The namesake of the winery – and the wine. Pandolfo Malatesta, the bold 15th century general whose portrait by Piero della Francesca now hangs in the Louvre, once lived on this estate. The Sangiovese vines stand at an altitude of 150 to 250 metres, characterised by brown limestone soils, planted in 1999 with 4,500 vines per hectare. After 14 days of maceration, 70% of the wine is matured in stainless steel and 30% in large Slavonian oak barrels – one step more complex than the Federico, but not yet the Riserva.

A real rarity: Ebnerhof is home to the southernmost Grüner-Veltliner vineyards in South Tyrol. What is mainstream in Austria is exclusive in the Isarco Valley – the grape variety has felt at home here for generations, but only a few winegrowers dare to try their hand at it. The Unterthiner family cultivates this Austrian legend on mineral-rich, gravelly soils at an altitude of 500 to 550 metres, where the special soil conditions give the wine its unmistakable signature. After gentle processing, the must ferments at a controlled temperature in stainless steel tanks, after which the wine matures on the fine lees – partly in small wooden barrels –which gives it additional depth.

Nerello Mascalese is known as the protagonist of the elegant Etna red wines – but as a rosato, this noble grape variety has a fascination all of its own. Benanti vinifies it as a single variety from the south-eastern slope of the volcano, where the vines are rooted in mineral-rich volcanic sands at an altitude of 500 to 700 metres. The grapes are harvested by hand at the beginning of October from vines on trellises that are on average 25 years old. After twelve hours of cold maceration, the grapes are gently pressed; only 65% of the must is transferred to the stainless steel tank. Ten days of fermentation at a controlled temperature with the winery's own Etna yeast, followed by maturation on the fine lees and two to three months of rest in the bottle.

Ca' Brione is Nino Negri's top white wine and was first produced in 1986. The geological origins of the soil date back to the time when the African and European plates collided to form the Alps. It has a soft, almost creamy texture and juicy acids that keep the balance, while ripe black fruits and minerals move effortlessly across the palate. San Sebastiano. A small church south-west of Monforte d'Alba, surrounded by vineyards that flow gently down to the only natural lake in the Langhe. "Bricco Lago" – the hill by the lake. Here, on clay and limestone soils, in an area of unrivalled biodiversity, the Nebbiolo vines that produce Lucas and Elena's "Baby Barolo" take root. Plots planted in 1969 and 1995 – old vines that give depth and complexity. Monforte's ferrous character, its reddish colour, its spicy nose – can all be found here. However, Luca deliberately vinifies differently to his upcoming Barolos. Not whole-cluster fermentation, but whole berries – to avoid excessive vigour and preserve finesse. Five days of cold maceration, then 21 days of simple, traditional, non-invasive fermentation with minimal pumping over. After fermentation, the grape skins remain submerged in the wine for another five days to gently extract further flavours and silky tannins – an innovative technique for more complexity without bitterness. Spontaneous malolactic fermentation. Matured for one year in small barrels, then bottled in autumn.

Sigmund Freud defined the "id" as that part of the psyche that only obeys a single principle: lust. Unbridled, unregulated, beyond space and time. When Gianfranco Fino gave his wine this name, it was not marketing – it was a manifesto. In 2004, the former olive consultant bought his first vineyard: just 1.3 hectares near Manduria, planted with Primitivo vines over fifty years old in traditional Alberello cultivation. What began as an experiment became a revolution. Six years later, Fino stood on the stage of the Gambero Rosso and received the "Winemaker of the Year" award – the first ever winemaker from central or southern Italy. In a row with northern Italian legends such as Josko Gravner and Romano Dal Forno.

Venice, 1967: Charles de Gaulle and his wife Yvonne are guests at the Hotel Gritti, invited to the Biennale. A red wine is served at the state dinner, which the president considers to be a great Bordeaux – and publicly praises. When the sommelier reveals that it is a Venegazzù from Montello, just fifty kilometres away, the surprise is perfect. Conte Piero Loredan, descendant of the Venetian Doge Leonardo Loredan, then commissioned the artist Tono Zancanaro to design two labels: Dionysus with the dedication "des roses pour Madame" for the president's wife, the goddess of wine with "...et pour Monsieur la Bombe" for de Gaulle himself. The Capo di Stato was born – a wine for heads of state. To this day, bottles are sent to the Élysée Palace every time a new French president is elected.

The "Golden Basin" – cultivated since 1490, planted with Merlot and Cabernet for almost 400 years – became Motta's stage in 1992. He experimented with Chianti Classico for ten years, then the break: he left the Consorzio because the rules stood in the way of his vision. "I wasn't really happy with the result after ten years of work," he explained laconically. What followed was pure consistency – and, since 2008, a partnership with Stéphane Derenoncourt, perhaps the most influential consultant on the right bank of Bordeaux.
