"For me, Pinot Noir is the finest and, at the same time, the most challenging grape variety," Franz Haas once said. His father had always grown it, so his path was already mapped out – until one day he was fortunate enough to taste an exceptional Grands Échezeaux from Burgundy. From that moment on, his real challenge began: to create a wine that would follow in its footsteps. Countless experimental batches over decades, using a wide variety of clones and different fermentation and ageing methods, all pursued a goal that had already been his father's: the perfect Pinot Nero. Franz Haas dedicated a specially designed artist's label to this wine, which embodies his entire passion for the most challenging of all grape varieties: Riccardo Schweizer designed it for the first vintage of 1987 – released in 1990 – and thus gave the wine its name. To this day, this wine is not produced every year: it is only released if it meets its own exacting standards.
The grapes come from carefully selected plots at altitudes of between 350 and 700 metres, where the soil types vary within a very small area: silt alongside sand, limestone and gravel. An exceptionally high planting density of 8,000 to 12,500 vines per hectare, combined with rigorous in-house clonal selection of low-yielding lines, ensures stable, consistent quality development over the years. Fermentation takes place in open stainless-steel tanks with gentle, frequent punching down of the cap, before the wine is transferred to barriques for malolactic fermentation. Twelve months' ageing in wood, followed by a further year in the bottle.
Ruby red, with a lighter or deeper intensity depending on the vintage. A complex, multi-layered bouquet of ripe berries and cherries, spicy pepper and leather. On the palate, captivating tannins, elegance and subtlety, a harmonious texture and fullness that lend this wine exceptional ageing potential. SUPERIORE.DE
