Born of fire. This is how the Cantina Terlan describes the red porphyry rock, between whose slopes the vineyards have nestled like small sun terraces. The rock is of volcanic origin, millions of years old, and it gives the area its unmistakable character – the wines their minerality, the cellar its façade, the wine its name. The porphyry is Terlan's red answer to the question of what Lagrein can be if you think it through to the end. No compromises. Three selected single vineyard sites, whose vines are almost a century old. Old vines yield little – but what they do yield is the sum of a long life in the grape flesh. Manual harvesting, destemming, slow maceration in steel – and then: 18 months exclusively in barrique, a third of which is new. No large wooden barrels, no compromises. Only barrique, only concentration, only depth.

The name says it all – and rarely has a wine deserved its name so consistently. Quartz: a mineral that was formed in fire, has survived for millions of years and is still visible today in Terlan's soils as a fine speckle in the volcanic porphyry rock. 55 to 60 per cent quartz content, slightly acidic pH value, skeleton-rich sandy-loamy structure without carbonate – a soil that allows water to pass through, rations nutrients and puts the vine under controlled stress. This micro-stress is not a deficiency. It is intentional. It forces the plant to produce terroir-specific polyphenols, which give the wine the savoury tension for which Terlan is internationally renowned.

Enrica and Ettore learned winemaking from none other than Giancarlo Pacenti. The grapes for this vinophile masterpiece come from a small vineyard in Castelnuovo dell'Abate. Deep, full-bodied expression with warm aromatic layers adding impressive intensity to the bouquet of dark plum, blackberry, dried cherry, liquorice, tar, black truffle and leather. Then on the palate, a beguiling extract sweetness, again very complex and resonant, in quiet unison with the characteristics of the exceptional terroir. The 36 months of very slow ageing in large oak barrels provide a wonderful harmony and a very good ageing potential. SUPERIORE.DE

The grapes for one of the most elegant and ethereal Vin Santo in Chianti Classico are dried before they are pressed and then sealed in barrels for nine years. Paolo de Marchi calls it "lazy winemaking" and admits: "The blending process is actually the most challenging part, as every barrel is different and after tasting 10 barrels, palate fatigue sets in". The result is a very elegant and pure Vin Santo that has beguiling notes of candied fruit, honey and sweet spices. The balance between sweetness and acidity keeps the wine light, lively and refreshing, and it has a smoky edge on the finish. This is a great Vin Santo, and although it has more than 200g/litre of residual sugar, it is surprisingly light, refreshing and easy to drink. SUPERIORE.DE

A Barbaresco from our own vineyards in Treiso and San Rocco Seno d'Elvio. Each parcel is harvested separately and fermented in stainless steel; gentle remontage, selective délestage, followed by calm malolactic fermentation. For the maturation phase, the winery uses large Slavonian barrels, supplemented by a smaller proportion of French oak – not to provide flavour, but to fine-tune the texture and balance. Thanks to stable summer weather and cool nights in autumn, 2020 produced fully ripe, healthy harvestwith a well-proportioned acidity line.

Mulino comes from a lower-lying vineyard with a high proportion of marine fossils in the soil. It is dark and rich in the glass, with notes of plum jam, balsamic herbs, pine shavings and cloves, but also with a mentholated freshness that centres the whole experience. On the palate, it glides like pure silk, elegant and supple, with ripe, balsamic fruit and a hint of sweet mint. Finishes with a powerful structure and persistence, leaving behind nuances of cedar wood and red plums. SUPERIORE.DE

Poggio Valente comes from a single vineyard of the same name at an altitude of around 300 metres. Opulent floral and small-fruited Sangiovese nose with optimally nuanced hints of tobacco, cedar and mint. Precise on the palate with plenty of pressure and power, then towards the end the furious resolution of all the well-dosed components in a fine, silky texture and an unforgettable, long final. Mazon is not silent. If you listen carefully, you can hear something different in every vintage – sometimes warmth, sometimes coolness, sometimes the Alpine downdraughts that sweep across the plateau in the evening and sharpen the flavours of the grapes. The 2020 is a vintage that listens and responds: fresh, transparent, with a precision in the fruit that only emerges in calm conditions. The Barthenau estate, built 150 years ago by Ludwig Barth von Barthenau, has belonged to the Foradori-Hofstätter family for decades. The single vineyard Vigna San Urbano – south Tyrol's first officially classified single-vineyard wine, declared a "Vigna" by Paolo Foradori in 1987 – lies at the heart of this estate. Clay-limestone over the Werfen formation, vines over 65 years old, a site that gives the Pinot Nero what it needs: mineral subsoil, cool nights and the time it deserves. Harvested entirely by hand, completely destemmed. Fermentation in concrete vats, ten days of skin contact with remontage. Then twelve months in barrique, eight months in large cask, eight months in bottle – always in the cellars of Barthenau, where the temperature remains constant and the wine finds its own peace.

The estate's top wine, named after the owner, is the result of many years of work in the vineyard and dates back to the year 2000, when the winery began to replant many of its own plots with Sangiovese. To this day, Sergio Zingarelli pursues the goal of interpreting his existing terroir as authentically as possible. The result is the highest classification Gran Selezione, which is confirmed every year by the consortium and is only awarded to the best wines in the appellation.Rich ruby colour. Concentrated nose of herbs, black cherry, chocolate, earthy notes and oak spice. Juicy and soft fruit on the palate, refined tannins, glides dynamically and spicy into a respectable finish. Each parcel is harvested separately by hand, fermented in stainless steel and left on the skins for around four weeks; gentle remontages ensure a fine extraction. Malolactic fermentation takes place without haste. For ageing, the Boffa family primarily chooses large Slavonian barrels, supplemented by a smaller proportion of French oak – used as a textural tool, not as a flavour enhancer. 2021 was a top year in Piedmont. It was characterised by a long, cool ripening process with clear day-night amplitudes, the harvest was late and selective with excellent results.

For the ageing process, the winery primarily uses large Slavonian oak barrels (botti), discreetly supplemented by French oak.

Contrada Feudo is located on the northern slope of Mount Etna at an altitude of around 650 metres, where the vines are rooted in volcanically mixed, sandy and stony soils. Some of the plots with Nerello Mascalese are over 70 years old and deliver concentrated but cool fruit year after year. 2021 was a classic vintage on Etna with a pronounced balance: not too hot, not too humid – ideal conditions for a precise style. The wine is aged for around 16 months in used tonneaux, which emphasises the characteristics of the vineyard and refines the tannin structure.

Cerretta is one of the most prestigious crus of Serralunga d'Alba – a site that Giovanni Rosso has always cultivated with particular dedication. Here, at an altitude of around 350 metres, barren, chalky marl soils meet south and south-east exposure. The result is Barolo with impressive depth, carried by a striking minerality that is recognisable even at a young age. The 2020 vintage brought harmonious ripeness and perfect phenolic development. After being harvested by hand, the grapes were gently pressed and fermented in concrete tanks for around 25 days. The wine was then matured for a good two years in large oak barrels, which emphasise the character of the vineyard without over-moulding it.

In 1985, Giovanni Manetti made a momentous and ingenious decision: the best plots of the Vigna del Sorbo, those south-west-facing slopes in front of the winery at 450 metres above sea level, were to be given their own voice. Here, where slate and the characteristic Galestro slopes above the clay characterise the geological signature of the Conca d'Oro, the estate's oldest Sangiovese vines have been rooted since 1963. What began as a Riserva with ten per cent Cabernet Sauvignon has become a monument to the art of pure Sangiovese over the years.

Le Serre Nuove is much more than a "second wine" – it is Ornellaia's proud ambassador and often the best indicator of what to expect from the legendary flagship. Made from the same grape varieties, under the same skies and with the same philosophy, it has the remarkable ability to predict the personality of the great Ornellaia. The 2022 vintage presents itself as a masterful composition of 54% Merlot, 26% Cabernet Sauvignon, 14% Cabernet Franc and 6% Petit Verdot. This classic Bordeaux blend comes predominantly from the estate's younger vineyards and is treated with the same meticulous care as its big brother. Each parcel is vinified separately before the final assemblage takes place after twelve months.

Anyone looking for the truth in Sangiovese will find it here: Laura Brunelli's Montalcino has been a stunning wine full of vitality, life and energy for years. It displays an almost outrageous degree of clarity and openness. It unfolds brightly and radiantly with lasting purity, elegance and length. This Brunello shows extreme precision and focus, both on the nose and in the mouthfeel. Wild berries, blue flowers and liquorice come together in perfection, and it is impossible to surpass this quality at this price. SUPERIORE.DE

The Nero d'Avola grapes for the very rare Sultana come from a steeply sloping, bush-shaped vineyard facing north-west. The soil here is white with a limestone matrix, rich in minerals and drainage capacity. The pronounced slope and very poor soil reinforce the pedoclimatic characteristics in which the Nero d'Avola plants find a natural habitat. It is an extreme terroir, a combination of environmental and human factors, that distinguishes the Sultana vineyard from other vineyards. The light reflected by the white soils enhances the characteristics and ultimately the quality of the grapes from the vineyard. SUPERIORE.DE

When Rita Tua and Virgilio Bisti bought a farmstead in the village of Notri, south of the medieval town of Suvereto in the Colline Metallifere, in 1984, they had no wine plan. They wanted nature, peace and quiet, a piece of land. The passion for wine changed that – slowly, inevitably, as it always does. The first vintage of Giusto di Notri was produced in 1992, named after San Giusto, the patron saint of Suvereto, and after the location of the estate itself. Eight years later, her Redigaffi was the first Italian wine ever to receive 100 points from Robert Parker. Tua Rita had redrawn the wine map of the Maremma.

When Zefiro Pieri saw the old farmhouse in the hamlet of Sesta in 1950, between centuries-old olive groves and the rolling hills south of Montalcino, he knew that this was where he would stay. He planted the first Brunello vines, initially selling the grapes to others – until his grandson bottled his first own wine in 1991. Today, Claudio Monaci and Silvia Batazzi are the fourth generation to run the estate, while their daughters Caterina and Emma are already waiting in the wings. Sant'Angelo in Colle, just a stone's throw away, is considered one of the finest Brunello locations: volcanic, stony soils, permeable and warm, while the Orcia Valley carries the sea breeze from the Tyrrhenian Sea 45 kilometres away to the vineyards. Claudio and Silvia select the best Sangiovese grapes of the vintage for their Riserva. Spontaneous fermentation in concrete with the vineyard's own yeasts, followed by 40 months of ageing in large vats – time enough to gain depth without losing the fruit. The 2019 epitomises a classic vintage in the best sense of the word: concentrated yet lively, with that balance that only comes about when cool nights and Mediterranean warmth play in harmony.
