1172 – the year in which Volpaia is first mentioned in documents. A small, fortified borgo on a hill north of Radda in Chianti, built as a border fortress between Florence and Siena. Today it is a jewel of peace and beauty and one of the most historic wine villages in Tuscany. Here, where soldiers once stood guard, the Stianti-Mascheroni families now press their grapes within the medieval walls. The bottles mature in the vaults of old churches and almost every cellar contains a tank of organic wine. An entire village dedicated to viticulture. So complete that it becomes poetic again. The Riserva is made from 100% Sangiovese from vineyards between 400 and 600 metres above sea level. One of the highest wineries in the region. Up here, where the air is thin and the nights are cool, Sangiovese develops the elegance and minerality that makes Volpaia so distinctive. Sandstone, clay and sandy-loamy soils with a high proportion of skeleton. Manual harvest in the second half of September, temperature-controlled vinification, then 24 months in French and Slovenian oak barrels.

When Paolo Panerai realised his vision of a great Tuscan red wine made exclusively from indigenous grape varieties at the end of the 1970s, hardly anyone suspected that this wine would make history. As early as 1988, the Wine Spectator catapulted it into the international wine elite with sixth place in its first Top 100 – a triumph for a Supertuscan that deliberately eschewed Cabernet and Merlot in favour of the genetic purity of Tuscan vines. The name itself tells of the terroir: "Sodi" is what Tuscan winegrowers call those hard, stony soils that were too heavy for teams of oxen and had to be laboriously worked by hand. Here, on calcareous Galestro soils between 350 and 400 metres above sea level, around the medieval church of San Niccolò, the vines fight for every drop of water – 85 per cent Sangioveto, the original, small-berried form of Sangiovese, and 15 per cent Malvasia Nera, an almost forgotten grape variety – an almost forgotten grape variety that was abandoned in many places due to its low yields – result in a cuvée of unnerving power and unmistakable race. The 2021 vintage perfectly embodies this philosophy: After 18 to 25 days of maceration in steel tanks, the wine matures for up to 30 months in barriques, two thirds of which in new wood, before resting for a further twelve months in the bottle.

Monforte d'Alba – the name stands for depth, warmth and at the same time a taut, cool vein in the wines. The legendary Cru Ginestra lies in the centre of this high plateau, and at its heart is the single vineyard Vigna del Gris – a gently sloping plot with a south-easterly exposure at an altitude of 300 to 320 metres. The soils, a complex mixture of sand, silt and clay, provide the perfect stage for Nebbiolo, planted here in two stages: 1978 and 2000. Today, these vines produce a grape quality that is characterised by both concentration and finesse. The 2021 vintage is considered almost ideal in Barolo: a cool spring, followed by a warm, stable summer with no periods of extreme heat and a long, even ripening period into golden October. For Conterno Fantino, the manual harvest began in mid-October – the berries reached a flawless phenolic ripeness. After 12 to 15 days of fermentation and maceration in stainless steel, the wine is aged for two years in French oak, partly in barriques and partly in larger barrels. This combination gives the wine structure and complexity without masking the unmistakable signature of the vineyard.

Cicala is the most masculine vineyard in the Conterno portfolio. Anyone familiar with the elegant, floral Colonnello from the same Bussia hilltop will be surprised here. Less sand, more clay. Less playfulness, more pressure. The calcareous clay soil is enriched with iron and limestone – minerals that give the wine the structural strength that distinguishes it from its siblings. The vines are 40 to 45 years old, facing south to south-west, and what grows here is mainly Nebbiolo Lampia on Rupestris du Lot rootstock. Only three producers own plots in this part of Bussia: Conterno, Prunotto and Bussia Soprana. Six hectares in total, around 800 crates per vintage. A rarity. Fermentation in steel tanks at 28°C, five to six weeks of maceration, then 29 months in 25-hectolitre Slavonian oak barrels – no barrique, never. Aldo Conterno once said: "Vanilla, toast and spice do not belong in Barolo." The barrels are scraped every two years and used for a maximum of eight years. After ageing, the wine spends a few months in steel before being bottled unfiltered.

It impresses with the intensity of its dark fruit and the excellent overall balance that can only be found in this coveted site. The 2017 vintage has allowed a complex, fruit-driven Falletto to mature, with a spectrum ranging from small dark berries, menthol, flowers and liquorice to a tannin that is present yet trimmed for consistent elegance. It is a particularly precise and direct Barolo without being loud. However, its full character, aromatic diversity and delicacy will only really come to the fore with further bottle ageing. Rabaja and Asili are probably the most famous sites in Barbaresco. Medium, finely fragrant nose of rose petals, cherries and blue blossoms, with restrained ethereal herbal notes. On the palate, powerful, compact and with a well-proportioned cornucopia of black fruits such as blackberry and cassis, plus some liquorice. As the wine progresses, it shows its power and a certain pressure, which, however, never comes across as wild or ostentatious, but always reflects the elegance of the site and the Giacosa-typical ageing in large wood. The first vines were planted in 1952 on the ridge that today gives the wine its name. Poggio Lombrone – the hill overlooking the Ombrone Valley. Seventy years later, some of these vines are still standing. Their yield is low, their concentration exceptional. Whoever says cru means exactly that. The vineyard lies at 300 metres, the soils are tufaceous clays and calcareous marl slate – maremma terroir in its wildest and most concentrated form. Long fermentation in open wooden conical fermenters with manual punching down, complete malolactic fermentation, then 18 months in 30-hectolitre oak barrels, followed by at least 24 months in the bottle.

Le Serre Nuove carries the DNA of Ornellaia in every fibre, born from the same vineyards, shaped by the same philosophy. What Marchese Lodovico Antinori began in 1981 as a visionary experiment – french vines on the Tuscan coast, four kilometres from the Mediterranean Sea – has long since become a legend. Le Serre Nuove, the estate's "Second Vin" since 1997, is much more than just the younger brother: it is a preview and invitation to discover the Mediterranean Bordeaux style that made Bolgheri world-famous. After a mild winter and early budding, the 2023 vintage brought frequent rainfall during flowering and fruit set, which reduced yields but gave the grapes the perfect physiological balance that characterises great wines. Cooler summer conditions and precise August rains enabled ideal ripeness. The cuvée of 65% Merlot, 25% Cabernet Sauvignon and 10% Cabernet Franc is vinified separately from the grape varieties and matures for 15 months in French oak – 25% in new barrels and 75% in one-year-old barrels.

Candied apricot, peach, orange peel and a delicate honey note on the nose, rounded off with warm components such as sugar couleur, roasted almonds and melted butter. What does a name mean? In the Piedmontese dialect, "Pajè" once simply referred to the various vineyard parcels – an everyday word for everyday things. The fact that this name now stands for one of the most legendary crus of Barbaresco is one of the beautiful ironies of wine history. The Roagna family has been cultivating 1.83 hectares here in the heart of the municipality since 1953, and anyone who asks Luca Roagna about the core of his work will inevitably end up here. The vineyard is a natural amphitheatre: gently sloping to the south and south-west, protected from the wind by hills and open to the Tanaro valley. The soil tells of 70 million years of – marine sediments from the Tertiary period, interspersed with active limestone in a concentration that is exceptional even for the Langhe. The vines, on average over 50 years old, are deeply rooted in this history. After the harvest, the must ferments with its own yeasts and macerates for up to two months with a submerged cap. Five years in large wooden barrels and concrete complete the maturation process.
