      For 40 years Il Borgo del Balsamico has been producing the genuine Aceto Balsamico Tradizionale di Reggio Emilia DOP and very good Condimenti in the Acetaia in Albinea. Cristina Crotti is the mistress of ancient vinegar barrels in the attic that her father bought from the noble families of the province of Modena and Reggio Emilia. The barrels are made of six different types of wood: Chestnut, oak, cherry, acacia, juniper and ash.

      Also the younger Condimenti are of excellent quality. Condimenti are stored for 3, 4 and 5 years in oak barrels. Condimenti in their diversity are interesting supplements to spices. As with olive oil, it is worth having different intensities of taste for cooking and seasoning at hand in the kitchen.
