The name refers to an ancient coin of the Genoese lords who once owned the vineyards around Gavi. Today, the Cortese grapes come from the heart of the appellation: the Comune di Gavi itself, where calcareous marl soils and pronounced day-night differences give the wine its characteristic freshness and floral aromas. After being harvested by hand, the grapes are cooled with carbon dioxide snow and pressed particularly gently. Fermentation takes place at a controlled temperature in stainless steel, followed by three months of bottle ageing.

Not far from the Cortese vineyards lies Libarna, an ancient Roman settlement. A bronze disc from the 1st century BC was found there – an astronomical calendar for measuring Roman cities. Today, this Libarna disc adorns the label of the "Poggio della Rupe" line and connects millennia: Wine was grown here even before the Romans. The Monterotondo comes from a single vineyard in the heart of Gavi, where gypsum-rich, sulphurous soils give the Cortese an unrivalled complexity. Thirty-five-year-old vines yield grapes for just 2,500 bottles. After fermentation in stainless steel, the wine matures for six to seven months on the fine lees – an ageing process that gives it depth and structure without sacrificing freshness.

Maneo – i stay, I wait. What sounds like a silent promise in Latin becomes a philosophy at Enrico Serafino: this Gavi only leaves the winery five years after the harvest. While other Cortese wines have long since been drunk, the Maneo matures quietly – first on its fine lees in stainless steel, then in the bottle until time has done its work. The grapes come from the best parcels in the heart of the appellation, where clay and limestone-rich soils with a low pH value give the Cortese the tension that distinguishes it from the pleasing everyday white. Vinification follows the credo of maximum care: hand-picking, sorting on a vibrating table, cooling with carbonic acid snow to prevent oxidation. The grapes are gently pressed and some of the grapes are left to macerate overnight at cool temperatures – a touch of extraction that gives the wine substance without jeopardising its elegance.

White Piedmont: A portrait of Gavi
Gavi is the epitome of Piedmontese white wine culture. In the land of the great reds, from Barolo to Barbera, the Cortese white wine variety asserts itself with a profile that combines cool precision and Mediterranean lightness in a fascinating way. The wine bears the name of the town of the same name, Gavi, a historic place near the Ligurian border. Wine was produced there for the Savoy court as early as the 17th century – mainly from Cortese grapes.
The variety itself is considered indigenous to southern Piedmont and has been documented for centuries. Gavi, or correctly Gavi di Gavi in its most prestigious form, is usually straw yellow in colour with greenish reflections. The nose is characterised by white flowers, citrus, apple, pear and a hint of bitter almond. On the palate, it is dry, fresh and mineral, with a fine acidity and salty length – a characteristic that is not least due to its proximity to the Ligurian Sea. The wine is mostly matured in stainless steel tanks, rarely in wood, in order to preserve its delicate structure and aromatic clarity.
Between hills and sea breeze
The Gavi DOCG growing region is located in the south-easternmost tip of Piedmont, in the province of Alessandria. The hills around the town of Gavi benefit from a special microclimate: Mediterranean during the day and significantly cooler at night. These temperature differences promote slow ripening and preserve the acidity. The soils consist of marl, limestone and sand, which gives the wine its typical elegance and precision. Around a dozen municipalities belong to the appellation, but Gavi itself is considered the historical centrepiece. The most renowned crus are produced here, often labelled "Gavi del Comune di Gavi". The area has had DOCG status since 1998, a rare occurrence for a northern Italian white wine. Over the years, Gavi has developed from a regional insider tip to an international ambassador for Italian white wine culture – restrained in appearance, consistent in quality.
From Gavi to the world
The Cortese grape variety also goes by names such as Bianca Fernanda, Courtaud or Raverustie, but its stylistic characteristics are almost exclusively associated with Gavi. Despite this variety of synonyms, the sensory principle remains clear: fine floral aromas, citrus nuances and salty minerality.
Nicola Bergaglio is considered one of the most distinguished producers of Gavi. His single-varietal Cortese thrives in the best vineyards around the municipality of Gavi and is produced in several characterful varieties. The "Etichetta Bianca" Gavi del Comune di Gavi DOCG impresses with its clarity, freshness and typical mineral structure, a prime example of the elegance of these wines. The top wine "Minaia" is even more complex, setting standards with its fine herbal notes, chiselled acidity and subtle depth. With its Gavi DOCG, the traditional house of Pio Cesare also brings a fruity, lively white wine to the market, while Olim Bauda cultivates a harmonious style with its "Gavi del Comune di Gavi", which combines strength and lightness in a balanced way. Sushi, oysters or light pasta dishes also benefit from its clear structure. The ideal drinking temperature is 8 to 10 degrees Celsius. Elegance with quiet authority
We don't know whether the following anecdote is true, but it fits perfectly with the white classic: when Queen Elizabeth II made a state visit to Italy in the 1980s, protocol dictated that she was served a Gavi – not a Barolo or Chianti. The reasoning: a white wine of royal restraint and Piedmontese elegance was better suited to a monarch who did not need to make a loud entrance to make an impression.
