ÙE – is what the grape is called in Friuli. And that is precisely the difference: while grappa is made from the pomace, Nonino distils the whole fruit for the ÙE – peel, pulp and juice together. The result combines the elegance of a brandy with the character of grappa. On 27 November 1984, the Nonino family created this new category and obtained ministerial approval. Today, distillers all over the world follow their model. For Uvabianca, they choose three aromatic white grape varieties: Moscato, Malvasia and Ribolla. Each is fermented separately and distilled in Benito's copper steam stills; the three distillates are only combined after maturation.

Pirus – the Latin name of the pear. And when Nonino gives a fruit brandy this name, it says it all: it's about the essence of the fruit, not its disguise. Williams pears from South Tyrol and the Vinschgau Valley, harvested when perfectly ripe, form the basis. After being de-stemmed and cleaned, they are cut, mashed and fermented in stainless steel for around four weeks in the absence of air. Distillation takes place slowly in Benito's copper steam stills, with careful separation of the first and last run. Six to twelve months of resting in stainless steel rounds off the distillate without overpowering the fruit character.

One grape variety bears the name of its creator: in 1882, Hermann Müller crossed Riesling Renano with Madeleine Royale in Thurgau, Switzerland. The globetrotter only found his true home in the Alps – nowhere does Müller Thurgau thrive better than in the Val di Cembra, where terraced steep slopes between 500 and 800 metres above sea level combine porphyry soils with extreme day-night fluctuations. It is precisely these grapes that Nonino chooses for one of its rarest cru grape brandies. Unlike grappa, the whole fruit is distilled here – peel, pulp and juice together – using the method that Benito and Giannola Nonino invented in 1984 and christened ÙE: Friulian for grape. Fermentation takes place anaerobically in stainless steel, distillation slowly in copper steam stills.

The same pear, a different way. What happens when Il Pirus is not left to rest in stainless steel, but instead aged in French oak? The experiment began on 7 January 2016: Pear Acquavite made from selected Williams went into Limousin barrique no. 3062, sealed in maturation cellar no. 5 under the supervision of the customs authorities. Two years later, on 22 May 2018, the seal was broken – 181 Liters of pure alcohol, enough for just 828 numbered bottles. Crystalline clarity has become intense amber.

This golden yellow variety of the Muscat family has an aromatic potential that comes to full fruition in the distillate. The grapes come from Besenello in the Lagrein Valley, the southern tip of Trentino, where the Vallagarina combines an Alpine climate with Mediterranean influences. Of all the grapes that Nonino distils for its cru line, none is as closely associated with the family as Fragolino. It grows on the company's own vineyard in Buttrio – the 40-hectare experimental garden in the heart of Friuli, which the Noninos planted with almost forgotten indigenous grape varieties. The name reveals the secret: Fragola means strawberry. This rare hybrid vine carries the flavour of wild wild strawberries – a flavour that is banned for wine production in the EU, but is fully justified in distillates. What is not allowed in wine becomes a revelation in ÙE. The whole grape – skin, pulp and juice – passes through Benito's copper steam still.

Whether it really comes from the South Tyrolean village of Tramin or is actually older – its aromatic signature is recognised worldwide. It is one of the founding members of the Nonino cru line: Moscato Giallo, Verduzzo and Traminer were the first to be selected by Benito and Giannola for the ÙE experiment. The grapes grow in Cà Viola in Friuli, at an altitude of 500 metres, where cool nights concentrate the aromas. Italian distillates are more than just spirits – they are cultural history, craftsmanship and a ritual of enjoyment. At the centre is grappa, probably the country's most characteristic spirit: a distillate made from wine pomace, i.e. the grape skins and seeds left over after pressing. However, it can only be called grappa if the pomace comes from Italy and the grappa is distilled in Italy. And: in Italy, grappa is female.
Its roots go back a long way. It first appeared in records as early as the 15th century; Jesuits and travelling distillers later spread the art of distilling. During the First World War, Italian soldiers – the legendary Kaiserjäger – strengthened their courage with grappa, which became a kind of national treasure. The centres of distilling were and still are Veneto and Friuli. The big names – marzadro, Nonino, Jacopo Poli – still stand for top quality and preserve distilling rights that date back to Maria Theresa.
Modern technology and a focus on single-varietal grape marc have transformed grappa from a farmhouse brandy into a fine spirit. Gently pressed grapes, fast processing and multiple distillation processes now produce pure, aromatic distillates with great variety: from Muscat and Traminer grappa to tart Sangiovese interpretations and powerful specialities made from Brunello and Barolo marc. Grappa white
Classic, unadorned grappa that is bottled directly after distillation. Clear, precise and fully focussed on the character of the grape variety – from floral Muscat to spicy Traminer marc and pithy Sangiovese nuances.
Grappa matured
Refined in wooden barrels, grappa gains depth, flavour and complexity. Ageing in oak, acacia or chestnut imparts notes of vanilla, nuts, honey and spices – ideal for lovers of refined, round distillates.
Grappa flavoured
A playground for creative distillers: flavoured with herbs, roots, fruits or spices. These grappa-based specialities combine clarity with fragrant diversity and are ideal as a digestif or cocktail component.
Liqueurs
Italian liqueurs are made with the help of herbs, fruits or spices, for example. Classics such as Amaro, Bitter, Fernet, Limoncello, Sambuca or the Sardinian Mirto reflect regional traditions: sometimes tart, sometimes sweet, sometimes powerful, sometimes delicate. They enrich cocktails such as Negroni or Spritz and also shine on their own.
Spirits
