A wine like a contemporary document: the Selezione Vecchie Vigne 2000 by Emidio pepstands for a unique quality standard - biodynamically produced, matured for decades, then uncorked by hand, checked by Emidio, re-corked and only then released for sale. The result is a rarity that not only bottles history, but brings it back to life. The grapes come from the estate's oldest vines, some of which are ungrafted, cultivated according to biodynamic principles and harvested in a peak vintage with a mild spring, hot summer and small, concentrated harvest. Fermentation took place spontaneously, without temperature control, in glass fibre vats - ageing without wood, without filtration.

Deep garnet colour with a brick-red rim. The nose opens slowly and complex: pickled sour cherries, black tea, dried flowers, iron, undergrowth, soya sauce, truffles and balsamic herbs. Smooth and delicate on the palate, with silky tannins, vital acidity and mineral pressure. A wine full of inner tension and energy, mature but not tired - long, lively, meditative. "The ageing of wines has always played a decisive role in the philosophy of our company. This is the reason why today we are proud to be able to offer many of the oldest vintages directly from our cellar. We differentiate as follows: We make two bottlings each year. Younger vintages, which we bring to the Italian market, come from younger vineyards and the wines from the old vines are left to mature in our cellar for at least 5 years and then gradually released onto the global market. The latter wines are labelled 'Selezione Vecchie Vigne' to make it easier to distinguish them.
