For many years, Castello della Sala has been producing one of Italy's most famous white wines, the Cervaro. In recent years, it has become fresher and deeper at the same time, without the conservative, broad style that characterised older late harvest editions of this wine. On the nose, stewed apples, cream, notes of oak bark, mango and peach. The palate is full of tropical fruit with a fine vein of acidity and a precise mineral component. Andrius. Here, where in 1893 courageous winegrowers laid the first foundation stone of South Tyrolean co-operative history, a Sauvignon Blanc of rare strength and elegance is still produced today. The vines thrive on the calcareous slopes between 260 and 380 metres, where dolomite rock and Andrian porphyry characterise the terroir like two old friends who complement each other. It is the Mediterranean climate that shows its cooler side up here. Temperatures drop at night, allowing the vines to breathe. During the day, the South Tyrolean sun warms the stony soils – an interplay that gives the Sauvignon Bianco that special tension that characterises great wines. In the hands of cellar master Rudi Kofler, selected grapes from the oldest vineyards are turned into a wine of remarkable depth. Six months on the fine lees. Eighty per cent in stainless steel for freshness, twenty per cent in large wooden barrels for structure.

Top-class Pinot Bianco from the South Tyrolean Wine Road, more precisely from the exposed Sirmian hillside, where the Pinot Bianco finds its ideal location and an optimal microclimate. As a result, it is of remarkable quality every year. Clear and sparkling straw yellow in the glass, with an intense bouquet of light flowers, green apple, redcurrants and a hint of sage and nutmeg. Sauvignon Andrius matures on the lees for six months and is a lively, well-structured white wine with great varietal typicity. Ripe peaches, dried apricots, juicy honeydew melon, candied almonds, flowers and a hint of mint and white pepper combine with the elegant style to create a remarkable overall picture. Great class! Giacomo Neri's Pietradonice is Cabernet Sauvignon at the highest level and has become a legend, as there is hardly a wine in Montalcino that can even come close to it. Monumental and very concentrated, with hints of sour cherries and a fine cedar and liquorice note. The exciting thing: Pietradonice is clearly recognisable as a Montalcino growth and yet, with its herbaceous spiciness, it is just as typical of Neri as it is of the grape variety and thus again as if from another larger world. The wine icon, rare every year and very highly rated, presents itself in a shiny, rich ruby. On the nose, crisp berry fruit, ripe dark cherries, sweet plums and delicate notes of cinnamon. R.S. stands for "Recentemente Sboccato" – recently disgorged. What sounds simple is the result of a decade of patience: this Edizione rested on the lees for 10 years and 4 months before it saw the light of day. Launched in 2020, the project makes the timeless elegance of the Cuvée Prestige accessible in its most mature form. The blend combines 75% of the 2014 vintage with 19% reserve from 2013 and 6% from 2012, obtained from 149 certified organic vineyards. The grape varieties: 82% Chardonnay, 11% Pinot Nero, 7% Pinot Bianco – each grape washed and dried according to the Ca' del Bosco method. The result is a Dosage Zéro of uncompromising purity.

The Aleatico grapes for this very small edition (< 500 hand-numbered bottles) dry slightly on the vine when they are harvested. They are then subjected to further drying in well-ventilated rooms for about 45 days, as in the production of Amarone. The first fermentation takes place in stainless steel, the further course then in new small wooden barrels of medium toasting.

When Paolo Panerai realised his vision of a great Tuscan red wine made exclusively from indigenous grape varieties at the end of the 1970s, hardly anyone suspected that this wine would make history. As early as 1988, the Wine Spectator catapulted it into the international wine elite with sixth place in its first Top 100 – a triumph for a Supertuscan that deliberately eschewed Cabernet and Merlot in favour of the genetic purity of Tuscan vines. The name itself tells of the terroir: "Sodi" is what Tuscan winegrowers call those hard, stony soils that were too heavy for teams of oxen and had to be laboriously worked by hand. Here, on calcareous Galestro soils between 350 and 400 metres above sea level, around the medieval church of San Niccolò, the vines fight for every drop of water – 85 per cent Sangioveto, the original, small-berried form of Sangiovese, and 15 per cent Malvasia Nera, an almost forgotten grape variety – an almost forgotten grape variety that was abandoned in many places due to its low yields – result in a cuvée of unnerving power and unmistakable race. The 2021 vintage perfectly embodies this philosophy: After 18 to 25 days of maceration in steel tanks, the wine matures for up to 30 months in barriques, two thirds of which in new wood, before resting for a further twelve months in the bottle.

In the house, they simply call him "A". As if he didn't need a name. As if the letter was beginning enough – the beginning of everything Schiopetto has to say. Amrità is a Sanskrit word: the immortality potion of the gods, the mythical nectar that gives eternal life to those who drink it. The fact that a Friulian winery calls its flagship wine this is not coquetry – it is a commitment. Wine is not simply made here. This is where it becomes essential what Capriva del Friuli has to say. The basis: Chardonnay from old vines, complemented by a small portion of Friulano – the variety with which Mario Schiopetto started everything in 1965. Both together, as if they had always been destined for each other. Fermentation in steel, nine months of ageing in steel and large barrels, followed by at least six months of bottle ageing. The 2022 was produced in a warm, dry year – and yet it shows no heat, but subtle maturity. Friuli has its own laws.

After "A" comes "M". This is not a weak alphabet exercise – this is strong hierarchy. If Amrità is the immortality potion, then "M" is the monument. The man himself, in bottle form. The legacy of MARIO Schiopetto, born in 1930, died in 2002, lies in every vintage of this wine – in the Ponca soils of Capriva, in the philosophy of the cellar work, in the conviction that a great white wine needs no compromises, only the courage to achieve total perfection.

Batàr is undoubtedly reminiscent of Burgundy, but with unmistakable Tuscan authenticity. Vintage after vintage, Querciabella's forward-thinking winemaking has evolved beyond the hedonistic idea of growing foreign, albeit noble, white grapes in a stronghold of red wines to focus on expressing a particular sense of place. The Batàr's inherent vitality and classic minerality clearly come from the high-altitude vineyards of Ruffoli and the Galestro soils typical of the best sites in Chianti Classico.

The Rosso di Montalcino comes from slightly younger Brunello vines and is matured for 12 months in large oak barrels. It undoubtedly bears the signature of the top winery Biondi Santi: delicately sweet, open flavours of red berries, flowers and cloves. Like all of the winery's other wines, the Rosso is classic and firm in style, with a bombastic structure and a brilliant, long finish. True to the house, it also has a long ageing and maturation potential and can compete with some of the Brunello wines of the appellation today and in the future. SUPERIORE.DE

Terre Alte is a masterpiece of Friulian white wine artistry – a wine that has been setting standards since its first cuvée in 1981. The combination of Friulano, Pinot Bianco and Sauvignon from the best vineyards around Rosazzo is condensed here into a vinological ideal of the Collio.

A jewel among Italian sweet wines: Picolit is one of the country's great rarities - an autochthonous grape variety whose low yields are due to natural trickling. It was already in demand at royal courts in the 18th century, but today it is only cultivated on a few hectares. Livio Felluga's Picolit 2019 from the Colli Orientali del Friuli comes from select parcels with poor marl and sandstone soils that provide finesse and salty freshness. The late-harvested, selected grapes are partly dried on straw mats. The wine is matured for many months in small oak barrels.

Ai Suma is Braida's epitome of exceptional Barbera – ai Suma, which means "We did it" in the Piedmontese dialect, was first created in 1989 by a lucky coincidence: a late harvest that gave the wine enormous maturity and complexity. Since then, Braida's top Barbera has only been vinified in outstanding years, from hand-picked grapes from old vines in sun-drenched vineyards around Rocchetta Tanaro. The 2021 vintage benefited from a harmonious vegetation cycle: a mild spring, warm but balanced summer months and a dry, sunny harvestthat lasted well into October. These conditions allowed for a late harvest with perfectly ripe berries that characterise the wine. Careful fermentation is followed by the classic ageing period of around 15 months in French barriques, followed by a longer period of rest in the bottle, which brings structure and flavour into full harmony.

Sauvignon Bianco Rachtl comes from a small micro-location of just 0.4 hectares. It gets its fine flint and graphite nose from the porphyry soils near Unteraicha in the municipality of Völs. Very subtle on the palate with fine saline acidity, fresh fruit and a long-lasting finish. If you can call one of the 2,000 bottles of this vintage your own, you can count yourself lucky! It was 1988 when Bruno and Brigitte Widmer ventured a bold dream that would change the Tuscan wine world forever. Their Il Blu – named after the timeless blue label with orange capsule – became the icon of an entire generation of Supertuscans, a manifesto of modernity in the midst of centuries-old traditions. Today, after more than three decades of perfection, the organically certified Il Blu 2022 epitomises Barbara Widmer's visionary continuity. What once began as a Sangiovese-dominated cuvée has developed into an 80% Merlot blend with 10% each of Sangiovese and Cabernet Sauvignon thanks to the ever-growing complexity of the Merlot vines from Radda, now over thirty years old. Only the finest, hand-picked grapes for this exceptional wine come from the two Chianti estates in Castellina and Radda. The clay and galestro soils at an altitude of 230 to 400 metres, characterised by a continental climate with hot summers and cold winters, give the grapes their characteristic intensity. The vinification follows a ritual of precision: each parcel, each grape variety matures individually for 18 months in French barriques – two thirds new, one third used barrels. Only then is the final blend made, followed by three months of refinement in uncoated concrete tanks and at least one year of ageing in the bottle.

The vineyards of the Löwengang estate in Margreid have been owned by the Lageder family since 1934. Here, on the rubble cone of ancient dolomite rock below steep cliffs, grape varieties such as Carménère and Cabernet find ideal conditions in the mild climate of the valley.
