Montalcino and Cabernet Sauvignon – at first sounds like a marriage against nature. Sangiovese reigns here, Brunello grows here, the grape variety has found its expression here for centuries. The fact that Count Alberto Marone Cinzano nevertheless planted Cabernet Sauvignon on the hills of his estate in the early 1980s was neither a coincidence nor an experiment – it was a conviction. The conviction that this terroir, these soils, this altitude are capable of more than just one wine. Today, Olmaia is a monument to this vision. The vineyard – 365 metres above sea level, planted in 2005 – bears his name. The DOC Sant'Antimo, founded in 1996, created the legal framework for just such wines: international grape varieties, grown in Montalcino's chalky soil, with the ambition not to imitate, but to interpret.

Maurizio Castelli does not like fancy names. That's why he took a simple but original approach to naming the estate and its top wine: 414 – which is the number of the vineyard in the region's land register. His Morellino has become a true Italian classic with a modern interpretation. The grapes come from biodynamically farmed hills around Scansano with deep-rooted Sangiovese. The 2023 vintage was characterised by warm, sunny weather and moderate ripeness, ideal for aromatic clarity and balance. Temperature control during maceration and a subsequent maturation phase of around 12 months in large wooden barrels characterise this wine.

The Moraiolo is the soul of Chianti oil. A variety with compact growth and modest vigour, it produces roundish olives with a strikingly large stone – and therefore benefits particularly from pit removal. Because without the bitter stone, the pure flesh of the fruit comes into its own, and in the Moraiolo this is of remarkable complexity. Felsina's oldest trees have been standing since the 1960s. The variety ripens medium-early, earlier than the Correggiolo, and is harvested when the polyphenol content is at its peak. The olives reach the mill within four hours, are pitted (denocciolato) and pressed at 25 degrees. The oil is stored under nitrogen, vacuum bottled only when ordered.

The Raggiolo – called Correggiolo in Tuscany – is one of the oldest and most widespread olive varieties in the region. A variety with character, it bears small, slightly asymmetrical fruit and ripens late, making harvest time a test of patience. Felsina's oldest trees have been standing since the 1960s, while the youngest were planted in the 1980s – all in the three groves of Fèlsina, Pagliarese and Boschi, which together form the estate's terroir mosaic. Like all Felsina monocultivar oils, the Correggiolo is harvested separately when the variety has reached its optimum ripeness. Within four hours, the olives are taken to the in-house mill, pitted and pressed from the pulp only (denocciolato) – at a constant 25 degrees. The oil is then stored under exclusion of air in stainless steel tanks and is only vacuum-bottled when ordered: it couldn't be fresher.

The Pendolino is the "servant" among the olive varieties – and at the same time the indispensable one. It owes its name to its characteristically drooping branches, but its importance lies in its role as a pollinator: the flowers produce enormous quantities of pollen and thus enable the other varieties to bear fruit. In many groves, the Pendolino is a silent helper whose own oil is hardly ever bottled. At Felsina it is allowed to shine. The trees are in the Poderi Valli (planted in 1986) and Arcidosso (2005), cold-resistant and early-maturing. It is the first variety to be harvested, it is de-seeded (denocciolato) and pressed at 25 degrees.

Both grape varieties are fermented separately, undergo malolactic fermentation and then mature for around twelve months in used French barriques. Only then are they blended – this preserves the characteristics of both varieties and creates a harmonious whole.

Petruna is a single-varietal Sangiovese that is fermented with 12 months of skin contact in hermetically sealed amphorae. The result is surprising, not in the sense of an "interesting" experimental wine, but because the typical character of Sangiovese is fully expressed in freshness, fruit and energy. The bouquet is dominated by cherry and small red berries, plus some orange zest. Its body is of medium weight, which makes it an excellent food companion. A wine with origin and signature: The grapes come from the renowned Scarrone vineyard directly below Castiglione Falletto – a warm south-east exposure with calcareous marl soils. Vietti cultivates the vineyard organically and vinifies the Vigna Scarrone with respect for the grape variety and terroir. Temperature-controlled maceration is followed by ageing in large barrels and used barriques – an approach that promotes both structure and elegance.

In 1991, Alois Lageder succeeded in acquiring Casòn Hirschprunn, a historic estate that was mentioned in documents as early as the 13th century and today forms the spiritual heart of Lageder's biodynamic philosophy. Here, in the Renaissance palazzo in the middle of Magreid, where over 30 hectares of vineyards between 230 and 360 metres adorn the gentle slopes of the Margreider Schuttkegel, a revolution began in 1995: the first biodynamic experiments on Italian soil, which made the winery one of the pioneers of this holistic form of cultivation. "Tasting the unpredictable" – is how Alois Lageder himself defines the nature of this extraordinary white wine, which epitomises the joy of experimentation and innovative strength of the estate like no other.

A tribute to Luigi, Valeria's father, without whose support the life project of Valeria Viganò and Luca Orsini in Panzano would never have been realised. Aluigi embodies the highest level of the art of Sangiovese from Le Cinciole – only 4,000 bottles are produced annually from the single vineyard "Campo ai Peri". This Gran Selezione comes from organically cultivated vineyards at an altitude of 440 metres, where south-west-facing vines are rooted in the characteristic Galestro soil over sandstone. The traditionally dense planting of 9,000 vines per hectare and the cool, high-altitude climate give the wine its characteristic elegance and complexity. Vinification follows the original principles of the estate: hand-picking and careful selection of the grapes, spontaneous fermentation with wild yeasts in cement tanks for four weeks. After malolactic fermentation, the wine matures for 24 months in French oak barrels of 25 hectolitres, followed by a further year in concrete and twelve months of bottle ageing.
