Silvia Milocco Nonino, Antonio's wife and from the third generation of the distillery family, lost her husband in the war. The only wealth she had for the economic survival of her family was the pomace. She set to work with determination and learnt distilling in the early 1940s. Before she became Italy's very first female master distiller, she worked as a cook in the family pub. Her botanical knowledge was a great advantage when creating her first liqueur. She wanted to express her Friulian homeland with her products: pure, authentic and unadulterated. She therefore created an aperitif from botanicals, which she called "Aperitivo Bianco".

In memory of grandfather Antonio, the Nonino family celebrates a return to its origins with Amaro Nonino Quintessentia by creating a Riserva for the first time in 2021, which undergoes more than 24 months of natural ageing in oak barriques and small casks. Antonio Nonino, the third generation of the distiller family, used to store Amaro Carnia in small wooden barrels; steel was prohibitively expensive at the time. Through contact with the oak, the liqueur was enriched with new notes and aromas. Although there are no clear regulations for the maturation of liqueurs, in line with the Nonino philosophy, maturation takes place in the dedicated cellar, sealed and under constant supervision by the customs and monopoly office.

ÙE – is what the grape is called in Friuli. And that is precisely the difference: while grappa is made from the pomace, Nonino distils the whole fruit for the ÙE – peel, pulp and juice together. The result combines the elegance of a brandy with the character of grappa. On 27 November 1984, the Nonino family created this new category and obtained ministerial approval. Today, distillers all over the world follow their model. For Uvabianca, they choose three aromatic white grape varieties: Moscato, Malvasia and Ribolla. Each is fermented separately and distilled in Benito's copper steam stills; the three distillates are only combined after maturation.

Pirus – the Latin name of the pear. And when Nonino gives a fruit brandy this name, it says it all: it's about the essence of the fruit, not its disguise. Williams pears from South Tyrol and the Vinschgau Valley, harvested when perfectly ripe, form the basis. After being de-stemmed and cleaned, they are cut, mashed and fermented in stainless steel for around four weeks in the absence of air. Distillation takes place slowly in Benito's copper steam stills, with careful separation of the first and last run. Six to twelve months of resting in stainless steel rounds off the distillate without overpowering the fruit character.

One grape variety bears the name of its creator: in 1882, Hermann Müller crossed Riesling Renano with Madeleine Royale in Thurgau, Switzerland. The globetrotter only found his true home in the Alps – nowhere does Müller Thurgau thrive better than in the Val di Cembra, where terraced steep slopes between 500 and 800 metres above sea level combine porphyry soils with extreme day-night fluctuations. It is precisely these grapes that Nonino chooses for one of its rarest cru grape brandies. Unlike grappa, the whole fruit is distilled here – peel, pulp and juice together – using the method that Benito and Giannola Nonino invented in 1984 and christened ÙE: Friulian for grape. Fermentation takes place anaerobically in stainless steel, distillation slowly in copper steam stills.

The same pear, a different way. What happens when Il Pirus is not left to rest in stainless steel, but instead aged in French oak? The experiment began on 7 January 2016: Pear Acquavite made from selected Williams went into Limousin barrique no. 3062, sealed in maturation cellar no. 5 under the supervision of the customs authorities. Two years later, on 22 May 2018, the seal was broken – 181 Liters of pure alcohol, enough for just 828 numbered bottles. Crystalline clarity has become intense amber.

Moscato Giallo was one of the first grape varieties chosen by Nonino for its exclusive cru line of grape brandy – and for good reason. This golden yellow variety of the Muscat family has an aromatic potential that comes to full fruition in the distillate. The grapes come from Besenello in the Lagrein Valley, the southern tip of Trentino, where the Vallagarina combines an Alpine climate with Mediterranean influences. Harvested at perfect ripeness and processed immediately, they undergo the ÙE method: the skin, pulp and juice are distilled together, slowly, in Benito's copper steam stills.

Grappa is no less valuable than cognac or brandy and certainly not a "peasant drink" - the Nonino family has proven this very successfully. For around 120 years, they have dedicated themselves to the art of distilling traditional spirits in Friuli. Founded by Orazio Nonino, the company exclusively bottles grappas and distillates of uncompromising quality, distilled from fresh raw materials using artisanal methods in its own discontinuous steam stills in Ronchi di Percoto and containing no added flavourings or caramel.
From Cinderella to Queen.
Just a few decades ago, grappa was considered a simple product. Today, it is the distillate that epitomises excellence in distillation worldwide. Benito and Giannola Nonino are regarded as pioneers of high-quality grappa. The couple founded the enormous success of the distillery with innovative production methods. In 1973, they launched Monovitigno Picolit, the first grape marc spirit distilled from a single and rare grape variety. The family thus revolutionised the presentation of grappa in Italy and worldwide. Another milestone: in 1984, Nonino distilled whole grapes instead of pomace for the first time, thus creating grape brandy.
Wide range of manufactured products.
For production, the Nonino family still uses fresh, must-rich press residue from mostly very old grape varieties that grow in their own vineyards, some of which were already threatened with extinction. The range includes eight single-varietal Grappe Monovitigno alone, but the white Picolit grape is the "queen". The five distilleries of the Nonino distillery are each equipped with twelve discontinuous steam stills. The grappas, which are aged in stainless steel containers as well as in more than 1,800 small oak, former sherry and other wooden barrels, are bottled in high-quality glass containers after mostly long natural maturation without the addition of colouring agents and then lovingly packaged. Nonino controls every step of the production process - from the vine to distribution.
A company in female hands.
Today, three women are at the helm of the northern Italian family business: Giannola and Benito's daughters Elisabetta, Cristina and Antonella. The three sisters grew up among grapes, stills and barriques, as their mother took them everywhere with her: to winemakers, customers and into the production rooms characterised by the overwhelming smell of marc. Even before the death of Benito Nonino (†2024), the passionately developed life's work was in the best of hands. The unshakeable foundation of this distillery will continue to delight connoisseurs all over the world with grappa of the highest quality for generations to come.
Excellent qualities, world-renowned and appreciated.
In 2003, the Nonino distillery was honoured by President Carlo Azeglio Ciampi with the Premio Leonardo Qualità Italia "as the true ambassador for Italian grappa worldwide". A year earlier, the distillery had already been awarded the "Oscar del Vino" by the Italian Sommelier Association. Even today, Nonino's Picolit is the only grappa among the world's 16 best distillates in the Spirit Journal's "Hall of Fame".
In January 2020, Nonino received a special honour at the 20th Wine Enthusiast Wine Star Awards. The distillery from Percoto was the first Italian distillery ever and the only grappa producer to receive the "Spirit Brand / Distiller of the Year 2019" award. Kara Newman, the distillate expert from the US magazine Wine Enthusiast, explained the choice as follows: "Even though the Nonino distillery was founded in 1897, its story really begins in the 1970s, when Benito Nonino and his wife Giannola started producing high-quality single-varietal Monovitigno grappas. It was Giannola in particular who helped to change the brittle and negative image of grappa. As she says herself, her aim was to transform grappa from a Cinderella into a queen, with energy, courage and a revolutionary vision. She proved her ability to redesign a traditional distillate for modern times - this is simply the best of Made in Italy.
