Sondraie, from which the wine takes its name, is a large plateau from Aurelia to Bellaria in the north of the appellation and one of the best sites for Cabernet in Bolgheri. The Oenologist Luca d'Attoma is considered one of the best interpreters of Cabernet Franc in Italy and his wines are always a clear buy. Bright violet colour. The nose is leafy, with dark chocolate and a characteristic aroma of coffee powder, plus blueberry, raspberry, black cherry and undergrowth. On 11 September 2001 – the day that changed the world – luca Sanjust planted 5,000 Cabernet Sauvignon vines on half a hectare of natural terraces, directly below the medieval watchtower of Galatrona. "Campo Lusso" – the luxury field – is what the local farmers have called this place at an altitude of 450 to 500 metres, surrounded by the pristine forests of the Chianti hills. A place of such beauty and favourable climate that it really was a luxury. Here, where calcareous slate mixes with marl and sandstone, Cabernet Sauvignon finds the mineral complexity that distinguishes it from the usual interpretations of this Bordeaux grape variety. The Gobelet cultivation – that ancient bush form – forces the vines to reach the lowest concentrations, while the forests protect them from the cool down winds and the morning sun dries everything quickly.

The Riserva "Tenuta Belguardo" is the flagship of the winery and an expression of Maremma in its modern, elegant form. It is based on Cabernet Sauvignon with a proportion of Cabernet Franc and reflects the Mediterranean vigour of the region as well as the cool precision of the nearby hills. The vines grow on barren limestone and sandy soils facing south-west, just a few kilometres from the Tyrrhenian Sea. The 2019 vintage is considered one of the most balanced of the last decade: a cool spring slightly delayed budbreak, followed by a warm but not overheated summer with regular breezes. The long, sunny September days with clear day-night differences produced grapes with perfect phenolic ripeness and fresh acidity. After selective manual harvesting, fermentation took place in stainless steel with a long maceration period, after which the wine matured for 18 months in French barriques and tonneaux.

The single-varietal Cabernet Sauvignon Toren is the only red cru from Tiefenbrunner's rare Vigna line and comes from a 0.6 ha micro-location with clay and limestone gravel soils: sparkling garnet red with a slight violet tinge. Very intense and appealing nose, with aromas of cassis, blackberry, tobacco and mint. Rich, concise fruit on the palate, mountains of cassis and cranberries, juicy and dense, builds beautifully with ripe tannins, long final. The name suffix "Secundo" was chosen for this vintage as there was unfortunately only a tiny harvest in 2021 and, unlike its predecessors, the wine is characterised by more finesse and elegance than the usual unbridled power and opulence. 1997 saw the birth of Bradisismo, named after the geological event that led to the formation of the Colli Berici. It is a successful symbiosis of the intense, concentrated flavour of ripe Cabernet cherries and the lively, spicy notes of Carménère. With its bouquet of small dark berries, spices, pepper and chocolate, it is a wonderfully inexpensive alternative to the great Bordeaux blends or Supertuscans. In the quiet of 2019, Paolo De Marchi's decades-long vision of Cabernet Sauvignon as an authentic terroir expression of the Tuscan soul came to fruition. After more than forty years of tireless viticultural revolution, the maestro proved once again that international grape varieties do not become commonplace wines on the Galestro and Alberese soils of Isole e Olena, but express their new home in every drop. Only 10,000 0.75-litre bottles and 240 magnums were produced from the south-west-facing vineyards at altitudes between 350 and 400 metres. The 2019 benefits from an almost ideal vintage: mild winters, balanced rainfall in spring and a classically dry Tuscan summer produced grapes of exceptional concentration and elegance. 24 months in French barriques, forty per cent of them new, followed by three years of bottle ageing – this patience creates a wine of impressive complexity.

Since Guidalberto has been vinified from its own grapes, most of which also grow in the Sassicaia DOC monopoly position, San Guido's "second wine" has grown beyond itself. Spicy, earthy bouquet with hints of tobacco, clove and lavender, dense and juicy on the palate with fresh red and black berry fruit.
