Giovanni Manetti's white exotic wine from the legendary Conca d'Oro in Panzano: "È per divertirmi", something for your own pleasure, as the patron of Fontodi likes to say with a grin. While his Sangiovese wines enjoy worldwide fame, one of the most beautiful Tuscan white wine rarities is made from 100% Sauvignon Blanc from the La Rota vineyards. The north-west facing plot has been strategically chosen: Here, the vegetation grows more slowly and the grapes are spared the intense summer heat of Tuscany. This organically certified rarity is produced in only 8,000 bottles per year. After manual harvesting, temperature-controlled fermentation takes place in stainless steel tanks, with part of the wine being vinified in amphorae and untoasted barrels. The six-month maturation on the lees in steel tanks preserves the wine's characteristic purity and freshness.

"LUI XXI" is a rare voice from the heart of Alois Lageder's vineyard thinking. The small parcel from which it originates has been producing exceptional harvestfor years – it is one of the hottest and most labour-intensive sites in the family. The planting material is special, the cultivation demanding and the fruit quality uncompromising. In 2021, the decision was made to bottle the result separately – pure, unadorned and clear as mountain air. The grapes were harvested on 25 August: half as whole bunches, half destemmed and gently crushed. After five days of maceration, both fractions were pressed together and transferred to a single 13-hectolitre wooden barrel. Fermentation, malolactic fermentation and maturation on the lees took place there for a total of eleven months. The wine was bottled in August 2022 – unfiltered and minimally agitated, with maximum expression of origin.

Tannenberg – a parcel within the Lieben Aich vineyard that stands alone. While the Lieben Aich represents the entire Tenuta, this Sauvignon concentrates on a specific parcel: the one with the most pronounced mineral structure. South-western slope, 300 metres above sea level, warm and breezy microclimate. The soils of sandy loam over porphyry weathered rock are water-permeable and low in nutrients – conditions that require concentration. 2024 was a challenging vintage: a wet spring, then a hot and dry summer, followed by a golden autumn that allowed for perfect physiological ripeness. In mid-September, the grapes showed ripe fruit, cool character and moderate alcohol – ideal conditions for long-lasting wines with tension. The yield per hectare was 43 hectolitres. Vinification follows Manincor's biodynamic philosophy: the destemmed berries macerate on the press for twelve hours to extract flavour and structure from the skins. Spontaneous fermentation with the grapes' own yeasts takes place in wooden barrels, followed by nine months of ageing on the fine lees. The phases of the moon determine sowing, cultivation and harvesting: Rudolf Steiner's principles, consistently implemented. 11,900 bottles and 217 magnums were filled.

1989 is the birth year of the most famous wine from the St. Michael-Eppan winery. Andrius. Here, where in 1893 courageous winegrowers laid the first foundation stone of South Tyrolean co-operative history, a Sauvignon Blanc of rare strength and elegance is still produced today. The vines thrive on the calcareous slopes between 260 and 380 metres, where dolomite rock and Andrian porphyry characterise the terroir like two old friends who complement each other. It is the Mediterranean climate that shows its cooler side up here. Temperatures drop at night, allowing the vines to breathe. During the day, the South Tyrolean sun warms the stony soils – an interplay that gives the Sauvignon Bianco that special tension that characterises great wines. In the hands of cellar master Rudi Kofler, selected grapes from the oldest vineyards are turned into a wine of remarkable depth. Six months on the fine lees. The Sauvignon vines thrive between 400 and 800 metres above sea level on weathered dolomite rock with a south-south-west exposure. The extreme altitudes of the Haas vineyards ensure pronounced day-night temperature fluctuations, which give the Sauvignon the aromatic intensity for which Franz Haas is known throughout South Tyrol. The mineral terroir of weathered dolomite rock has a lasting influence on the character. The vinification follows a precise concept: after a night of maceration at low temperatures, the grapes are gently pressed. The must ferments partly in stainless steel tanks, partly in barriques and then matures for eight months on the fine lees – a period that goes far beyond the usual and gives the wine remarkable depth and complexity. This long maturation period on the lees gives it the creamy texture that sets it apart from the classic lean Sauvignon profile.

Oberkerschbaum – the upper cherry tree farm. The name is an expression of the everyday nature of mountain life: a farm named after the trees that lined its edge. However, what makes this plot stand out from the ordinary is its location. The vineyard is located in Pochi di Salorno, UGA Buchholz, on the southernmost border of South Tyrol – where the province crosses into Trentino. At 770 to 800 metres, exposed to the south-west, on pure volcanic porphyry without any limestone content. No other Vigna vineyard of the estate is so high, none has such a consistently eruptive geology. The Sauvignon Bianco thrives here under extreme but precise conditions: an exceptional amount of sunshine intensified by the altitude, cool nights that slow down ripening and preserve freshness, a soil that transfers the minerality of the volcano directly into the grapes. The Vigna classification, first introduced for Alto Adige by Paolo Foradori, stands here for a parcel that bears no comparison. The Riserva designation of the 2023 confirms the extended ageing process.

The Vieris vineyard covers 9.4 hectares with predominantly French clones, planted at the highest density: 0.7 kilograms yield per vine. On the same glacial gravel soils in the Isonzo Valley, with the same Bora coolness and the same Adriatic light – but with a yield that forces the wine to search deeper. Gianfranco Gallo deliberately vinifies the Vieris for a creamier texture: less focussed on varietal character, more on terroir. The world of Sauvignon Blanc knows two great voices: the Loire Valley and Marlborough. Gianfranco Gallo has added a third – the Isonzo Valley. Not because he wanted to, but because the Piere vineyard decided so. 11.5 hectares in Mariano del Friuli at 34 metres, predominantly Italian clones with loose grapes on deep, gravelly-sandy soils with conglomerate components. The bora brings coolness, the Adriatic Sea brings ripeness, the Isonzo brings minerals. Short cold maceration, fermentation at 16–19 °C, eight months on the yeasts, no malolactic fermentation, ten months in the bottle.

The name "retus" comes from "Rhaetia" or "Raetia", the name of the Roman province. In Celtic, "reit" refers to a mountain village. Bright straw green colour. Wild herbs, orange peel, green fruit and spices on the nose. Round and broad on the attack, then more straightforward and restrained in the centre, with a sufficiently salty edge and harmonious acidity to buffer the subtle fruit sweetness. Tenuta San Leonardo is a name that stands for red wine. For generations, the Guerrieri Gonzaga family in Avio, in southern Trentino, has been cultivating a Bordeaux blend that is considered by connoisseurs to be among the best wines in Italy. The fact that the house also makes white wine (and rosato) – and with the same precision – far fewer people know. Vette di San Leonardo owes its name to the peaks that surround the vineyards. Vette – summits, peaks – is the image San Leonardo has chosen for this Sauvignon Blanc: high, clear, unmistakable. The grapes come from Roveré della Luna, a village on the border between Trentino and Alto Adige, which is one of the best Sauvignon Blanc vineyards in northern Italy. The Dolomites as a backdrop, cool nights, a long ripening process on the vine. Hand-picked in September. Only steel, no wood. Five months sur lie on the fine lees – for texture and depth without external ageing.
