Cultivated organically, this wine conveys the sunshine of Sicily with a down-to-earth character and structure. The wine was originally only intended for private occasions – a heartfelt project that today celebrates with its name the connection to people and moments that are more than mere consumption. The grapes for it (label: "only the best grapes") come from strictly selected plots around Noto, where chalky soils, salt winds and intense sunlight characterise the aroma and structure.

Maldafrica describes an "inner longing for a distant land" and is not love at first sight, but it is one of Sicily's most interesting wines. It is initially very subtle and nuanced and it opens up gradually on its own timetable, but then: spontaneously fermented in amphorae, Maldafrica overwhelms the senses with dark fruits, spices, chopped herbs, savoury notes, sulphur, leather and damp tobacco. Its mouthfeel is over a minute long and its acidity provides the perfect amount of astringency to refresh the senses for all its opulence. Mal d'Afrika – this is not a romantic play on words. It is a real feeling: that homesickness for Africa that strikes anyone who has spent time in this landscape and cannot let go. In the south-easternmost tip of Sicily, where Vittoria lies between the Ippari and Dirillo rivers, this expression is immediately understood: the colours, the heat, the silence, the earth. COS has dedicated a wine to this feeling. The grape varieties behind it are surprising: Merlot and Cabernet Sauvignon in equal parts – the most international varieties in the wine world, cultivated by a company that otherwise consistently favours indigenous varieties. The contradiction is resolved in the cellar. COS treats Merlot and Cabernet like Frappato and Nero d'Avola: spontaneous fermentation on the skins in terracotta amphorae, natural yeasts, no added sulphur. Then matured in Slavonian oak barrels. 25-year-old vines on the red Pliocene sandy soils of Contrada Fontane, 230 metres, biodynamically cultivated. 5,000 vines per hectare, hand-picked in September.

The year is 1773 and a storm drives the English merchant ship "Elizabeth" into the harbour of Marsala. John Woodhouse, a merchant from Liverpool, seeks shelter – and finds a wine in an osteria that won't let him go. To stabilise it for the long journey home, he fortifies it with Acquavite. A makeshift solution that establishes the history of an entire wine. Pellegrino, the centrepiece of the Marsala tradition since 1880, has dedicated its own cuvée to this far-sighted Englishman. "Old John" – respect in two words. Grillo, Catarratto and Inzolia, harvested in the hinterland between Marsala and Mazara del Vallo, are fortified with neutral alcohol after fermentation has stopped and topped with mosto cotto – grape must – flavoured and slightly sweetened. Then comes the time: at least 48 months in large oak barrels and a further six months in barriques. The 1998 is a true Riserva – not a vintage for the impatient.

Famous, single-varietal Fiano from calcareous, clayey-sandy soils in the Contrada Dispensa near Menfi. Bright straw yellow in colour with a greenish tinge. The bouquet is complex and full of finesse: white flowers, Williams pear, ripe citrus fruit and a hint of exotic notes such as passion fruit and guava, underpinned by a salty, almost chalky nuance. Silky and broad on the palate, with polished fruit, lively acidity and a cool minerality. The texture appears creamy, but remains clearly contoured and convincingly expresses its origin.

Solicchiata is located on the northern slope of Mount Etna, where the volcano still gives everything to its soil – minerality, warmth, tension – without imposing the glowing ripeness of the southern flank. The Faro family founded Pietradolce here in 2005, on 35 hectares between 600 and 900 metres above sea level. The credo: exclusively indigenous varieties, separate vinification of the individual vineyards, as little intervention as possible. The Etna Bianco is the gateway to this universe – and at the same time an unequivocal commitment. 100 per cent Carricante, Alberello, 800 metres above sea level. Sandy volcanic soils, rich in minerals. Hand-picked in the second half of October, when the long, cool nights on the northern slope have given the acidity its final touch. Gentle pressing, ageing exclusively in steel.

700 is not just a number, but a promise: At an altitude of exactly 700 metres, in the cool Tenuta Ficuzza not far from Palermo, the grapes grow for a Sicilian sparkling wine that tells the story of its terroir in a dazzlingly fine form. The high altitude, calcareous soils and significant day-night fluctuations create ideal conditions for the grapes to ripen perfectly – chardonnay and Pinot Nero – before they are refined in classic bottle fermentation to create an Etna sparkling wine with character. After the first fermentation in stainless steel tanks, the wine matures on the lees for around 36 months. It is disgorged without dosage, which further emphasises its dry elegance and purist style.

The Greeks brought Moscato Bianco to Sicily. Biblino, the island's first documented wine from the Syracusan hinterland, is said to be its ancestor. Thousands of years later, Planeta lies in Contrada Buonivini, not far from Noto, at 40 metres above sea level in a landscape of white, limestone-rich soil, almond trees and sea breezes. What the Greeks knew: there is hardly a better place for Moscato. At the end of August, when the berries have reached full ripeness, the grapes are harvested by hand. What follows is the centrepiece: around 40 days of appassimento in fruttaio, in 5-kilogram crates with controlled ventilation. The grapes lose half their weight – and double their essence.

The small, museum-like island of Mozia in the Marsala lagoon is a production site of unrivalled uniqueness. It is a marine ecosystem that has always been linked to the vineyard. The English, who came to Marsala at the beginning of the 19th century and recognised its great potential, initiated the first planting. The vines are cultivated naturally using the Gobelet system with natural irrigation. The grapes are harvested in crates, brought to the mainland in flat-bottomed boats and then transported to the Regaleali winery in air-conditioned lorries to guarantee their aromatic integrity.

Zibibbo is the most aromatic grape variety in Sicily. Its full name is Moscato d'Alessandria – from Alexandria, Egypt, from where it travelled to the Mediterranean for centuries. On Pantelleria, it is known as the soul of the sweet passito. COS turns it into something else: a dry wine, spontaneously fermented on the skins in Liters terracotta amphorae. The vineyards are located in the hinterland of Marsala, at 12 metres above sea level. This is no coincidence – it is part of the programme. The sea is close by, the air is salty, the soil is flat and sandy. Biodynamically cultivated, Guyot training, around 5,000 vines per hectare. Hand-picked in September. Then the amphora: spontaneous fermentation, skin contact, natural yeasts, no intervention.

The bouquet is elegant and restrained: wild strawberry, pink grapefruit, a hint of blood orange and some fennel green. Lively on the palate, with juicy fruit, animating acidity and mineral tension. Santa Cecilia is Planeta's Nero d'Avola icon – born in the barren, sun-baked cultural landscape of Noto, on white limestone soils that give the variety depth, elegance and saltiness. A dense ruby red colour with a purple core in the glass. The bouquet opens with ripe black cherry, plum and mulberry, flanked by balsamic herbs, black tea, some liquorice and a fine graphite note. Powerful on the palate, but never overpowering: dense, ripe fruit meets a firm tannin structure that is well integrated and lends length. The acidity is precisely set, the finish is long and carried by a salty nuance that reflects the terroir of Contrada Buonivini. An expressive, high-class Nero d'Avola with a profile of origin, character and an ageing process that enhances rather than masks the variety. A sparkling wine from the volcano – made from 100% Carricante and produced using the traditional bottle fermentation method, this Metodo Classico is an expression of the cool elegance of Etna. The grapes come from high-altitude, mineral-rich vineyards on the northern slopes of the volcano. After gentle pressing and vinification in stainless steel, the base wine matures on the lees for around 20 months before disgorgement. Pale straw yellow in the glass with a fine, continuous perlage. The bouquet is fragrant and precise, with notes of lime, white peach, brioche, crushed rock and a hint of aniseed. Clear, taut and cool on the palate, with lively acidity, a creamy texture and a fine, salty-mineral length that emphasises its volcanic origins. An enthralling spumante with character, far removed from broadness or trendy sweetness – ideal as an aperitif, with oysters, raw fish or fine Mediterranean cuisine. Buried in the volcanic sandy soils of Passopisciaro lies a history that goes deeper than the roots of the centuries-old Nerello vines. À Rina – "Sand" in the Sicilian dialect – not only bears the name of this unique land, but also the longing of a son who wanted to create a monument to his father. When Giuseppe Russo founded the winery in 2005 and dedicated it to Girolamo, he did so with the painful knowledge: "My father was not lucky enough to experience this transformation and see his name on a wine." What followed was no ordinary wine story, but the metamorphosis of a pianist into the poet of the volcano. Giuseppe, who once studied Liters, returned to the vineyards of his childhood – not out of a sense of duty, but out of a deep realisation: these ancient Alberello vines between 650 and 780 metres above sea level carry the memory of his family. Here, where black lava slag and sand compose a symphony of minerality, he understood his true calling.

From the white earth of Noto, between stone walls, olive trees and orange blossom, rises Doppiozeta, a wine that doesn't illustrate south-eastern Sicily, but condenses it. It is one of the two flagships of the Mazzei family's Zisola project - a deep, finely constructed red that gives Nero d'Avola a voice that is rarely heard: concentrated, serious, supple. The vines grow on calcareous soil on a gentle slope just a few kilometres from the sea. Nero d'Avola is clearly in the foreground here, complemented by Syrah and Cabernet Franc - a precisely placed tension between fruit, flavour and structure. The grapes are harvested by hand with the utmost care, fermented in conical stainless steel tanks, after which the wine matures for around 16 months in French oak, with a small proportion in new wood.

Now in its 30th vintage, it has long been an icon of modern Sicilian winemaking: Planeta’s Chardonnay combines the tradition of French grape varieties with the sun-drenched terroir of the south, producing one of Italy’s most distinctive white wines year after year. The grapes come from two different altitudes: Ulmo at 250 m and Maroccoli at 415 m above sea level. In the glass, it is a radiant golden yellow with slightly greenish highlights. The aroma is intense and refined: yellow tropical fruits, toasted almonds, citrus blossom, vanilla, wet stone and a hint of salty butter. On the palate, it is dense and full-bodied, with ripe fruit, a perfect balance between freshness and creaminess, subtle spice and a long, elegant finish. A cult wine that combines Mediterranean richness with Burgundian nobility. Ideal with lobster, fried fish, poultry in butter sauce, or on its own as a great white wine with real character. Until 2012, this wine bore the name of the estate itself – passopisciaro. However, when Andrea Franchetti began to vinify his best individual vineyards separately in 2008, he renamed the basic Etna Rosso: Passorosso. A blend from different altitudes and contrade – from Malpasso to Guardiola and Santo Spirito –which shows the full range of what Nerello Mascalese can achieve on Mount Etna. The higher vineyards lie on coarse-grained lava gravel, the lower ones on finer, oxidised lava powder: each layer contributes to the complexity of this wine. 80 to 110-year-old vines, fermented in steel tanks, matured for 18 months in large neutral wooden barrels and concrete tanks, bottled unfiltered.

When Andrea Franchetti arrived on the northern slope of Mount Etna in 2000, he found an abandoned volcanic landscape – dilapidated vineyards, overgrown terraces, the gloom of a forgotten wine region. But he recognised the potential of these extreme altitudes. Passobianco, first vinified in 2007, is his white answer to the volcanic terroir: pure Chardonnay from the Contrada Guardiola, planted between 850 and 1,000 metres on steep terraces, where the powdery lava soil glistens black like the night. Fermented in steel tanks at cool temperatures, matured partly in concrete and partly in large wooden barrels – a vinification that preserves purity and creates complexity.
