When Antonio Argiolas celebrated his centenary in 2006, the family created a wine in his honour that is more than just a tribute – it is the legacy of a man who had dedicated his entire life to the Sardinian soil. Antonio 100 is only produced in exceptional vintages, when nature itself gives its consent to this monumental project. The 2017 vintage marks such a moment of perfection. The best Cannonau grapes from the Tenuta's oldest vineyards are selected for this exceptional passito – vines, some of which still come from Antonio Argiolas' own plantation. The harvest is followed by a centuries-old ritual: the grapes are spread out on bamboo mats and left to dry for three months under the warm Sardinian autumn sun. This appassimento process not only concentrates the sugars, but also develops the complex flavour precursors that later give the wine its incomparable depth. The subsequent vinification takes place in small batches with the utmost precision. The dried berries are gently pressed and the precious must ferments slowly in temperature-controlled tanks before the wine matures for two years in French barriques. During this time, the unique harmony between the powerful structure of the Cannonau and the elegant sweetness of the Passito method develops.

Moscato Rosa is one of the aromatic treasures of South Tyrol – an autochthonous grape variety of beguiling elegance and extreme sensitivity. The vines grow at an altitude of 250 to 300 metres in locations exposed to the wind, where constant air movement disperses the moisture. This wind is essential for survival: even the slightest botrytis infestation would destroy the diverse aromatic components and weaken the colour intensity. The soils of porphyry, sand, clay and limestone facing south-south-west provide the perfect foundation for this rarity. Vinification follows the principles of red wine production, but with a shorter maceration period to avoid aggressive tannins. As soon as the desired characteristics are achieved, fermentation is interrupted by cooling – a precise moment that requires a sure instinct. The young wine remains in stainless steel until bottling, where it retains its aromatic freshness.

Ricasoli's Vin Santo is the sublime interpretation of one of the historic grape varieties of Chianti Classico, the Malvasia del Chianti, and at the same time a masterpiece of centuries-old Tuscan craftsmanship. Here, the 880-year-old winemaking tradition of the Ricasoli family merges with the mystical art of passito making to create a wine of rare nobility. The grapes come from vines over forty years old on well-drained alluvial soils at an altitude of 200 metres with southern exposure. At the beginning of October, at the end of the harvest, the Malvasia grapes are hand-picked together with small quantities of Trebbiano and Sangiovese grapes with an optimum sugar content and perfect flavour concentration. Only the best, loose-berried grapes with sparse berries are transported in 18-kilogramme crates to specially ventilated chambers at Castello di Brolio. This is where the magic of time begins: the grapes hang to dry for three months while the water content slowly dwindles and the flavours concentrate. The must from the gentle pressing then ferments for months - a process that takes years and requires the utmost patience. The young wine then matures for nine years in oak caratelli of various sizes, where it develops its characteristic amber colour and complex aromas.

When the morning mist rises from the hills near Orvieto in late October and covers the vineyards of Castello della Sala like a silken veil, one of the most mysterious transformations in the world of wine begins. The grapes – sauvignon Blanc, Grechetto, Traminer, Sémillon and Riesling – are attacked by Botrytis Cinerea, the noble rot that has produced the world's greatest sweet wines for centuries. The fungus penetrates the grape skin with invisible precision, extracts the water from the pulp and concentrates sugars and flavours into an essence that would not be accessible to any cellar technology. In several patient passes, the harvesters pick only those berries that have reached the ideal degree of botrytisation – a process that requires connoisseurship and timing, as the right moment is fleeting. After gentle pressing, the must ferments for 18 days at a controlled cool 17 degrees before the still sweet wine is transferred to French barriques. Here it matures for months, absorbing delicate wood nuances while the aromas and structure harmonise, before ageing in stainless steel completes the work.

Before Sagrantino was pressed dry, it was a festive wine. A monastery wine that graced the tables of the Franciscans of Montefalco at Christmas and Easter – made from semi-dried berries, sweet and concentrated, blessed by the name itself: sacer = holy. Arnaldo Caprai still makes this oldest form of Sagrantino today – not as a nostalgia, but as a conviction that this style is perhaps the most intimate language of the grape variety. The grapes for the Passito are harvested by hand in October, the best grapes are carefully selected, then stored on wooden grates – for a good two months until the grapes have lost water and gained depth. What follows: 15 days of fermentation, 30 days of maceration on the skins, 15 months in French oak barrels, then at least one year in the bottle. From 7,000 vines per hectare, on the calcareous-clay soils of the Val di Maggio, with a yield that is limited from the outset. The 2019 vintage was one of Sagrantino's best years: a cool, slow autumn after a hot summer – for a late-ripening variety like Sagrantino, the constellation that winegrowers are waiting for. Tannins and acidity found their balance, the aromatic precision is remarkable.

In the quiet hollow above Söll, where the Gewürztraminer vines escape the warm south wind from Lake Garda, a mystery of rare beauty takes place every year. Here, protected in this natural arena between 400 and 500 metres above sea level, the eagerly awaited Botrytis cinerea – the noble rot – finds its perfect conditions. While other vineyards have long since been emptied, the Terminum grapes remain on the vine until the first months of winter. December is their time of perfection, when they have become golden treasure troves of pure flavour, marked and concentrated by botrytis. Each berry is selected individually, each bearing the promise of exceptional complexity. Twelve hours of maceration, gentle pressing at a maximum of 1.8 bar, then the must is transferred to French barriques. Fermentation begins there, which lasts six to nine months. A further seven to ten months of ageing in wood, followed by at least three months of bottle ageing complete the deceleration process.

700 bottles. That is the entire production of this Vin Santo – from the Vigneto delle Valli at 420 metres, 5,000 vines per hectare, 1.5 kilograms of grapes per vine. Trebbiano Toscano and Malvasia Bianca, half each, harvested by hand in the first days of September 2018 and then transferred to the appassimento. The grapes were left to dry for four months in the ventilated appassitoio – four months in which the water drained away, the sugar concentrated and the flavour intensified. Then manual pressing with a mechanical hand press. What remains finds its way into 100-litre chestnut Liters– sealed with the winery's mother yeast, which is passed on from vintage to vintage. There the must rests, ferments slowly and matures for five years. Five years in which wood, yeast and time do their part.

With the 2006 vintage, Monsanto's Vin Santo was released for the first time as "Occhio di Pernice", i.e. it was made from 100% Sangiovese grapes. It is only vinified in the very best years, the grapes are carefully harvested by hand in October and then placed on special racks where they rest until the beginning of the following year. After gentle pressing, the must is sealed and fermented in small oak, cherry and chestnut barrels in the Vinsantaia, where it is exposed to seasonal temperature fluctuations.

The grapes for one of the most elegant and ethereal Vin Santo in Chianti Classico are dried before they are pressed and then sealed in barrels for nine years. Paolo de Marchi calls it "lazy winemaking" and admits: "The blending process is actually the most challenging part, as every barrel is different and after tasting 10 barrels, palate fatigue sets in". The result is a very elegant and pure Vin Santo that has beguiling notes of candied fruit, honey and sweet spices. The balance between sweetness and acidity keeps the wine light, lively and refreshing, and it has a smoky edge on the finish. This is a great Vin Santo, and although it has more than 200g/litre of residual sugar, it is surprisingly light, refreshing and easy to drink. SUPERIORE.DE

The flavours are of astonishing intensity with explosive notes of candied fruit, brown sugar, maple syrup, caramel, toffee, butterscotch and dried apricots.
