Fattoria del Cerro in Acquaviva di Montepulciano is the largest private vineyard in the region with a total area of 600 hectares and 181 hectares of vines – mainly known for Vino Nobile di Montepulciano. Its Chianti Colli Senesi comes from 20 hectares of vineyards in the Sienese hills and is mainly made from Sangiovese (90 per cent) with Merlot (10 per cent). After manual harvesting, fermentation takes place in stainless steel tanks with eight to ten days of maceration, followed by three months of ageing in large Slavonian oak barrels.

The estate's lowest vineyards between 80 and 150 metres provide the grapes for the Federico, named after the family's long-time employee. Fermentation and nine months of ageing take place 70% in stainless steel and 30% in oak wood – enough structure without masking the fruit. Bright ruby red colour. The name says it all: Badilante honours those workers who, with their spades – the "badili" – for generations to drain and reclaim the marshland of the Maremma. Simone Castelli, son of the legendary OenologistMaurizio, vinifies this single-varietal Sangiovese on the organically farmed Podere 414 vineyard near Scansano. The grapes grow at an altitude of 230 metres in clayey, loamy soils with a high proportion of skeleton. Spontaneous fermentation in cement, 15–18 days maceration with délestage and remontage, followed by maturation partly in cement and partly in wood.

Montepulciano thinks in red. The Prugnolo Gentile, this stubborn Sangiovese clone, is bred for the long haul – for Nobile, for Riserva, for decades in the cellar. The fact that it is also so convincing as a rosato has to do with the terroir: the Toraia and Casale cru sites at 300 to 350 metres, clayey-silty soils, south to south-east exposure. Hand-picked at the end of September, cryomaceration for four to five hours.

After gentle pressing, the wine ferments at a controlled temperature in stainless steel, then matures in large barrels and rests in the bottle for a few weeks before bottling. Far from the fame of the Vino Nobile vineyards, this Chianti was created in the "Pozzi" vineyards, where Federico Carletti ventured an oenological experiment. At an altitude of 350 to 450 metres, with a view of the famous San Biagio church, densely planted Sangiovese vines thrive on stony clay soils of almost skeletal permeability. Ninety-five per cent Sangiovese blends with five per cent other Tuscan varieties to create a Chianti of uncompromising authenticity. Six months in stainless steel preserve the youthful freshness of this DOCG composition, which Federico deliberately conceived as an alternative to modern velvet gloves.

“Lohsa” Morellino di Scansano DOCG 2022
The Lohsa estate is located in Magliano in Toscana – deep in the Maremma, less than 30 kilometres from the Tyrrhenian Sea. Federico Carletti bought it in the 1990s and replanted the vineyards: Sangiovese as the heart, Ciliegiolo as the Tuscan companion. The soils here are Galestro and marl, skeleton-rich, well-drained, at an altitude of around 100 metres – the sea is close enough to moderate the ripeness without taking away the structure. Morellino di Scansano is Sangiovese in Maremma guise: sunnier, softer, more accessible than its big siblings in the north – but with its own character. Fermentation in stainless steel, followed by partial ageing in wood: the wine remains fresh and loses none of its Mediterranean directness.

Sangiovese ("Blood of Jupiter"), the big red grape from Tuscany, is probably over 2500 years old. The noble grape is also called Prugnolo ("the plough"). Due to its relatively late budding, Sangiovese has hardly any problems with spring frosts and is also not particularly susceptible to disease. It is of upright growth and not overly hardwoody - two characteristics that make it the ideal grape variety for mechanical processing. Problems are occasionally caused by his very late maturity. Rarely does the harvest begin before the end of September, often even in mid-October. In autumnal periods of bad weather, which can occur in central Italy, the grapes do not ripen fully and produce hard, tannic wine with a high acidity. Sangiovese grapes are thin skinned and susceptible to rot, which can cause problems especially in cool and wet years. Sangiovese wines that are fully successful have a firm tannin structure, are fruity, deep and elegant. They are well suited for ageing in wooden barrels and can benefit from blending with Cabernet Sauvignon.
In Italy, more than 100,000 hectares are planted with Sangiovese and it is by far the most important and most famous grape variety in the country. The best known wine is Chianti, in which Sangiovese must account for at least 80%. The most valuable representatives of the grape variety are Brunello di Montalcino (always 100% Sangiovese Grosso) and Vino Nobile di Montepulciano (at least 70% Sangiovese, here called Prugnolo Gentile). In Morellino di Scansano (west coast of Tuscany/Maremma) at least 85% Sangiovese content is mandatory.
The Brunello varieties Sangiovese Grosso and Sangiovese Piccolo produce wines of high concentration in taste and aroma. On top of that, the Sangiovese has proven his ability to play in the international concert of top red varieties in the numerous Super Tuscans. Some winegrowers from central Tuscany (e.g. Fontodi, Isole e Olena, Felsina, Montevertine) also prove that this grape variety can be used to make excellent IGT wines, which are not only very storable, but also achieve the highest ratings every year.
In Emilia-Romagna large areas are also covered with Sangiovese. It usually produces a fruity, harmonious red wine that can be drunk young, which is excellent with light Italian summer cuisine. Riserva qualities are more full-bodied and, with their deep, complex character, can easily reach the level of the excellent Tuscan Sangiovese wines. Among the best are the Sangiovese di Aprilia, the Sangiovese di Colli Pesaresi and the Sangiovese di Romagna. In the Marche, Sangiovese is the basis of Rosso Piceno and a complementary variety in the outstanding Rosso Conero. In Umbria, the main part of the Rosso di Montefalco is made from the grape variety of the Umbrian grape variety, while the Sagrantino di Montefalco is made from the Sagrantino grape variety.
