The extremely popular and elegant Amarone classic from Zenato comes from Sant'Ambrogio, the heart of the Valpolicella Classico, where the family has had its home since 1960. Corvina dominates the cuvée with eighty per cent, complemented by Rondinella, Oseleta and Croatina – all from the slopes of the Costalunga parcel. After the hand harvest in October, the ritual of appassimento begins: the grapes rest for four months in shallow crates, losing water and concentrating sugar and flavours. Pressing does not take place until January, followed by slow fermentation with skin contact. The wine then matures for thirty-six months in large Slavonian oak barrels before being released after further maturation in the bottle.

The Nerello grapes (100% Mascalese) come from the northern slope of Etna from plots in the Contrada Dafara Galluzzo in the Rovittello district. Opens in a delicate ruby red colour, then fine, heady, spicy on the nose, revealing a pretty basket of red fruits after a few minutes of aeration. Initially closed on the palate, only gradually revealing its flavour facets, then medium pressure in the middle, with a very fine structure and almost Burgundian finesse and elegance. Montepulciano is one of the oldest DOCGs in Italy – since 1966, on a par with Brunello di Montalcino. The fact that the Denominazione is now, after decades, introducing a new top category is not a marketing decision, but the result of long historical research. Twelve Pievi – the rural parishes that have divided the territory since late antiquity – were defined as Unità Geografiche Aggiuntive. Gracciano is one of them. This is no coincidence: the hills south-west of Montepulciano are among the oldest and best-known vineyards in the appellation, and their wine history can be traced back to the early 19th century.

Avvoltore is a blend of Sangiovese, Cabernet Sauvignon and Syrah. Powerful and explosive in the glass, it possesses remarkable intensity in all its dimensions, with great fruit and equally impressive tannins. Dark cherry, leather, smoke, tobacco, liquorice and grilled herbs form a virile, imposing Maremma red wine that will need at least a few years to develop its full expressive power. Away from the dominance of Sangiovese in the Conca d'Oro, Giovanni Manetti shows the international side of Fontodi with this single-varietal Syrah. The hand-picked Syrah grapes grow in the south-facing single vineyards Case Via and Pecile around Villa Pecile, where the calcareous-clay soils and the Mediterranean microclimate with pronounced day-night temperature fluctuations prove to be ideal for the Rhône grape variety. After three weeks of spontaneous fermentation in stainless steel tanks with indigenous yeasts, the organically certified wine matures for twelve months in French barriques from Troncais and Allier.

Fanti's Brunello di Montalcino 2020 is delicately flavoured, haunting floral and seductive from the first swirl of the glass. A hint of icing sugar gives way to bright cherries, candied oranges, mint leaves and lavender, creating an extrovert yet delicious picture. In the mouth, it is seamless and silky, with a subtle hint of citrus and vibrant acids introducing ripe red notes of black berries with herbs. In a winery that is world-famous for its monumental Amarone and Recioto, a dry white wine seems like a quiet provocation. But Giuseppe Quintarelli would not be Quintarelli if this Bianco Secco was not vinified with the same uncompromising dedication. The exceptional blend combines 70 per cent of the indigenous Garganega with Chardonnay, Sauvignon Blanc, Trebbiano and the rare Saorin – a white grape variety that only survives in a few vineyards in Valpolicella. The vines, which are at least thirty years old, are rooted in the characteristic limestone and basalt soils of Negrar, which give the wine that volcanic smokiness that distinguishes it from other Venetian white wines. After the harvest, a twelve-hour cold maceration takes place, followed by temperature-controlled fermentation. Ageing takes place in stainless steel on the fine lees, with regular bâtonnage for added texture and complexity.

The year was 1090, the year in which Leif Erikson discovered North America, the Chinese discovered gunpowder and Pope Urban II conquered Jerusalem. On that day, the notary Bellundo recorded a contract in the Siena state archives: two capons, three loaves of bread and six coins of good silver as an annual lease for a vineyard in the divine valley of Dievole. "Dio vuole" – god wants it. This is the etymological root of this name, which has symbolised the special connection between man and nature in this corner of Tuscany for over nine centuries.

On the palate, it shines with freshness, intensity and an exciting potpourri of teriyaki spice, smoke, cherry and notes of smoked meat. Here is a fairly new single-vineyard wine, similar in style to Santo Spirito, but with an "autumnal" component. Light ruby red in colour, with a nose of gravel, vanilla and a subtle hint of mint, plus some cranberry, cherry, nutmeg and mocha. Fresh and exciting on the palate with a sweet and sour component and a delicately bitter vein. Compact tannin that certainly deserves a few more years in the bottle. Animanaturale from vines over 60 years old is the lightest and freshest wine from the new Animaetna line of the small garage winery Contrada Santa Spirito, which belongs to Feudo Maccari. Matured almost entirely in amphorae, the Nerello Mascalese grape presents itself here in all its fruitiness and freshness, completely unadulterated and pure. The grapes are foot-pressed, spontaneous fermentation is carried out using the grapes' own yeasts, racking and bottling take place according to the phases of the moon.
