If only it were true. Angelo Gaja's Tuscan masterpiece Magari bears this Italian expression full of longing and hope in its name, and it tells the story of a dream that became reality. When the Piedmontese patriarch first explored the Maremma coast in the 1990s, he saw the potential for something extraordinary in the gentle hills of Bolgheri. Eighteen rounds of negotiations were necessary to acquire the Ca' Marcanda estate – "the house of endless negotiations", as it has been known ever since.

Within the walls of history. The Castello di Bolgheri, built in 1796 and thus the oldest winery in Bolgheri, sits enthroned in the heart of the medieval village like a stone witness to great wine culture. While the world of wine underwent its revolutionary transformation around the Castello – sassicaia and Ornellaia wrote their legendary stories –a treasure lay dormant here that only awoke to its true destiny under Count Federico Zileri Dal Verme. The blend of 75% Cabernet Sauvignon, 20% Cabernet Franc and 5% Merlot not only represents the art of blending, but also the philosophy of the house: finesse over power, elegance over opulence. While the best parcels of Cabernet Sauvignon underwent an exceptionally long maceration of 30 days – only possible in exceptional vintages –the wine matured for 20 months in traditional Italian vats and Liters barrels. This choice of large wooden barrels, a deliberate departure from the small barriques of its neighbours, gives the wine the crystalline purity and mineral depth that makes the Castello the "Château Margaux of Bolgheri".

Grattamacco is a blend of Cabernet Sauvignon, Merlot and Sangiovese, the latter grape variety certainly contributing to the fresh style of this wine. However, the overall picture is only complete when you realise that the vineyards used for this blend are among the best in the appellation. The Grattamacco Bolgheri Rosso Superiore is characterised by its typical aromas of leaves and Mediterranean forest, with subtle flavours of kiwi peel, cassis, paprika and chocolate. Mazzei's top wine Siepi is not only an outstanding Tuscan wine every year, but also a 6-hectare vineyard in the middle of dense oak forests with an ideal altitude and a unique climate. The sunshine is optimal throughout the day and a constant breeze from the west prevents excessive heat and creates a mild, Mediterranean climate. The oak forests also provide an ideal protective barrier against extreme weather conditions. Rocky soils of marl, limestone and clay from the Pliocene period ensure a special balance of elements in this geological complex.

Black cherry red with a violet rim. On the nose, notes of spices such as ginger, cinnamon, dried coriander and vanilla pod, rounded off with fruit flavours of pomegranate, cherry and floral nuances such as geranium, lavender and rose. Vigna San Marcellino Gran Selezione is both youthfully fresh and ripe and complexly muscular. It contains a healthy dose of the deeply coloured Pugnitello grape, and on the nose liquorice, tarragon and broom mingle with lush plum and subtle roasted aromas that are highly seductive in their complexity. Deep, taut and lively on the palate, loaded with black cherry and rich, velvety tannins. The texture is silky, while subtle chalky notes and a salty minerality give it plenty of energy and lead it into a juicy, refreshing finish. A farewell and a new beginning at the same time. Cepparello 2021 marks Paolo De Marchi's final vintage as master of his life's work before the winery was transferred to the French EPI Group. After more than four decades of tireless work, the maestro from Piedmont completed his testament with this wine – a Sangiovese of paradoxical brilliance that retains an astonishing freshness and elegance despite its powerful fifteen per cent alcohol. The name Cepparello, which originates from the small stream at the highest point of the vineyards, has carried the revolutionary vision of one hundred per cent Sangiovese since 1980. What began as a rebellion against the Chianti Classico regulations – the absurd rule of adding white grapes – developed into an icon of pure Sangiovese expression.

Poggio Rosso Gran Selezione has an enormous abundance of fruit that is beautifully layered. A very beautiful interpretation of the Sangiovese grape with a dense core and plenty of padding around it. Rich ruby-garnet colour, very fine texture and structure on the palate, which only reveals itself fully with the necessary time in the glass. It is full of tension and power in its youth, the acidity and the well-built tannins are programmed for development, as it will only develop its full elegance and greatness in a few years. The top-quality Vigneto Erchi Riserva comes from the small vineyard of the same name, which has belonged to Fattoria Selvapiana since 1998. The owners spent a long time searching for a vineyard whose terroir impressively demonstrates the complexity of Sangiovese in the Rufina region, making this wine a high-calibre addition to the famous Selvapiana collection.

Biserno is more than just another Bordeaux blend in Tuscany. It is the essence of a place that cannot be tamed, but wants to be understood. Cabernet Franc forms the backbone – a grape variety that develops an unrivalled minerality in these marine soils. Merlot lends a velvety texture, while Cabernet Sauvignon and a hint of Petit Verdot complete the architecture. Every grape harvested by hand, every decision thought through down to the smallest detail by Helena Lindberg and Michel Rolland. 2021 was the year of perfect balance. A mild, wet winter caused the vines to sprout late, while a cool spring delayed development. But when the warmth arrived in late May and early June, life exploded in the vineyards. The summer, warm but not too hot, cool at night due to the salty breezes from the Tyrrhenian Sea, created ideal conditions for slow, even ripening. The harvest began early, at the end of August, and extended into October – time enough for each plot to find its perfect moment.

Guado al Tasso presents itself with a warm-toned bouquet and an abundance of fruit that is just as convincing as its harmonious structure. Deep, dark, rich ruby-purple colour. Very clear and intense nose, with aromas of blackberries, cassis and dark cherries, underpinned by fine, spicy notes with hints of white pepper and leather. Very juicy on the attack and on the palate, with plenty of sweet flavour, elegant tannins and a very long finish. A finesse-rich red that offers maximum drinking pleasure and great ageing potential. Ornellaia Bolgheri Superiore 2021 is a wine of extreme precision. It offers well-proportioned power and depth with profound layers of black fruit, coffee and liquorice. It captivates with its lustre and polished texture, which merges into great richness, concentration and structure. Enveloping as it progresses with sweet dark fruits and dark spices that linger for a long time. The year was 1090, the year in which Leif Erikson discovered North America, the Chinese discovered gunpowder and Pope Urban II conquered Jerusalem. On that day, the notary Bellundo recorded a contract in the Siena state archives: two capons, three loaves of bread and six coins of good silver as an annual lease for a vineyard in the divine valley of Dievole. "Dio vuole" – god wants it. This is the etymological root of this name, which has symbolised the special connection between man and nature in this corner of Tuscany for over nine centuries.
