Valpolicella Superiore Ripasso DOC 2021
Brigaldara's Ripasso is created by the secondary fermentation of Valpolicella wine on the pomace of Amarone della Valpolicella. The contact between the Valpolicella wine and the Amarone marc, which is still rich in sugar, triggers a new fermentation. Bright ruby red colour. Bright and cheerful with aromas reminiscent of dried cherry, plum, pear and apricot. This wine shows plenty of bright fruit definition with subtle hints of tobacco, spice and rose petal. The finish is smooth, polished and soft in tannin structure. Very structured and balanced, gaining complexity with further bottle ageing. SUPERIORE.DE

Valpolicella Superiore Case Vecie is made mainly from Corvina and Corvinone grapes. Valpolicella Ripasso Valpantena DOC 2020
Bertani's Ripasso is a true classic. The grapes come from the hills around Valpantena and from the direct Valpolicella Classico area. The production at Bertani is carried out according to the old traditional method: The young, already fermented Valpolicella wine is blended with the skins, which have dried naturally in the meantime, giving it a richer and more concentrated aroma. It then undergoes a second so-called "ripasso" fermentation, which is triggered by the yeasts that are still sufficiently present in the skins.
Intense purple with violet reflections. On the nose, numerous dark red fruits such as blackberry, currant and ripe cherry. It has a slightly bitter aftertaste, which, with the slightly increased residual sweetness, results in an exciting yet dry impression. Velvety and balanced, with quite a long finish. “Tenuta Missoj” Valpolicella Classico Superiore Ripasso DOC 2020
Tenuta Missoj is a small winery in Mizzole with just 3.5 hectares of vineyards and is owned by the Campagnola family. The vineyards are situated at an altitude of 200 metres on a well-ventilated and exposed hill, where the grapes can reach perfect and complete ripeness. The new prestige wine Valpolicella Ripasso "Tenuta di Missoj" comes from these soils, which already impressively showcases the typical characteristics of the appellation in the 2019 debut vintage.

The predominant grape variety is Rondinella Bianca, a mutation that was only discovered by chance in the vineyards of Zýmē and is unique in Italy.
The fresh bouquet has aromas of citrus fruits, honeydew melon, star jasmine and sour grapefruit. The palate is uniquely different, but silky and very flavoursome with a medium body, while ripe apples and nectarines are stimulated by juicy acidity and a hint of green citrus fruit. “Col Fondo” Prosecco Spumante di Valdobbiadene Superiore DOCG 2022 brut nature (sui lieviti)
Col Fondo has been part of the Adami product family since the early 1900s. Initially, grandfather Abele and later father Adriano bottled the wine in spring. This then began to ferment again in the warmer months of May and June, producing what is known in Veneto as "vin col fondo". The origin of the name is quickly explained: it is due to the yeasts that settle on the bottom of the bottle after all the residual sugar has been consumed, causing the wine to develop in an exciting way over time.
Exciting: Col Fondo can be drunk clear or cloudy with yeast to create new sensory experiences every time. Drinking it clear means discovering the classic notes of yeast, ripe fruit and also a light balsamic note such as mint, liquorice, thyme and eucalyptus. In this case, simply store the bottle upright and pour the wine carefully, separating it from the sediment that remains in the bottle. If, on the other hand, you prefer it cloudy with yeast, you are opting for a more original experience: the yeast aroma is emphasised, the aroma of ripe fruit lends a particularly intense balsamic note and the wine becomes stronger, richer and fuller on the palate.
