They differ in structure and taste in close correspondence with their terroir and impressively demonstrate the complexity of the Chanti Classico region.

The texture is more like pure silk, delicately lapping the palate, leaving a satisfying mix of intense dark fruits, minerals and fine-grained tannin. There is so much depth and concentration to work with that even when it finishes youthfully structured and dry, it lingers for well over a minute with notes of redcurrant, sage and dark chocolate. This exceptional Sagrantino is undisputedly not only Caprai's top wine, but also one of Italy's most characterful wines, which, with a little more ageing, is an incredible pleasure and should therefore definitely be aerated for 3-4 hours when young. It was Eugenio Campolmi who, in 1989, plucked up the courage to give his flagship the name of a wild herb that grows on the Tuscan coast. Eugenio Campolmi (†2002) was not originally from the world of wine. He came from a family of restaurateurs and was supposed to take over his parents' restaurant and trading business. Instead, he and his wife Cinzia Merli took a bold leap into the unknown in 1983. Paleo – a name that stands for unbending identity and the will to achieve any goal. What began as a classic Bordeaux blend found its true destiny in 2001: 100% Cabernet Franc, a revolution in the still young Bolgheri.

There are wines that have made history. And then there is Sassicaia – the wine that started a revolution and changed Italy forever. The first commercial bottle saw the light of day in 1968, at that time still classified as a modest Vino da Tavola, today the only wine in Italy to be honoured with its own DOC. What began as an experiment by a visionary marchese became a legend. The name says it all: "Sassi" – stones. An idea that Mario Incisa della Rocchetta had in the 1940s is rooted in the stony, calcareous soils of the Bolgheri hills, between 100 and 400 metres above sea level. Inspired by the great wines of Bordeaux, he dared to do the unthinkable: to plant Cabernet Sauvignon and Cabernet Franc in Tuscany, where only Sangiovese had reigned for centuries.

After more than four decades of tireless work, the maestro from Piedmont completed his testament with this wine – a Sangiovese of paradoxical brilliance that retains an astonishing freshness and elegance despite its powerful fifteen per cent alcohol. The name Cepparello, which originates from the small stream at the highest point of the vineyards, has carried the revolutionary vision of one hundred per cent Sangiovese since 1980. What began as a rebellion against the Chianti Classico regulations – the absurd rule of adding white grapes – developed into an icon of pure Sangiovese expression.

On the nose, round notes of walnut shells, roasted hazelnuts and linseed, as well as red plums, pomegranate seeds and green olives. Traces of incense and cardamom in the background. Duemani has only 7,000 Syrah vines – the smallest parcel on the estate, but perhaps the most precious. Suisassi, this enigmatic name, reminiscent of the sound of the nearby surf, stands for Elena's very personal vision: to create a Syrah that imitates neither the Rhône nor South Australia, but captures the Tuscan coast in all its wild beauty. Luca D'Attoma, who helped create Le Macchioles legendary Scrio as a consultant, applies the same philosophy here: 30 per cent of the grapes are fermented as whole bunches to increase the aromatic complexity, spontaneous yeast fermentation in conical oak vats and small 1,Liters tanks preserves the vibrancy of the fruit before the wine is left to rest for 20 months in French barriques.

Four years ago, Pio Boffa bought himself a "small" present for his 60th birthday. Not a new set of golf clubs, a picture hanging in the hall, a holiday for him and the family. No. Just a vineyard called Mosconi in Monforte d'Alba, a region of Piedmont where four generations of the Pio Cesare dynasty never gained a foothold. Originally, the grapes from the 10-hectare vineyard were to enhance the quality of his classic Barolo, but after the first barrel samples, it was unmistakably clear to Pio Boffa that this would be at least an equal - if stylistically different - counterpart to the hitherto undisputed flagship Ornato.

Tasting the different lots of Il Marroneto from the barrel is a fascinating task. The vines are all similarly situated at high altitude, on coarse sand of marine origin, and predominantly north-facing. While they have subtle differences, the distinct character of Madonna delle Grazie often merits a separate bottling - as the 2018 proves. The aromas take on the darkest, most heady purple florals, tangled in allspice and smoky incense. The wine is muscular with firm tannins that grip it tightly and don't let go, though it is never beefy, heavy or angular. At the moment it is still developing, but the finish already reveals a refined balsamic core and a spicy, salted plum. SUPERIORE.DE

This is not a wine – this is a legend. Giuseppe "Bepi" Quintarelli, the "Maestro del Veneto", is considered the father of Amarone, the man who redefined an entire appellation over six decades and inspired generations of winemakers. His Amarone is only produced in exceptional years; in normal vintages, the "Rosso del Bepi" is produced, in weak years nothing at all. The 2018 marks one of these rare moments. The cuvée of 55% Corvina and Corvinone, 30% Rondinella and 15% Cabernet Sauvignon, Nebbiolo, Croatina and Sangiovese follows a ritual that extends over many years: half of the grapes are processed fresh, while the other half dries for five months in ventilated chambers until the end of January, losing up to 30% of its water content and concentrating sugar, flavours and structure. Botrytis – noble rot – is deliberately encouraged, a risky endeavour that only masters can master. Pressing is followed by 20 days of maceration, then 45 days of slow fermentation with wild yeasts. What follows is a patience that seems almost forgotten today: seven years of ageing in large Slavonian oak barrels.

More than two centuries ago, Elisa Bonaparte Baciocchi, Princess of Piombino, had something planted on the ferruginous hills above Suvereto that would change this landscape forever: Merlot, Cabernet Sauvignon – grape varieties from the Bordelais. The Maremma, still rough and wild at the time, became the testing ground for a woman with a feel for terroir. Francesca Moretti, daughter of Bellavista founder Vittorio, deliberately picks up on this thread with Petra. The name says it all. Petra. Stone. Consistency. 60% Cabernet Sauvignon, 30% Merlot, 10% Cabernet Franc, hand-picked from the Vigneto di Petra in San Lorenzo Alto. Limestone soils with the right balance of clay and skeleton, 10 to 15 per cent slope. Fermentation with natural yeasts in large oak vats, ageing for at least 15 months in French barriques – 25 per cent new – followed by at least 17 months in the bottle. The cellar, a structure by Mario Botta, works with gravity: no pumping, no stress.

Pianrosso comes from a south-western site of the Castelnuovo dell'Abate subzone at an altitude of about 300 m with mainly Galestro soils. It opens the pleasure cinema with a rich, sparkling garnet red. The bouquet is seductive and deep with hints of dark and black fruits, sage, rose petals and violets. On the palate, there is a distinct salty-fresh minerality, which soon enters into a wonderful harmony with the fine-grained tannins and the perfectly layered fruit, leading the wine powerfully with optimal balance into a soft, hardly ending finish.
