A typical Grillo variety from the western half of Sicily, the grapes come from vines on calcareous soil at medium altitude near Salemi. Brilliant straw yellow in the glass with a greenish tinge. The 2024 is clear and juicy on the palate, with well-integrated acidity, a fine extract sweetness, some lime zest and noticeable minerality on the finish. The small, museum-like island of Mozia in the Marsala lagoon is a production site of unrivalled uniqueness. It is a marine ecosystem that has always been linked to the vineyard. The English, who came to Marsala at the beginning of the 19th century and recognised its great potential, initiated the first planting. The vines are cultivated naturally using the Gobelet system with natural irrigation. The grapes are harvested in crates, brought to the mainland in flat-bottomed boats and then transported to the Regaleali winery in air-conditioned lorries to guarantee their aromatic integrity.

These soils of the Monti Iblei at the foot of the small municipality of Chiaramonte Gulfi give the wine an impressive complexity and saltiness.

In Sicily, "Firraru" is not just a profession – it symbolises precision craftsmanship and quiet dignity. The blacksmith who moulds lasting values with patience, fire and strength. Feudo Maccari dedicates its most impressive white wine to this image: a single-varietal Grillo, which, like no other, makes the combination of origin, patience and depth tangible. The name was deliberately chosen because the wine is artisanal, elegant, precise and at the same time uncompromisingly Sicilian. The grapes come from high-altitude plots in the south-east of the island, where the limestone-rich soil and proximity to the sea give the Grillo structure and salty tension. Manual harvesting, gentle pressing and slow fermentation form the basis – the wine then matures for 12 months on the fine lees in Liters French oak tonneaux, with some of the wine also being matured in concrete eggs. Here too, the organic approach is not just a label, but is reflected in the clarity and vitality of the wine.

Grillo in new splendour
Grillo was the base wine for Marsala for a long time. When the liqueur wine market collapsed, winegrowers rediscovered the grape variety's talent for dry still wines from the 1990s onwards. DNA analyses show that Baron Antonio Mendola crossed it with Catarratto and Zibibbo in 1869. Typical flavours are juicy citrus fruit, yellow peach and fennel, supported by a lively acidity and a fine phenolic grip that lends length. A marine note is reminiscent of the surf in the midday heat and makes the Grillo unmistakably Sicilian.
Sea wind and lava stone
The variety feels particularly at home in the west of the island. Coastal locations from Trapani to Marsala offer calcareous tufa soils that buffer the heat of the sun and store minerals at the same time. Cooler varieties with white blossom and lemon zest ripen on the higher plateaus near Alcamo. Sandy soils around Noto and the slopes of Monte Iblei provide more flavoursome interpretations with an exotic touch. Smaller plantations on Pantelleria grow in terraced gardens, benefit from volcanic sand and contribute to particularly aromatic passito wines.
Cellar art of the top houses
Cantine Rallo captures the juicy side of Grillo, working with short maceration times and clear steel tank maturation to preserve freshness and fruit. Arianna Occhipinti ferments spontaneously in concrete and avoids wood, bringing smoky precision and subtle herbal flavours to light. Tasca d'Almerita harvests at Tenuta Regaleali at an altitude of 600 metres; its Grillo shines with taut minerality and cool acidity, characterised by large day-night differences. Other references include Planeta, Donnafugata, Cusumano and Feudo Maccari. Historical synonyms such as Riddu or Rossese bianco di Sicilia only appear in archives.
Flavour play and food lovers
Grillo harmonises particularly well with maritime cuisine. Ceviche, grilled swordfish or pasta alle vongole reflect its salty freshness. A Sicilian caponata emphasises the herbal notes, while burrata or young Ragusano provide a creamy contrast. Asian dishes with lemongrass and coriander also pick up on the citrus flavour. The wine is ideally served at eight to ten degrees Celsius; reserve versions with subtle wood can withstand eleven degrees and half an hour in a carafe.
Hungry for sunshine & Authentic
Old winegrowers from Marsala say that the Grillo is so addicted to the sun that the berries crack softly in July when the mistral wind carries salt crystals from the salt pans. They jokingly call this cracking "il canto del grillo" – the song of the Grillo berry. Alessio Planeta describes the grape variety as follows: "Grillo captures the Mediterranean air and makes the light of Sicily sparkle in the glass." A beautiful image. Today, Grillo shows how tradition can become innovation: A once underestimated Marsala component has been transformed into a modern, salty-fresh white wine that tells the story of sun, lime and sea breeze in every sip.
