    • "Carte Noire" Olio Extra Vergine di Oliva Riviera Ligure DOP 2018

“Carte Noire” Olio Extra Vergine di Oliva Riviera Ligure DOP 2018

      Olio Roi | Liguria

The Carte Noire is a strongly limited ligurian drip oil, which is won after special procedure. Only absolutely intact olives are used. After being ground between granite stones, the paste is spread on mats. These are laid on top of each other, then the olive oil obtained in this way runs downwards without pressure and is collected there.

The result is a mild oil not without certain rustic notes, with light sweetness and hints of spices, almonds, pine nuts, apple and vanilla. Excellent for salads, for seasoning fresh cheeses, but also with white meat. SUPERIORE.DE

"The Carte Noire drip oil impresses with intense notes of dried fruit, herbs such as basil and tarragon, sweet almonds and a slightly spicy aftertaste. The gourmet

    • "Giolio" Olio Extra Vergine di Oliva 2018

“Giolio” Olio Extra Vergine di Oliva 2018

      Oleari Giachi | Tuscany

The Giachi family has always passed on part of their olives to other oil mills, which have then marketed them under their own label. The most rigorously selected selection of the harvest was always reserved for the company's own Primolio, Dolciolio, Snocciolato and Colle del Giachi products.

In 2002 it was decided to process and market the higher quality part of the olives that had previously been resold. Thus the line "Giolio" was added, which captivates by a particularly good price-performance ratio and whose name reminds of the founder Giovanni. The Olio with its pleasantly low acidity is a high-quality companion to a variety of dishes. Mild and soft with grassy hints. SUPERIORE.DE

“Colle del Giachi” Olio Extra Vergine di Oliva Chianti Classico DOP 2018

      Giachi Giovanni | Tuscany

This olive is the highlight of Giachi's oil production. It is produced from the Frantoio and Moraiolo varieties in the high hills of Chianti Classico, with a pronounced calcareous soil. Here the olive tree produces very low yields and consequently a pithy oil with very low acidity. The characteristics of the oil can thus be preserved in the long term and a perfect balance between fullness of flavour and mildness is achieved. SUPERIORE.DE

“Primolio” Olio Extra Vergine di Oliva 2019

      Oleari Giachi | Tuscany

The fruits for this oil are already harvested manually in the first decade of November. Immediately after the harvest, cold pressing is carried out to preserve the fresh nuances of the not fully ripe fruit. Before bottling, the oil is filtered through cotton wool and thus separated from the amniotic fluid depot, which over time would affect the original quality.

This olive oil captivates by the extremely low acid content and an excellent taste picture. It is a true speciality of the House of Giachi, for which they receive worldwide recognition. SUPERIORE.DE

For this oil the olives are picked exclusively by hand. A sub-game of it only in December. Immediately after harvesting, the olives are ground and cold pressed to preserve the characteristics of the fruit in the oil. Before bottling, the oil is filtered through cotton wool and thus separated from the amniotic fluid depot, which over time would affect the original quality.

The higher degree of ripeness of the olives achieved by the late harvest guarantees the production of an olive oil with a very soft and delicate character. SUPERIORE.DE

    Olive Oil

Honestly. There is no other product with so much confusion due to incorrect designations. Tests appear to be constantly more alleged "experts"who then highly rate a supermarket oil that actually smells rancid. There are strict regulations, but they are not checked properly, because more than 90% of the extra virgin available on the market do not deserve this designation at all. Hard to believe. That's true.

And the reason is obvious: on one hectare - about one and a half football fields - there are on average less than 50 olive trees in the best Italian olive regions such as Tuscany, Puglia, Umbria or Liguria. If one calculates 6-7kg olives per tree, then this is a good litre extra virgin, so we are talking about a hectare yield of just 50-60 litres extra virgin olive oil. The production costs are therefore usually more than 10 euros/litre. However, a winegrower produces about 5,000 litres of wine on the same area. From this point of view, the production of really high-quality Extra Vergine is a clear case of hobby. Conversely, a supermarket oil that costs 5 euros (or less!) per 0.5-litre bottle and has the label "Extra Vergine" never be real.

Good extra virgin olive oil is green, rarely tending to yellowish. It smells fresh and of plants, like freshly cut grass, meadow herbs, after fresh green olives, some sorts also after artichokes and tomato panicles. It also tastes fruity green, is sometimes bitter to bitter in the finish and scratches a little. If the oil smells of butter, nuts or even cheese, it is oxidized and faulty.

Forget the beautiful old mill with the big stone wheels.

Even if one likes to show these spectacular old structures to tourists, no good oil comes from such mills. Extra virgin qualities can only be obtained from carefully harvested olives that are harvested as quickly as possible, within a few hours, in the not at all "picturesquely" the stainless steel looking press. And if the olives are never heated above 27 degrees during pressing, we speak of cold-pressed - these are all good olive oils today. Extra virgin olive oil is healthy and in ancient times it was considered a remedy. Good olive oil is rich in "monounsaturated fatty acids"phenols and vitamin E. SUPERIORE.DE
