Bianco Trinoro is made from 100% Semillon from a tiny sandy plot in the highest locations of the Trinoro winery. A Franciacorta of great clarity and stylistic refinement: Pas Operé 2016 is a finely composed blend of around 75% Chardonnay and 25% Pinot Noir, obtained exclusively from historic vineyards with over 30 years of vines. The grapes come predominantly from plots exposed to the south-east and are subject to extremely strict selection. At least 60 months of bottle ageing on the fine lees give the wine a creamy texture and complex depth. Pas Operé presents itself in the glass with a warm straw yellow colour, supported by a particularly elegant and delicate perlage. On the nose, it develops aromas of white peach, citrus fruit, brioche, honeydew melon and nuances of roasted hazelnuts, delicately accompanied by herbal nuances and mineral freshness. On the palate, it displays a fine acidity structure and an elegant tension, carried by subtle spice and salty length. The extremely popular and elegant Amarone classic from Zenato comes from Sant'Ambrogio, the heart of the Valpolicella Classico, where the family has had its home since 1960. Corvina dominates the cuvée with eighty per cent, complemented by Rondinella, Oseleta and Croatina – all from the slopes of the Costalunga parcel. After the hand harvest in October, the ritual of appassimento begins: the grapes rest for four months in shallow crates, losing water and concentrating sugar and flavours. Pressing does not take place until January, followed by slow fermentation with skin contact. The wine then matures for thirty-six months in large Slavonian oak barrels before being released after further maturation in the bottle.

This is no coincidence: the hills south-west of Montepulciano are among the oldest and best-known vineyards in the appellation, and their wine history can be traced back to the early 19th century.

After three weeks of spontaneous fermentation in stainless steel tanks with indigenous yeasts, the organically certified wine matures for twelve months in French barriques from Troncais and Allier.

“Bianco Secco” Veneto IGT 2024
In a winery that is world-famous for its monumental Amarone and Recioto, a dry white wine seems like a quiet provocation. But Giuseppe Quintarelli would not be Quintarelli if this Bianco Secco was not vinified with the same uncompromising dedication. The exceptional blend combines 70 per cent of the indigenous Garganega with Chardonnay, Sauvignon Blanc, Trebbiano and the rare Saorin – a white grape variety that only survives in a few vineyards in Valpolicella. The vines, which are at least thirty years old, are rooted in the characteristic limestone and basalt soils of Negrar, which give the wine that volcanic smokiness that distinguishes it from other Venetian white wines. After the harvest, a twelve-hour cold maceration takes place, followed by temperature-controlled fermentation. Ageing takes place in stainless steel on the fine lees, with regular bâtonnage for added texture and complexity.

The year was 1090, the year in which Leif Erikson discovered North America, the Chinese discovered gunpowder and Pope Urban II conquered Jerusalem. On that day, the notary Bellundo recorded a contract in the Siena state archives: two capons, three loaves of bread and six coins of good silver as an annual lease for a vineyard in the divine valley of Dievole. "Dio vuole" – god wants it. This is the etymological root of this name, which has symbolised the special connection between man and nature in this corner of Tuscany for over nine centuries.

Animanaturale from vines over 60 years old is the lightest and freshest wine from the new Animaetna line of the small garage winery Contrada Santa Spirito, which belongs to Feudo Maccari. Matured almost entirely in amphorae, the Nerello Mascalese grape presents itself here in all its fruitiness and freshness, completely unadulterated and pure. The grapes are foot-pressed, spontaneous fermentation is carried out using the grapes' own yeasts, racking and bottling take place according to the phases of the moon.
