In the crypt of a 14th century church, deep beneath the altar of the small San Niccolò chapel, the flagship of Castellare is maturing. Here, where monks once prayed, another act of devotion takes place today – the transformation of grapes into a wine that has awed international critics for over four decades. I Sodi di San Niccolò is more than just a name; it is the essence of Tuscan wine mysticism. "Sodi" – is what the Tuscan farmers called those hard, stony soils that were too heavy for a team of oxen and could only be worked by hand. These barren, calcareous Galestro soils force the vines to fight for every molecule of water and every nutrient. On these inhospitable slopes, which form a natural amphitheatre around the estate, Paolo Panerai cultivated a vision in the 1970s: to create a wine with exclusively indigenous grape varieties that could compete with any international Supertuscan.

Dark, translucent ruby red in the glass, elegant even at first glance. An inviting aroma of red and black fruit flavours, almost a mix of wild berries and sour cherries. And then again that spiciness so typical of Tenuta di Valgiano, herbaceous and mineral, fresh and yet Mediterranean, simply incomparable. Full-bodied on the palate, very juicy, extract-sweet fruit, again accompanied by this mineral flavour. Juicy, deep, with a silky, elegant tannin structure and a wonderfully balanced interplay of fruit and acidity. A wine with finesse and piquancy, length and ageing potential for a good fifteen to twenty years. This wine should be decanted and left to breathe in the carafe for at least one to two hours before drinking. SUPERIORE.DE

Within the walls of history. The Castello di Bolgheri, built in 1796 and thus the oldest winery in Bolgheri, sits enthroned in the heart of the medieval village like a stone witness to great wine culture. While the world of wine underwent its revolutionary transformation around the Castello – sassicaia and Ornellaia wrote their legendary stories –a treasure lay dormant here that only awoke to its true destiny under Count Federico Zileri Dal Verme. The blend of 75% Cabernet Sauvignon, 20% Cabernet Franc and 5% Merlot not only represents the art of blending, but also the philosophy of the house: finesse over power, elegance over opulence. While the best parcels of Cabernet Sauvignon underwent an exceptionally long maceration of 30 days – only possible in exceptional vintages –the wine matured for 20 months in traditional Italian vats and Liters barrels. This choice of large wooden barrels, a deliberate departure from the small barriques of its neighbours, gives the wine the crystalline purity and mineral depth that makes the Castello the "Château Margaux of Bolgheri".

Troy is no ordinary Chardonnay. Rather, it is the archetype of a Chardonnay, as Wolfgang Klotz, managing director of what is probably the most successful winegrowers' cooperative in South Tyrol, sees it. The grapes come from two selected vineyards in Söll, near Tramin. The climate there is not only Mediterranean, but the vegetation is also characterised by rather cold downdraughts at night. Both factors guarantee optimal development of the plants and fruit. The berries are hand-picked one by one, so it is clear to any wine connoisseur that this is an absolutely prestigious project for the co-operative. It is therefore not surprising that only 3,000 bottles of this grape variety are sold in selected specialist shops and top restaurants.

A wine of remarkable aromatic complexity. Amarone aficionados know how many allusions these wines are capable of evoking, and it is not difficult to discern mushrooms, forest undergrowth, truffles, Havana leaves and even wild violets in this wine's aromatic profile, as well as the usual confit cherries and plums. In the mouth, the wine is remarkably concentrated yet elegant, carrying this bundle of allusions effortlessly and seamlessly through the palate. The fine pearly tannins give it support and the concentration of fruit is so great that the acidity almost fades into the background. A dense, polished and stately wine of the highest calibre. Traditionally vinified, its intense ruby red colour, the fruity aroma with spicy and balsamic notes and its gentle start on the palate, which builds furiously, are impressive. The high-class tannin structure rests between the soft components, so that this Brunello from the dream year 2019 simultaneously demonstrates elegance and strength without appearing too modern. Pinot Noir, which originates from France, has been cultivated in South Tyrol since 1850. The best sites, low yields, meticulous care and perfectionism in the cellar guarantee a fine, extremely sensual Pinot Noir with considerable ageing potential. Brilliant ruby-garnet colour. Delicious aromas of small berries, violets, cloves, smoke and vanilla. With age, the aroma gains interesting notes of porcini mushrooms and truffles. The Sottimano winery has five vineyard sites, with the Pajoré site near Treiso having the poorest soil of all. These wines are therefore more elegant and mature. Pajoré is a super-classic, explosive wine, endowed with enormous depth and character. Although it has plenty of breadth and texture, it remains light on its feet. Lavender, mint, liquorice and purple berry fruit are beguiling and wonderfully vibrant in the glass. Pajorè is a spicy, elegant and sweet Nebbiolo that is fine yet covers the mouth well - and we are always impressed by its lovely savoury mouthfeel. SUPERIORE.DE

San Leonardo is the flagship of the winery of the same name and one of the best red wines in Trentino every year. Opulent bouquet with nuances of dark fruit such as blackberry and sour cherry. Delicate notes of spices, leather and tobacco give it a terrific complexity, which is then enhanced on the palate by a harmonious interplay of dark berries and plums, all flanked by clearly contoured tannins. A masterful red with a strong personality that will reach its true greatness after a few more years of bottle ageing and live up to its reputation. SUPERIORE.DE

Grattamacco is a blend of Cabernet Sauvignon, Merlot and Sangiovese, the latter grape variety certainly contributing to the fresh style of this wine. However, the overall picture is only complete when you realise that the vineyards used for this blend are among the best in the appellation. The Grattamacco Bolgheri Rosso Superiore is characterised by its typical aromas of leaves and Mediterranean forest, with subtle flavours of kiwi peel, cassis, paprika and chocolate. Velvety, youthful and firm on the attack, less light than the Alberello, but more tightly woven and of great elegance. Its length is astonishing, great potential! SUPERIORE.DE

1997 saw the birth of Bradisismo, named after the geological event that led to the formation of the Colli Berici. It is a successful symbiosis of the intense, concentrated flavour of ripe Cabernet cherries and the lively, spicy notes of Carménère. With its bouquet of small dark berries, spices, pepper and chocolate, it is a wonderfully inexpensive alternative to the great Bordeaux blends or Supertuscans. On the palate, it has a velvety texture, with a mix of dark fruits, cherries, floral notes and fine tannins that glide seamlessly over the palate. Deep, long finish and very good ageing potential. Terre Brune: A monument to the art of Sardinian viticulture, borne by the year 2020, which wonderfully captured the essence of the island in its balance between heat and night-time equalisation. For Terre Brune, this meant a late harvest accompanied by cool nights. The result: maturity in harmony with freshness, expressive and enriching. Incidentally, the 2020 vintage was a gift of ripeness everywhere in southern Sardinia. Warm spells were balanced out by Atlantic breezes and the grapes remained healthy and aromatic. The late harvest ensured a rich, but never overripe concentration – ideal conditions for a wine with lively acidity and body in harmony.

In the summer of 1983, Elio Altare picked up a chainsaw and sawed up his father's old Slavonian barrels. An act of rebellion, a break with tradition – and the start of a revolution in Barolo. His father disinherited him as a result, but Elio remained true to his path: Burgundian vinification, French barriques, shorter maceration and ageing times. The Langhe traditionalists were horrified. But the wines? They sold immediately. Today, Elio Altare is considered one of the "Barolo Boys", a pioneer of the modern Barolo style – and the Arborina is his flagship.

The roots of this story go deeper than any memory: the vines are over 80 years old and have been bearing silent witness in the warm alluvial soils of Gries for generations. Here, where thirty visionary winegrowers laid the foundations for a legend in 1908, the masterpiece that has long since become the undisputed icon of South Tyrolean winemaking is produced year after year: Taber Lagrein Riserva. It is a wine that epitomises time. Time in the old vines, which at an altitude of just 250 metres transform the extreme temperature fluctuations between hot days and cool nights into pure concentration. Time in the patient manual labour that selects only the finest grapes for this exceptional Riserva. And time for ageing, where after traditional wooden barrel fermentation, a whole year of ageing in French barriques awaits completion.

If there is one thing that Giacomo Neri has mastered 100%, it is harvesting at the optimum ripening time. He knows his estate and his vines better than most and it shows. The fruit for Tenuta Nuova is harvested from a south and south-east facing slope at 250 to 300 metres above sea level. The soils are loose and mixed with gravel, which allows access to air and moisture.

A farewell and a new beginning at the same time. Cepparello 2021 marks Paolo De Marchi's final vintage as master of his life's work before the winery was transferred to the French EPI Group. After more than four decades of tireless work, the maestro from Piedmont completed his testament with this wine – a Sangiovese of paradoxical brilliance that retains an astonishing freshness and elegance despite its powerful fifteen per cent alcohol. The name Cepparello, which originates from the small stream at the highest point of the vineyards, has carried the revolutionary vision of one hundred per cent Sangiovese since 1980. What began as a rebellion against the Chianti Classico regulations – the absurd rule of adding white grapes – developed into an icon of pure Sangiovese expression.

Campo del Drago is a single vineyard of just 1.5 hectares and is located on a high plateau in the Montalcino appellation with a view of the Tyrrhenian Sea. The grapes from here are only vinified separately in the best years for the Brunello of the same name and the result is then eagerly awaited around 5 years later. Dark, concentrated colour with beautiful saturation and density. The bouquet reveals a unique minerality and complexity. The palate is intense, complex and deep. The tannins are present, but remain very elegant thanks to the Sangiovese acidity. Can still mature, but is already irresistible today. SUPERIORE.DE

It was Eugenio Campolmi who, in 1989, plucked up the courage to give his flagship the name of a wild herb that grows on the Tuscan coast. Eugenio Campolmi (†2002) was not originally from the world of wine. He came from a family of restaurateurs and should have taken over his parents' restaurant and trading business. Instead, he and his wife Cinzia Merli took a bold leap into the unknown in 1983. Paleo – a name that stands for unbending identity and the will to achieve any goal. What began as a classic Bordeaux blend found its true destiny in 2001: 100% Cabernet Franc, a revolution in the still young Bolgheri.

The purchase of the Mosconi Cru parcels in Monforte by Pio Boffa is one of the last major decisions taken by the estate – with the aim of complementing the depth of Serralunga (Ornato) with Monforte gravity. Selective hand-picking; separate fermentation in stainless steel with a carefully extended maceration period, malolactic without haste. Classic ageing in large barrels, moderate proportion of French oak as a fine brushstroke of texture. The 2020 vintage fitted in well with the concept: a stable summer, clear nights for ripening and precise harvest – healthy, ripe harvest, polished phenolics and generous, balanced fruit were the result.

Outstanding terroir, terrific grape quality and technical mastery in the cellar have made this one of the most highly prized wines! Beguiling aromas of candied cherry fruit with notes of spice and tobacco. Dense on the palate, very concentrated with fabulous fruit sweetness, subtle acidity and fresh tannins. Montestefano Riserva is exquisite and harmonious from start to finish. Of the Produttori's nine great Riservas, it is the one that best conceals its tannins, as the fruit is intensely fragrant, rich and seductive. For us, it is a synthesis of Montefico, Ovello and Rabajà. Today, Montestefano gives the impression of being relatively accessible, but it will almost certainly go through a few more stages of closure before it fully opens up. The bouquet surprises us with sheer endless complexity and depth. Its silky, polished tannins give an impression of sensual elegance. Crushed meadow flowers, mint, liquorice and dark red cherries are just some of the notes that envelop the deep, long finish. Fabulous! SUPERIORE.DE

For some years now, Riccardo Cotarella's Montiano has been characterised by great freshness and dark, concentrated fruit. In contrast to the vintages of the early 1990s, the wine has become much livelier and more dynamic. And the 2021 vintage brings a new nuance to this characterful Merlot: riper, denser and finer at the same time. The climatic conditions – an early summer temperature rise followed by cooler evening hours – allowed for slow, even ripening with perfect concentration levels. As always, the Montefiascone region delivers mineral-structured fruit and precise floral components.

The "25 Anni" from Caprai has been THE ambassador for Umbria's top wines for many years. It captivates with a beguiling bouquet that combines black fruits with citrus fruits, exotic spices, a hint of oregano, menthol and a hint of cocoa. The texture is more like pure silk, delicately lapping the palate, leaving a satisfying mix of intense dark fruits, minerals and fine-grained tannin. There is so much depth and concentration to work with that even when it finishes youthfully structured and dry, it lingers for well over a minute with notes of redcurrant, sage and dark chocolate. This exceptional Sagrantino is undisputedly not only Caprai's top wine, but also one of Italy's most characterful wines, which, with a little more ageing, is an incredible pleasure and should therefore definitely be aerated for 3-4 hours when young. This exceptional Sangiovese comes exclusively from the historic "Palmina" vineyard – the oldest vines that John Dunkley and Palmina Abbagnano found back in 1971 when they acquired the small estate from the neighbouring Badia a Coltibuono monastery. A hillside vineyard with a low yield, as the purchase contract noted at the time. Since 2010, the grapes from this unique hectare at an altitude of 480 metres have been vinified separately. Today, the 60-year-old Sangiovese vines with their extremely low density of just 3x1 metres yield barely more than one kilogram of grapes per vine, but they are of incomparable concentration and purity.
