineyards are located in Nalles, between Bolzano and Merano, at 330 to 400 metres above sea level, exposed to the east-southeast. The climate is the typical South Tyrolean paradox: warm to hot during the day, noticeably cool at night – the temperature fluctuations create aromatic precision and preserve freshness. 100% Sauvignon Blanc, hand-picked, fermented in steel for around three weeks, then matured on the lees for five months before bottling.

Here, the Argiolas family is realising a very special project: the rediscovery of Nasco, an almost forgotten indigenous grape variety that was once brought to Sardinia by Phoenician seafarers. The name Nasco is probably derived from the Latin "muscus" – musk – a tribute to the extraordinary fragrance of this rare grape. While Nasco is traditionally vinified into sweet wines, Argiolas has chosen the innovative method of dry vinification: the grapes are harvest a month earlier, resulting in a modern white wine of particular elegance.

A wine that was voluntarily relegated. Munus was the flagship among the Bardolino red wines from Guerrieri Rizzardi – a Bardolino Superiore DOCG, Italy's highest classification level. The name reveals where the structure comes from: "Limo" means silt, and the soil on the hills of Rocchetta Tanaro contains plenty of it. 40% silt, 30% sand and 30% clay give the wine its unmistakable backbone. The vines planted in 2010 are densely planted – 5,500 per hectare – and face south and east. Vinified exclusively in steel, four months of tank ageing and two months of bottle ageing preserve freshness and varietal character.

In the 1820s, wine merchants knew three Bardolino crus that existed in Switzerland's grand hotels alongside Burgundy and Beaujolais. In 1968, they were lost in the DOC regulations. They have been back since 2021 – and Montebaldo, the northernmost and highest subzone on the foothills of Monte Baldo, is perhaps the most exciting. Guerrieri Rizzardi's response to this rediscovery: 95 per cent Corvina – the highest percentage the winery has ever bottled –supplemented by a touch of Rondinella, vinified completely without wood. This is not a concession to light summer enjoyment. It is a statement about transparency: the grape speaks exclusively here, and the moraine soil of Cavaion gives it a resonance chamber.

Behind the Castello di Soave, invisible to the tourists enjoying the view of the plain, lies a vineyard that epitomises the opposite of what Soave has been for decades. No mass product, no compromise. Ferra is single-varietal Garganega from volcanic gravel – of a hilltop that has belonged to the Rizzardi family since 1977 and has been bottled as a single vineyard since 2014. What makes this Soave stand out from the standard, pleasing wines: Garganega gets the full stage here. Fermentation in glazed cement tanks preserves the mineral precision, while six months in large foudres give the wine texture, depth and richness that go far beyond what is expected from the appellation.

While the Rive wines from Andreola each bring a single vineyard to the glass, the Dirupo tells a different story: that of the entire denominazione. For this brut, Stefano Pola draws on the privilege of a vineyard network that extends across all 15 municipalities of the Valdobbiadene DOCG – from gentle slopes at 200 metres to extreme steep slopes at 500 metres, on limestone marls, sandstones, conglomerates and deep clay soils. No other wine of the house represents the territory so completely. The choice of grape varieties emphasises this approach: 90% Glera, supplemented by Bianchetta and Perera – two indigenous varieties of the hills, which have long since disappeared from standard Prosecco, but here they quietly contribute to the aromatic depth.

The loose, well-aerated sandy soils with calcareous gravel offer ideal conditions for the demanding Rheinriesling. The microclimate does the rest: the warm afternoon wind from Lake Garda alternates with cool morning breezes from the north, ensuring constant ventilation from April to October. The grapes undergo a 6–8-hour cold maceration before pressing – a process that releases the fine fruit flavours from the skins. Fermentation takes place at a controlled 19 °C in stainless steel.
