A classic from the Collio, interpreted with aplomb: Livio Felluga's Pinot Grigio impresses with its depth, precision and expression of origin. The vines are rooted in the famous "Flysch di Cormòns" - calcareous marl and sandstone formations that give the wine its subtle minerality. The colour in the glass is a bright straw yellow with golden reflections. The aroma is fine and complex: white peaches, ripe pears, some citrus zest, complemented by floral notes and a hint of roasted hazelnut. Dry, smooth and structured on the palate, with well-integrated acidity and elegant length. For decades, the Porer vineyard on the Margreider Schuttkegel has been the source of Lageder's most refined interpretation of Pinot Grigio. Grapes of exceptional complexity ripen between 230 and 240 metres, where stony, sandy and highly calcareous soil with dramatic day-night temperature fluctuations creates a unique microclimate. The organic cultivation of this single vineyard follows strict principles of sustainability. The secret of Porer lies in its three-part vinification: one third is pressed immediately, another part remains on the skins for 15 hours, while the last component macerates with stems and skins for up to eight months. This orchestrated composition of different textures gives the wine its characteristic tension. Six months of ageing on the fine lees in stainless steel round off the complex flavour profile.

The ColBajé vineyard above Cividale produces wines with a clear structure and delicate tension – including this expressive Pinot Grigio. The vines grow on calcareous soils and benefit from strong temperature differences between day and night. Selective harvest and careful ageing in stainless steel preserve the freshness and depth of the fruit. Vinification was carried out using the traditional Ramato method, in which the must macerates on the skins for a short time – this gives the wine its characteristic, delicate copper colour.

Schiopetto has been producing Pinot Grigio since 1968 – long before it became Italy's best-selling mass-produced white wine (unfortunately in many other regions) – and the Rotolo family has never forgotten what it can really do: Depth, juiciness, mineral tension. On the Ponca hills of Capriva del Friuli, in marly soils of Eocene origin, the variety finds a soil that does not allow it to be arbitrary. Gentle pressing, short sulphur-free decanting, fermentation in steel at a controlled temperature – eight months on the lees. No wood, no detours, everything focussed on the Ponca.

A Pinot Grigio with ambition and from one of the estate's best vineyards. The wine comes from the eponymous Zuc di Volpe hill in Togliano, whose clay and limestone soils, combined with consistent manual harvesting and low yields, provide the basis for this cru-worthy Pinot Grigio. Matured in stainless steel with extended maturation on the fine lees, the wine is light golden yellow in colour with a slightly coppery sheen in the glass – a subtle hint of the natural pigmentation of the grape variety. Yellow pear, some ripe quince, white almonds and a hint of hay flower on the nose. Surprisingly structured on the palate, with mineral tension, good depth and a fine salty vein. A delicate phenolic note on the finish gives the wine grip and length.

"Giatl" means "small plot of land" in the local dialect – and this name carries history. The ten-hectare single vineyard in the Kurtinig valley floor is one of the most exceptional terroirs for Pinot Grigio in the South Tyrolean lowlands. On sandy alluvial soils with calcareous gravel, vines grafted onto low-growing rootstock using the Guyot system thrive here under ideal conditions. The special microclimate of this sun trap is characterised by two contrasting wind systems: The warm "Ora" blows northwards from Lake Garda in the afternoon and moderates the heat of the day, while cool downslope winds from the Dolomites provide cooling at night. These extreme temperature fluctuations enable long, slow ripening phases with perfect acidity retention and flavour concentration. After manual harvesting and destemming, a short cold maceration is carried out to emphasise the fruitiness. The gently pressed grapes are clarified by natural sedimentation before alcoholic fermentation takes place in small and large French oak barrels (12 months) and in stainless steel tanks (6 months). The ageing on the lees gives the wine valuable complexity and depth, while further months of bottle ageing round off the profile.

Innovation often means leaving old paths and exploring completely new ones. Fuoripista – which means "off the beaten track" – is Elisabetta Foradori's most radical response to conventional Pinot Grigio ideas. What began in 2016 as an experiment with biodynamic winemaker Marco Devigili has evolved into a redefinition of what a white wine can be. Just two hectares on the Campo Rotaliano provide the grapes for this extraordinary project. On the typical alluvial soils of gravel and sand, pergola-trained Pinot Grigio vines thrive, whose fruit takes an unusual path. After being harvested by hand, the de-stemmed berries go straight into Spanish tinajas – the egg-shaped clay amphorae that Elisabetta favours for her revolutionary vinification. The impossible happens here: The grapes remain in contact with their skins for eight months, a process that gives the wine its amber-golden colour and structural complexity.
