The Sottimano winery has five vineyard sites, with the Pajorè site near Treiso having the poorest soils of all. These wines are therefore more elegant and ripe. The current 2018 vintage is a super-classic, explosive wine, with tremendous depth and character. Although it has a lot of breadth and texture, it remains light on its feet. Lavender, mint, liquorice and purple berry fruit are beguiling and wonderfully vibrant in the glass. Pajorè is a spicy, elegant and sweet Nebbiolo that is fine yet covers the mouth well - and we are always impressed by its lovely salty mouthfeel. SUPERIORE.DE

Contrada Arrigo is located on the northern slope of Mount Etna at 610 metres above sea level, facing north-east with a view of the sea. Wine has been grown on this ancient soil since time immemorial. It is rich in organic substances and consists mainly of volcanic sand and lava stones from a volcanic eruption in 1180. Significant temperature fluctuations during the day and night lead to a slow ripening process that preserves freshness and minerality.

Before there was Barolo, before Barbaresco bore its name, there was Boca. In 1300, a chronicler from Novara described the wines from these hills as "famous since ancient times". Perhaps even before the Romans. Today, seven centuries later, Boca is almost forgotten – a DOC with barely more than 15 hectares, surrounded by woods that were once vineyards. The fact that we have this wine in our glass at all is thanks to a Swiss man who decided to revitalise a dying appellation at the end of the 1990s. Christoph Künzli took over Antonio Cerri's legacy and with him a philosophy that knows no compromise: large barrels, long ageing, no intervention. The Boca is made from 85% Nebbiolo – here called Spanna – and 15% Vespolina, the capricious grape variety that contributes spice and floral sweetness without masking the structure of the Nebbiolo. The grapes come from the Traversagna and Le Piane parcels, where vines between 30 and 60 years old are rooted in volcanic porphyry soils – a terroir that is unrivalled in Italy. Harvested in mid-October, thirty days on the skins, punched down daily by hand. Then aged for three to four years in large Slavonian oak vats, followed by one year of bottle ageing. No filtration. No rush.

Here comes the third vintage of Zerbina's single-vineyard Sangiovese, with which the winery once again proves in a very small edition (< 1,000 bottles) once again proves what great Sangiovese Romagna can produce. Dark fruity, full nose with a cornucopia of dark berries and hints of forest floor, tar and white ash. Firm on the palate, enormously complex, the concentrated fruit gradually opens up with further air and a Sangiovese work of art is revealed that could not be more typical, pure and at the same time more complex. South Tyrol's Chardonnay legend writes another chapter. Since 1994, the Löwengang has characterised the perception of Alpine white wine excellence like no other. The historic estate above Margreids holds a secret: Chardonnay vines, whose roots reach up to five decades deep into the South Tyrolean soil, thrive on barren limestone soils between 230 and 330 metres. The warm microclimate with its nightly drops in temperature produces grapes of concentrated minerality. The Lageder family gives this terroir free rein. Organic farming without compromise, spontaneous fermentation in hand-picked barriques from the Tronçais and Vosges forests. One third new wood lends structure, while eleven months on the lees give the wine its silky texture. A further twelve months of ageing in the cellar bring the final harmony.

Castello di Volpaia made wine history in 1983: In the midst of the Supertuscan revolution, when visionary winegrowers rebelled against the restrictive DOC regulations, Balifico was born – named after the villa of the same name in the heart of the fortified village. What began as Vino da Tavola became the manifesto of a new era that combined international grape varieties with Tuscan soils to create an extraordinary synthesis. The grapes for this exceptional wine thrive at the highest altitudes in Tuscany, at over 600 metres above sea level, where the air is already cool like the Alps and the vines are bathed in sunlight all day long. Sangiovese vines, old Tuscan clones of exceptional purity, are rooted in the same sandstone soils that have been producing great wines since 1172 – while Cabernet Sauvignon, with its international nobility, interprets the mountainous personality of this unique terroir in a new way.

It goes without saying, but this is "only" the Altare family's entry-level Barolo from four different vineyards, enhanced this year by the best grapes from Cerretta Vigna Bricco, which was not produced in 2020. Racy and supple, with terrificpurity and fine balance, the 2020 is downright galactic. Red berries, flowers, mint, liquorice and rose petals on the nose. A highly linear personality on the palate with flavours of sour cherry, aniseed, crushed rock and blue flowers. A captivating Barolo as it is written in the book and for us one of the greatest of the vintage! SUPERIORE.DE

Mazon is not silent. If you listen carefully, you can hear something different in every vintage – sometimes warmth, sometimes coolness, sometimes the Alpine downdraughts that sweep across the plateau in the evening and sharpen the flavours of the grapes. The 2020 is a vintage that listens and responds: fresh, transparent, with a precision in the fruit that only emerges in calm conditions. The Barthenau estate, built 150 years ago by Ludwig Barth von Barthenau, has belonged to the Foradori-Hofstätter family for decades. The single vineyard Vigna San Urbano – south Tyrol's first officially classified single-vineyard wine, declared a "Vigna" by Paolo Foradori in 1987 – lies at the heart of this estate. Clay-limestone over the Werfen formation, vines over 65 years old, a site that gives the Pinot Nero what it needs: mineral subsoil, cool nights and the time it deserves. Harvested entirely by hand, completely destemmed. Fermentation in concrete vats, ten days of skin contact with remontage. Then twelve months in barrique, eight months in large cask, eight months in bottle – always in the cellars of Barthenau, where the temperature remains constant and the wine finds its own peace.

The estate's top wine, named after the owner, is the result of many years of work in the vineyard and dates back to the year 2000, when the winery began to replant many of its own plots with Sangiovese. To this day, Sergio Zingarelli pursues the goal of interpreting his existing terroir as authentically as possible. The result is the highest classification Gran Selezione, which is confirmed every year by the consortium and is only awarded to the best wines in the appellation.Rich ruby colour. Concentrated nose of herbs, black cherry, chocolate, earthy notes and oak spice. Juicy and soft fruit on the palate, refined tannins, glides dynamically and spicy into a respectable finish. As always, the grapes come from our own vineyards in Treiso and San Rocco Seno d'Elvio. Each parcel is harvested separately by hand, fermented in stainless steel and left on the skins for around four weeks; gentle remontages ensure a fine extraction. Malolactic fermentation takes place without haste. For ageing, the Boffa family primarily chooses large Slavonian barrels, supplemented by a smaller proportion of French oak – used as a textural tool, not as a flavour enhancer. 2021 was a top year in Piedmont. It was characterised by a long, cool ripening process with clear day-night amplitudes, the harvest was late and selective with excellent results.

The name says it all – and rarely has a wine deserved its name so consistently. Quartz: a mineral that was formed in fire, has survived for millions of years and is still visible today in Terlan's soils as a fine speckle in the volcanic porphyry rock. 55 to 60 per cent quartz content, slightly acidic pH value, skeleton-rich sandy-loamy structure without carbonate – a soil that allows water to pass through, rations nutrients and puts the vine under controlled stress. This micro-stress is not a deficiency. It is intentional. It forces the plant to produce terroir-specific polyphenols, which give the wine the savoury tension for which Terlan is internationally renowned.

A Barolo from a great vintage: the 2021 wine year brought a long growing season with clear day-night amplitudes and precise harvest: fully ripe phenolics, bright acidity, impeccable health. The grapes come from family-owned plots in Serralunga d'Alba, La Morra, Grinzane Cavour, Monforte and Mosconi. Each vineyard is fermented separately in stainless steel; prolonged maceration with gentle extraction, followed by unhurried malolactic fermentation. For the ageing process, the winery primarily uses large Slavonian oak barrels (botti), discreetly supplemented by French oak.

The Collio Chardonnay Selezione with a grey label in a small edition of just 2,000 bottles is another special wine from Borgo del Tiglio, characterised by extreme varietal purity and a light, lively and airy bouquet. The wine's aromas are characterised on the one hand by fresh apricots and nectarines and on the other by creamy almond paste, preserved lemon and poached pear. The warmth of the 2023 vintage has contributed to an added textural richness that makes it a perfect match for an appetiser of escargots. SUPERIORE.DE

A mistake made history. Generations of wine lovers translated "Negroamaro" as "black and bitter" – but the name tells a different story: Greek "mavros" and Latin "niger" both mean "black". Black like the berries, black like the night over the Ionian Sea, which has washed this grape variety onto Puglia's coasts since the 8th century BC. So it is no wonder that Gianfranco Fino calls his Negroamaro Jo – after the sea that washes Manduria and whose salty breeze caresses his vineyards. While the Primitivo is Fino's "loud" masterpiece, the Jo whispers. But if you listen carefully, you can hear the whole soul of Salento. The vines, forty years old, grown in classic Alberello bush training, are rooted just a few kilometres from the Ionian Sea in chalky, loamy soil. Each vine bears barely 800 grams of grapes, concentrated essence instead of southern abundance. harvest begins by hand in mid-September, when the berries are already slightly dry. Two to three weeks of maceration, then nine months of ageing in French barriques, half new and half used. No filtration, no fining – fino leaves the wine its integrity.

Reserve your best fish recipe for the Borgo del Tiglio Collio Sauvignon Selezione. It is a textbook rendition of the fragrant grape, dressed in a manner typical of Friuli. In fact, compared to Sauvignon Blanc from New Zealand, this region tends to produce softer wines that do not have pungent green notes. The bouquet is floral and delicate, with notes of white rose, fruit, quince and delicate lemon. There is also a very pronounced mineral note, reminiscent of crushed shells, in this edition of 1,200 bottles, which immediately transports you to the north-east of Italy. Hats off! SUPERIORE.DE

An absolute rarity from the legendary vineyard of the Savoia royal family: while the "Vigna dell'Impero 1935" is known worldwide for its exceptional Sangiovese, Tenuta Sette Ponti now surprises with a mysterious white counterpart. This rare Trebbiano comes from the same historic 1935 terroir that was once planted by the Italian royal family – a white wine that interprets the mineral depth and regal elegance of the famous vineyard in a completely new way.

Contrada Feudo is located on the northern slope of Mount Etna at an altitude of around 650 metres, where the vines are rooted in volcanically mixed, sandy and stony soils. Some of the plots with Nerello Mascalese are over 70 years old and deliver concentrated but cool fruit year after year. 2021 was a classic vintage on Etna with a pronounced balance: not too hot, not too humid – ideal conditions for a precise style. The wine is aged for around 16 months in used tonneaux, which emphasises the characteristics of the vineyard and refines the tannin structure.

Cerretta is one of the most prestigious crus of Serralunga d'Alba – a site that Giovanni Rosso has always cultivated with particular dedication. Here, at an altitude of around 350 metres, barren, chalky marl soils meet south and south-east exposure. The result is Barolo with impressive depth, carried by a striking minerality that is recognisable even at a young age. The 2020 vintage brought harmonious ripeness and perfect phenolic development. After being harvested by hand, the grapes were gently pressed and fermented in concrete tanks for around 25 days. The wine was then matured for a good two years in large oak barrels, which emphasise the character of the vineyard without over-moulding it.

In 1985, Giovanni Manetti made a momentous and ingenious decision: the best plots of the Vigna del Sorbo, those south-west-facing slopes in front of the winery at 450 metres above sea level, were to be given their own voice. Here, where slate and the characteristic Galestro slopes above the clay characterise the geological signature of the Conca d'Oro, the estate's oldest Sangiovese vines have been rooted since 1963. What began as a Riserva with ten per cent Cabernet Sauvignon has become a monument to the art of pure Sangiovese over the years.

Borgo del Tiglio's Collio Rosso Riserva is a northern Italian Merlot (with the addition of 5% Cabernet Franc) and is only vinified in the best vintages. A beautiful red with a delicate personality and a resting intensity that emphasises a kind of elegance that is particularly rare for this grape variety. On the nose, redcurrant, sour cherry, blue flowers and hints of caraway and crushed linseed. A great, exceptional red wine, of which only 1,200 bottles were produced. SUPERIORE.DE

Le Serre Nuove is much more than a "second wine" – it is Ornellaia's proud ambassador and often the best indicator of what to expect from the legendary flagship. Made from the same grape varieties, under the same skies and with the same philosophy, it has the remarkable ability to predict the personality of the great Ornellaia. The 2022 vintage presents itself as a masterful composition of 54% Merlot, 26% Cabernet Sauvignon, 14% Cabernet Franc and 6% Petit Verdot. This classic Bordeaux blend comes predominantly from the estate's younger vineyards and is treated with the same meticulous care as its big brother. Each parcel is vinified separately before the final assemblage takes place after twelve months.

Only 2,000 numbered bottles of the 2018 debut vintage of the "Vigna del Bersagliere" Morellino di Scansano Riserva were filled. The grapes for the new top Sangiovese from Podere 414 come from a small, organically cultivated vineyard of just 1.3 hectares above the winery. It is aged for 36 months in 500 Liters and then refined for 24 months in the bottle. Bright ruby red in colour. Primary aromas of ripe, dark fruit with spicy notes in the glass. Firmly structured on the palate, again dark fruit, plus plums and earthy tones. It is still young and somewhat angular in the glass, but its exceptional style and good acidity/tannin structure already suggest very good ageing potential. SUPERIORE.DE
