Named after Cassian, the son of Count Michael Goëss-Enzenberg, who was born in 1996, the same year that Manincor opened its own winery. A name that stands for new beginnings, for the future, for the next generation. The cuvée combines six international grape varieties from the estate's best red wine sites: Manincor, Seehof and Panholzerhof, between 250 and 280 metres above sea level. Exposed to the south-east with a view of the lake, the vines are rooted in strong sandy loam soils interspersed with limestone gravel and glacial rock deposits – these plots are among the warmest sites in South Tyrol. Each grape variety is vinified separately. Mash fermentation takes place spontaneously in wooden vats with wild yeasts. The 16-month maturation in barriques (one third new wood) refines the structure without dominating the fruit. Blending only takes place shortly before bottling – the art of composition, in which character and individuality merge with solemnity and elegance.

Gianfranco Gallo has a phrase that he always repeats: "Wine needs time to show what it is." This is not modesty – it is an attitude that characterises his entire winery. Since 1992, all Vie di Romans wines have only been released on the market two years after the harvest. The Chardonnay that bears his name is the most personal expression of this conviction. The vineyard is located in Mariano del Friuli on glacial gravel soils deposited by the Isonzo over thousands of years – gravel-rich, mineral-rich, aerated. The bora winds from the east create pronounced temperature fluctuations between day and night, keeping Mediterranean ripeness and Alpine freshness in a rare combination. Late harvest to achieve maximum aromatic ripeness. Control over oxidation from the first moment. Fermentation at a controlled temperature, nine months on the lees in barriques, then bottle ageing.

The same triad – calcarole, Pojega, Rovereti – and yet a completely different wine. Where the 2019 offered warmth and richness, the 2021 is more about precision and classic contours. The April frost noticeably reduced yields, but what followed was a gift: a summer in which temperatures never exceeded the critical 33-degree threshold for Corvina. The vines ripened steadily, without heat stress, with cool nights that preserved acidity and flavour. The subsequent appassimento in the historic drying rooms of Pojega took place under ideal conditions – dry, cool and even. The winemakers of Valpolicella simply call 2021 "l'annata perfetta".

1172 – the year in which Volpaia is first mentioned in documents. A small, fortified borgo on a hill north of Radda in Chianti, built as a border fortress between Florence and Siena. Today it is a jewel of peace and beauty and one of the most historic wine villages in Tuscany. Here, where soldiers once stood guard, the Stianti-Mascheroni families now press their grapes within the medieval walls. The bottles mature in the vaults of old churches and almost every cellar contains a tank of organic wine. An entire village dedicated to viticulture. So complete that it becomes poetic again. The Riserva is made from 100% Sangiovese from vineyards between 400 and 600 metres above sea level. One of the highest wineries in the region. Up here, where the air is thin and the nights are cool, Sangiovese develops the elegance and minerality that makes Volpaia so distinctive. Sandstone, clay and sandy-loamy soils with a high proportion of skeleton. Manual harvest in the second half of September, temperature-controlled vinification, then 24 months in French and Slovenian oak barrels.

Fusonero is the powerful, broodinginterpretation of Taurasi – made purely from Aglianico from high-altitude vineyards in Irpinia, where volcanic soils and cool nights lend the grapes complexity and structure. 2016 produced balanced, ripe berries with firm acidity and rich phenolics – ideal conditions for a long-lasting Taurasi. Almost impenetrable ruby colour with a purple core in the glass. A rich composition of black cherries, blackberries, dried plums and liquorice on the nose, underpinned by cedar wood, tobacco, dark chocolate and a fine balsamic note. Powerful yet supple on the palate, with present, ripe tannins that are perfectly balanced by juicy fruit and fresh acidity. The mineral vein carries the wine through to a long, spicy final with hints of smoke and herbs. Our verdict: A Taurasi of aristocratic depth that reveals the great potential of the grape variety in an outstanding vintage – structured, long-lasting and with a presence that will continue to unfold for many years to come. In the gentle hills above Trento, where the Dolomites majestically watch over the Adige Valley, lies a vineyard called Fontanasanta, the "Holy Spring". Here, at an altitude of 400 metres and on calcareous clay soils, Elisabetta Foradori preserves one of Trentino's most precious treasures: the Nosiola, an ancient indigenous grape variety that was once at the heart of the region's wine culture but is now threatened with extinction. Only three hectares are dedicated to this rare variety. Nosiola, whose name is derived from the dialect word "nosela" for hazelnut, requires patience and sensitivity. In wet Alpine years, it can be capricious, but under Elisabetta's biodynamic guidance, it unfolds its full aromatic complexity. The vinification process follows the revolutionary Foradori philosophy: after hand-picking, the de-stemmed berries are placed in Spanish tinajas, where they ferment on the skins for eight months – a process that gives the Nosiola its characteristic golden yellow colour and structural depth. A short maturation in used acacia barrels rounds off the profile.

The approx. 35-year-old Pinot Nero vines stand near the village of Rodel-Pianezzi at an altitude of approx. 500 m. Ruby-red wine with aubergine reflections. Frank, clean scent of wild strawberry, raspberry and delicious notes of tobacco. On the palate, a very well-balanced extract-tannin ratio, yet complex, soft and with a spicy-salty vein. Innovation often means leaving old paths and exploring completely new ones. Fuoripista – which means "off the beaten track" – is Elisabetta Foradori's most radical response to conventional Pinot Grigio ideas. What began in 2016 as an experiment with biodynamic winemaker Marco Devigili has evolved into a redefinition of what a white wine can be. Just two hectares on the Campo Rotaliano provide the grapes for this extraordinary project. On the typical alluvial soils of gravel and sand, pergola-trained Pinot Grigio vines thrive, whose fruit takes an unusual path. After being harvested by hand, the de-stemmed berries go straight into Spanish tinajas – the egg-shaped clay amphorae that Elisabetta favours for her revolutionary vinification. The impossible happens here: The grapes remain in contact with their skins for eight months, a process that gives the wine its amber-golden colour and structural complexity.

In 2000, buyers were at the door. The Fucci family had almost given up on the six hectares of vineyards that their grandfather Generoso had acquired at the foot of Monte Vulture in the 1960s – the parents teachers, the children on their way into the world. At the last moment, daughter Elena decided otherwise. Not out of calculation, but out of a feeling that she herself later described as "a stab in the heart": she could not accept that a foreign name would do something great with the oldest vines of the Vulture while she watched.

When Aldo Pola took Luisella from nearby Serracapelli as his wife, this union not only brought two people together, but also the Pola family with the cru that is now one of the most sought-after in the municipality of Neive: Serraboella. Here, on calcareous soils of medium structure, 300 metres above sea level, Nebbiolo thrives in an interpretation that differs from the powerful Bordini – more reserved in its youth, almost shy, but with an elegance that comes to full fruition over the years. What Matteo Pola vinifies from the 30-year-old vines of this single vineyard is a Barbaresco of remarkable harmony – a wine that impresses not with its volume, but with the crystalline precision that characterises great terroirs.
