    Risotto mediterraneo is a finely balanced risotto mix from Tuscany with Mediterranean herbs and chunks of red and green peppers, aubergine, onions, carrots and celery. The preparation is uncomplicated, but the result is all the more satisfying: a creamy, flavoursome vegetable risotto with a lovely depth and southern character. Refined with a little olive oil, a dash of white wine if desired, butter and grated Parmesan cheese to finish, the result is a well-rounded, authentically Italian dish with plenty of flavour.
