In 1973, Benito and Giannola Nonino revolutionised the world of grappa: for the first time, pomace was distilled in a single variety – a concept that is now standard as Monovitigno. Moscato epitomises this principle in its most aromatic form. Fresh, soft vinacce of the Moscato grape from selected growing regions ferment in temperature-controlled stainless steel tanks in the absence of air. The discontinuous distillation in copper steam stills takes place with separation of the first and last run-off – only the centrepiece reaches the bottle. Maturation in stainless steel preserves the freshness and clarity typical of the variety.

ÙE – is what the grape is called in Friuli. And that is precisely the difference: while grappa is made from the pomace, Nonino distils the whole fruit for the ÙE – peel, pulp and juice together. The result combines the elegance of a brandy with the character of grappa. On 27 November 1984, the Nonino family created this new category and obtained ministerial approval. Today, distillers all over the world follow their model. For Uvabianca, they choose three aromatic white grape varieties: Moscato, Malvasia and Ribolla. Each is fermented separately and distilled in Benito's copper steam stills; the three distillates are only combined after maturation.

What remains when the Prosecco goes into the bottle? The Glera marc – aromatic, fresh, full of potential. Nonino recognises this value and transforms it into a grappa that combines the lightness of Prosecco with the depth of barrique ageing. Fresh, destemmed vinacce from selected growing areas are immediately fermented and distilled in Benito's copper steam stills. Then 24 months begin in barriques and small barrels under customs seal – time enough to turn clarity into warm amber with golden reflections. The result is soft and floral: green apple and almond blossom are reminiscent of the original grape, before subtle notes of vanilla and chocolate join in. This rare premium Gin comes from Lake Garda, its name is derived from Luccio, a widespread pike species there. Originally only produced for a bartender friend from the region, the demand increased to such an extent that it was decided to increase the production volume sensitively.

The special thing about London Dry Gin is not only the typical, natural juniper note, but also the strict production specifications. The botanicals (fruits, herbs and spices), which are usually (and also here) top secret, must be added before distillation and artificial flavours have no place in this product. The additional ethanol added must be exclusively of agricultural origin, so that it can rightly be claimed that a London Dry Gin is produced according to a strict purity law.

This artisanal grappa is produced by slow bain-marie distillation using the discontinuous method from selected Glera marcs from the estate's own Prosecco Superiore DOCG production. The pressed marcs are immediately taken to the distillery, where they arrive fragrant and fresh. After maturing in steel tanks, the grappa rests for at least 24 months in barriques made of first-class French oak and acacia wood, where it acquires its beautiful amber hue and great finesse and softness. AnticaCuvée is a fine, very aromatic Riserva. Nonino uses the traditional still for distillation. The inviting, clear amber colour is the result of ageing in small barrels. The cuvée is given a very special flavour by the small but significant addition of young grappa, which matures for a year in Limousin barriques. Fruity, warm, velvety and long-lasting. SUPERIORE.DE

Not matured grappa, not brandy and not fruit brandy, but the best of all of the above - Aquardens Composita is an assemblage of young and matured grappa with old brandy and a fruit brandy. The individual distillates are matured separately and then blended. The cuvée then matures for 12 months in barriques of different types of wood. Elena Penna's (London) Dry Gin carries the soul of the Langhe and combines British gin tradition with Piedmontese botanical finesse. Hand-picked alpine herbs from the Langhe hills and the Maritime Alps – juniper from the Maritime Alps, Langhe thyme, coriander, black elderflower, angelica, wild mint, camomile, cassia bark and organic citrus peel from the Ligurian hills – are distilled over a wood fire in two restored 18th century copper stills. The "one-shot" method uses each botanical only once to capture its aromatic essence in the highest purity. No synthetic flavourings, no essential oils, just natural cold filtration through paper filters, which give the gin a delicate yellow hue. Oltre il Vallo - a brandy that matures for 24 months in oak casks and 6 months in single malt Scotch whisky casks. It combines the Highlands and Monferrato, as the casks come from the oldest and most renowned distilleries in Scotland: Lagavulin, Caol Ila and Mortlach, which wrote the history of the best Scotch whisky.

Grappa Riserva Oltre il di Lidia is a refined blend of the marcs of Piedmont's Barbera and Moscato grapes. DiLidia matures in barrels previously used for Marsala production in the Canelli wineries in Sicily. A tradition from the fifties and sixties, preserved and continued by Lidia Canelles and Paolo Berta.
