There are wines that are only made when the stars are perfectly aligned. Ornus dell'Ornellaia is one of them – a dessert wine of such rarity that it is only produced in exceptional years when the conditions in the tiny "Palmetta" vineyard are ideal. Its name comes from the Latin "Fraxinus Ornus", the manna ash, the biblical tree whose precious sap has been valued as a sweetener for thousands of years – a perfect metaphor for the sweetness of this exceptional wine.

The 2021 vintage embodies all the magic of a late harvest of 100% Petit Manseng, the rare grape variety from the Pyrenees that unfolds a completely new dimension in the Tuscan coastal sun. Each vintage was vinified separately, the grapes gently pressed and, after natural clarification, fermented overnight in 100% new oak barriques at a maximum temperature of 22°C. When the desired balance between sugar and alcohol was achieved, the fermentation was stopped – a precise moment that determines success or failure. After twelve months of ageing, the different batches are blended to create the final cuvée, followed by a further year of bottle ageing.

The result is a wine with an intense golden colour and surprising complexity: Monica Larner describes notes of mossy peat and forest floor that interweave with dried fruit, honey and candied fruit to create an unexpected bouquet. The palate reveals all the finesse of this late harvest: silky sweetness and lively acidity in perfect balance, underpinned by spicy nuances that give the final a remarkable length.
