There is this one moment when Graziano Merotto stops explaining and simply puts his glass down to observe his counterpart. This wine is that very special moment. Integral: undivided, unmediated, without abbreviation – bone dry.

The grapes come from the estate's oldest vineyards in Col San Martino – glera vines over 40 years old, on yellowish-bluish marl, south-facing, harvested by hand. What follows is a vinification process that knows no compromise: maceration before pressing, single-varietal fermentation at 12 °C, followed by a 60-day second fermentation in autoclaves – and then a further 120 days of maturation on its own yeasts. No sugar to mask or smooth: Only 2.7 g/l residual sugar. Practically a Pas Dosé and an extraordinary, courageous decision for a Charmat Prosecco.

Straw yellow with crystalline reflections, brilliant and fine-grained perlage of impressive persistence. Fresh and mineral on the nose, white fruit, chalk, a hint of yeast that tells of long contact. Agile and quick on the palate, with a crisp and lively tension that does not dissipate and a complex, harmonious finish – and a complex, harmonious final that picks up on the initial tension.
