Clelia Romano started in Arianello di Lapio in 1994, with a few hectares and one conviction: that Fiano on these volcanic limestone marl soils, between 480 and 620 metres, in the Apennine hills of Irpinia, can be one of the great white wines of Italy. The critics proved her right – quickly and unequivocally. Today she runs the estate together with her daughter Carmela. The wine that bears the name of the founder is the commitment of both generations.

Before Sagrantino was pressed dry, it was a festive wine. A monastery wine that graced the tables of the Franciscans of Montefalco at Christmas and Easter – made from semi-dried berries, sweet and concentrated, blessed by the name itself: sacer = holy. Arnaldo Caprai still makes this oldest form of Sagrantino today – not as a nostalgia, but as a conviction that this style is perhaps the most intimate language of the grape variety. The grapes for the Passito are harvested by hand in October, the best grapes are carefully selected, then stored on wooden grates – for a good two months until the grapes have lost water and gained depth. What follows: 15 days of fermentation, 30 days of maceration on the skins, 15 months in French oak barrels, then at least one year in the bottle. From 7,000 vines per hectare, on the calcareous-clay soils of the Val di Maggio, with a yield that is limited from the outset. The 2019 vintage was one of Sagrantino's best years: a cool, slow autumn after a hot summer – for a late-ripening variety like Sagrantino, the constellation that winegrowers are waiting for. Tannins and acidity found their balance, the aromatic precision is remarkable.

In the quiet hollow above Söll, where the Gewürztraminer vines escape the warm south wind from Lake Garda, a mystery of rare beauty takes place every year. Here, protected in this natural arena between 400 and 500 metres above sea level, the eagerly awaited Botrytis cinerea – the noble rot – finds its perfect conditions. While other vineyards have long since been emptied, the Terminum grapes remain on the vine until the first months of winter. December is their time of perfection, when they have become golden treasure troves of pure flavour, marked and concentrated by botrytis. Each berry is selected individually, each bearing the promise of exceptional complexity. Twelve hours of maceration, gentle pressing at a maximum of 1.8 bar, then the must is transferred to French barriques. Fermentation begins there, which lasts six to nine months. A further seven to ten months of ageing in wood, followed by at least three months of bottle ageing complete the deceleration process.

More than a hundred years ago, a white bull named Desiderio lived on the Capezzine farm in Avignonesi. He was the largest bull in Tuscany at the time – and what's more, he is one of the recognised ancestors of the Chianina breed, the noble breed of cattle from which the Bistecca Fiorentina is cut. Anyone enjoying a Florentine-style T-bone steak today is likely to have a little bit of Desiderio's DNA on their plate. It was therefore a natural choice for Avignonesi to name its most powerful red wine after him. The label shows him – and changes with every vintage. Tramin, a small village in the South Tyrolean lowlands, is considered the original home of this grape variety, whose aromatic power has fascinated and polarised people in equal measure for centuries. Those who like it, love it. Those who know it know that in the wrong hands it becomes a caricature. At the Cantina Terlan, it is something else. The Lunare is the pinnacle of this interpretation. Grown at 300–400 metres in south-west-facing porphyry vineyards, where downdraughts and pronounced day-night temperature differences give Gewürztraminer exactly what it needs: aromatic precision instead of perfumed richness. The name hints at what the wine fulfils – something noctilucent, cool, unreal and clear.

Born in the Contrada Arcurìa near Passopisciaro – around 650 metres high on the north-eastern flank of Mount Etna – this Nerello Mascalese carries the clarity of the volcanic slopes in every nuance. The 2020 vintage was the year of deep balance. Warm days were tempered by cooling night-time temperatures, allowing the grapes to achieve healthy ripeness with a lean fruit structure. The harvest took place late, carefully and in small batches. The wine is fermented traditionally and matured for around 24 months in large wooden barrels.

On the hill of Rosazzo, where Augustinian monks were already making wine in the year 1000, lies a vineyard that understands Sauvignon like few others in Italy. Ronco del Gnemiz treats every parcel like a Grand Cru – not as a marketing slogan, but as a working philosophy. Serena Palazzolo and her husband Christian Patat, an Oenologist with a steady hand and a clear eye, have created something here that has become rare: wines that let their place speak for itself. Salici comes from a vineyard planted in 1997 on the lower slope, where lighter soils give the Sauvignon a different voice than on the heavy Ponca marls further up. The grapes are pressed as whole bunches, then the must ferments exclusively in wood – partly in barriques, partly in Liters barrels. No malolactic fermentation, no bâtonnage. Christian Patat leaves the wine alone for twelve months until it shows what it can do on its own.

Initially, the wines from Etna led a rather shadowy existence; the great potential of the wines, some of which were produced in very small quantities, usually only delighted connoisseurs. Even today, many of the winegrowers are still so-called insider tips, as the wines produced in small quantities hardly appear on the international markets, or only in very homeopathic quantities. Like us here at SUPERIORE.DE, Angelo Gaja recognised the incomparable elegance and class, the minerality and the purist style of the Nerello and Carricante grapes early on and therefore entered into a joint venture with Alberto Graci a few years ago.

This red classic from Montepulciano already bears its claim in its name: nobile. No other wine in Italy has this adjective written into its specifications – and hardly any other producer has honoured it as consistently in recent decades as Federico Carletti and his Poliziano winery. Founded in 1961 by father Dino, today under Federico's leadership and long since anchored in the next generation – with Francesco and Maria Stella, who have been helping to shape the future since 2019 and 2021. Poliziano has been certified organic since the 2021 harvest – not a marketing decision, but the logical conclusion of decades of work without chemical weedkillers and insecticides. Prugnolo Gentile, the local variety of Sangiovese, grows on clay and limestone soils between 300 and 450 metres above sea level. Hand-picked, careful selection in the vineyard and in the cellar, fermentation with indigenous yeasts in conical concrete vats – minimum intervention, maximum expression. Maturation in large barrels and tonneaux: the wood frames, it does not dominate.

Sometimes the oldest things are hidden. While the Chardonnay Sol, the founding wine from 1981, tells the story of Ronco del Gnemiz, the Corrado di Manzano has even deeper roots: its vines were planted between the two world wars, at a time when no one could have guessed that one of the most important Chardonnay vineyards in the Colli Orientali would one day be created here. The name honours a family member, as is the tradition at Ronco del Gnemiz: Dottore Palazzolo, Iris, now Corrado. The location in Manzano, exposed to the south-east, differs from the headquarters in Rosazzo. The soils are rich in organic matter and, despite their biblical age, the vines show enviable vigour year after year – year after year. Christian Patat takes a different approach here than with Sol or Ronco Basso: the must matures for ten months in stainless steel and wooden barrels, not exclusively in barriques.
