Anyone who understands Ribolla Gialla understands Friuli. The variety is old, unique and uncompromising – it gives the best of itself on poor soils and does not forgive any laziness in the cellar. It is no coincidence that the small vineyard around the archbishop's castle in Capriva del Friuli is still home to Ribolla Gialla today: as a silent commitment to the regional identity of the house. The soils of the Schiopetto vineyards – flysch, called "Ponca" in Friulian, from marine sediments of Eocene origin – are the ideal terrain: poor, stony, draining. The vine has to fight, and this fight shapes the character. Harvest at the end of September, fermentation in steel at a controlled temperature, short ageing in steel – the technique takes a back seat, the fruit takes centre stage.

2023 was a year of contrasts in Friuli: after a changeable spring, a warm summer with sporadic rainfall and a cool, dry September made for exceptionally well-balanced grapes. These conditions particularly favoured the late-ripening Ribolla Gialla – which is clearly noticeable in this cru. The wine comes from the historic Zuc di Volpe vineyard – a hill with old vines, clayey marl soils and a striking south-east exposure. Maturation in stainless steel with prolonged ageing on fine lees preserves the varietal typicity and at the same time gives the wine depth and suppleness.

2023 in Friuli was characterised by a cooler, changeable spring and a summer that was warm but not extremely dry. As in the previous year, the wine comes from the single vineyard ColdeBliss, whose limestone-rich soil and hillside location allow for a particularly clear, mineral profile.

Elegance from ancient roots
Ribolla Gialla is one of the oldest white wine varieties in Italy and also one of the most exciting rediscoveries of the last decade. Its history dates back to the 13th century, when it was first mentioned in documents from the Collio. In the Venetian Republic, it was considered a coveted commodity. Its name is probably derived from the old Italian word "rebula", which alludes to its high sugar content in the past and the associated tendency to ferment ("ribollire" – to boil).
Despite this long tradition, Ribolla Gialla led a shadowy existence for a long time until a new generation of Friulian winemakers recognised its potential. Today, it is produced both as a fresh, reductive white wine and as a macerated orange wine – both with impressive individuality.
Friuli and the power of the Ponca
The cradle of Ribolla Gialla lies in Friuli-Venezia Giulia, particularly in the Collio Goriziano and the hills of the Colli Orientali del Friuli. Here it finds soils of marl and sandstone, known in the region as "Ponca" – a terroir that gives the grape variety its characteristic minerality and precision. The climate also plays a decisive role: the proximity to the Adriatic Sea ensures mild temperatures, while cool air currents from the Julian Alps ensure freshness and slow ripening. In addition to Italy, Ribolla Gialla is also cultivated to a lesser extent in neighbouring Slovenia, where it is known as "Rebula". Historically, there was also some distribution on the Aegean islands, where it occasionally appeared under the name Robola, although there is no genetic similarity there.
Stylistics between freshness and depth
Typical of Ribolla Gialla is its light yellow colour with greenish reflections, a restrained but delicate aroma spectrum with notes of citrus, white peach, apple peel and dried flowers. Good examples show a precise, almost salty minerality, taut acidity and a dry, taut mouthfeel. Ribolla Gialla shines with clarity and lightness, especially when vinified reductively – a wine of character without volume. If, on the other hand, the grape is macerated – i.e. fermented on the skins like a red wine – structured orange wines with tannins, depth and a completely different spectrum of flavours are created. This range not only makes it a style icon of the Friulian wine world, but also a symbol of the joy of experimentation and a return to origins.
Strong names, clear handwriting
One of the most renowned producers is Gravner, which ferments the variety in Georgian amphorae and has thus set international standards in the field of natural wines. His wines enjoy cult status not only in top gastronomy. Producers such as Livio Felluga and La Tunella impress with fresh, precisely matured white wines that perfectly reflect the typical profile of the variety. And Paolo Meroi (Meroi Davino), together with his friend Enzo Pontoni (Miani), produces a Ribolla Gialla every year that sets standards in terms of complexity and richness.
Ribolla Gialla invites you to the table
Ribolla Gialla harmonises perfectly with seafood, raw fish (carpaccio, crudo), young goat's cheese or vegetable dishes with fresh herbs. Its pronounced acidity and mineral tension make it the ideal partner for light Mediterranean cuisine. Macerated versions can also be more hearty: mature cheese, mushroom dishes or lamb are conceivable partners here. Ideal drinking temperature: 10-12 °C (reductive ageing), 14-15 °C (macerated).
Statement from a pioneer
"Ribolla Gialla is like a summer's day in Friuli – quiet, clear and never banal", Mario Schiopetto, who was a pioneer of this region throughout his life, once said. The fact that this quiet variety is now one of the loudest ambassadors of Friulian viticulture is due not only to its versatility, but also to the courage of winegrowers to give it a stage again.
