There are houses that ask themselves a single question. Not: What else can we do? But rather: How well can we do one thing? Galardi, at the foot of the extinct Roccamonfina volcano in northern Campania, has been producing exactly one wine since 1994. Just one. Year after year. The location is exceptional: south-west exposure at 500 metres, volcanic soil of silt, clay and rock, rich in mineral salts from two eras of volcanic activity – leucite lava and basalt, superimposed and weathered over hundreds of thousands of years. Chestnut woods, olive groves, underground springs that never dry up, even in dry years. The sea breezes from the Gulf of Gaeta provide natural climate control. 80% Aglianico, 20% Piedirosso – the legitimate natives of this region. Fermentation with skin contact for 20 days, pumping over twice daily, malolactic fermentation in steel, twelve months ageing in French barriques (40% new, 60% second and third passage), then a further twelve months in bottle.

It was 1988 when Bruno and Brigitte Widmer ventured a bold dream that would change the Tuscan wine world forever. Their Il Blu – named after the timeless blue label with orange capsule – became the icon of an entire generation of Supertuscans, a manifesto of modernity in the midst of centuries-old traditions. Today, after more than three decades of perfection, the organically certified Il Blu 2022 epitomises Barbara Widmer's visionary continuity. What once began as a Sangiovese-dominated cuvée has developed into an 80% Merlot blend with 10% each of Sangiovese and Cabernet Sauvignon thanks to the ever-growing complexity of the Merlot vines from Radda, now over thirty years old. Only the finest, hand-picked grapes for this exceptional wine come from the two Chianti estates in Castellina and Radda. The clay and galestro soils at an altitude of 230 to 400 metres, characterised by a continental climate with hot summers and cold winters, give the grapes their characteristic intensity. The vinification follows a ritual of precision: each parcel, each grape variety matures individually for 18 months in French barriques – two thirds new, one third used barrels. Only then is the final blend made, followed by three months of refinement in uncoated concrete tanks and at least one year of ageing in the bottle.

Serradenari means "holds the money" – a medieval nickname for those who fled to the cool heights after the plague and carried their savings under their arm. The history of the village is inscribed in its name. Giulia Negri built the family vineyard on this cru, at 480 metres, exposed to the south-west, in a natural amphitheatre that envelops the grapes on all sides. The soil is Messiniano – sandy-loamy clay with a strong limestone marl layer and sub-acidic pH. An acidic soil makes minerals more readily available, the vines more vigorous, the grapes smaller and thicker-skinned. More extract, finer tannin, more structure. Spontaneous fermentation, 45 days of maceration – the longest maceration of the three parcels. Then around 30 months in 25-hectolitre Austrian oak barrels.

At the end of the 1980s, Luca Sanjust planted the first Merlot clones in the clay-rich soils of Feriale, unaware that he would create a legend. The name Galatrona – once the dominion of the Tuscan dynasty, whose medieval watchtower towers over the ten-hectare vineyard – was to become synonymous with Italian Merlot perfection. "Le Pin of Tuscany", as Wine Spectator calls it, but at a fraction of the price of this mythical Pomerol. The 50,000 vines on southeast-facing terraces combine Bordeaux genetics with Tuscan soul. Clay stores the moisture that Merlot needs in the hot summers, while slate, marl and sandstone provide the mineral complexity.

Sergio Manetti, a steel entrepreneur from Florence, bottled his first wine in 1971 – a Chianti Classico from the two hectares of vines he had planted around his holiday home. A wine for friends and business associates, nothing more. He sent a few bottles to Verona for the major wine fair Vinitaly, more out of curiosity than ambition. The reaction was overwhelming. The hobby became a passion, and the passion a vocation. Until 1981, this wine bore the name ‘Chianti Classico Montevertine Riserva’. Then came the break. Sergio Manetti refused to blend white Trebbiano into his Sangiovese, as required by the Chianti Classico regulations. The decision cost him the DOCG – and made him a legend. From 1982 onwards, the wine was simply called “Montevertine”, without any additions, without compromise. A name that became a statement: Sangiovese in its purest, most traditional form, just as the old Chianti farmers would have pressed it before bureaucracy and commercialism dictated the rules. The wine comes mainly from a two-and-a-half-hectare plot facing south-southeast, planted in 1982 – in the year of the great upheaval.

In 1967, Sergio Manetti, a Milanese industrialist and passionate art collector, bought an abandoned estate in the hills of Radda in Chianti. He knew little about wine. He knew a great deal about quality. And he decided early on that his wine would make no compromises – —not even those demanded by the appellation. When the Chianti Classico DOCG stipulated that white grapes must be blended in, Manetti refused. From then on, his wine was called Toscana IGT. Not for lack of pride in Chianti – but because he had too much of it. What grows at Montevertine are the three indigenous reds of Chianti: Sangiovese as the soul, Canaiolo for elegance, Colorino for colour and structure. No additions, no international compromises. Martino Manetti, Sergio’s son, runs the estate with the same conviction: “Simplicity, respect, care for every detail and savoir-faire” – is how the estate itself describes its philosophy. Words that sound simple, yet are so difficult to put into practice.

When Luciano Sandrone decided in 2013 to rename his legendary Barolo Cannubi Boschis, he did not choose just any name, but created an acronym from the first names of his grandchildren: ALEssia and STEfano. ALESTE – a word that embodies experience, continuity and the hope that what he began in 1985 with the first bottle from Cannubi Boschis will live on in the hands of the next generation. Cannubi Boschis, the sub-parcel at the heart of Barolo’s legendary Cannubi vineyard, is the vineyard in which Luciano invested his entire savings in 1977 – directly opposite the winery, on a hill whose potential he recognised from the very first moment. Here, on optimal soils in a sheltered, sun-drenched location, Nebbiolo flourishes into that combination of power and finesse that has made Cannubi famous worldwide.

Three generations bear this name: The grandfather, who always encouraged Giampaolo Motta in his wine dreams. The son who carries on the torch. And in between, this wine, the highest expression of a man who left the leather goods business of his Neapolitan family to create his Bordeaux in the Conca d'Oro of Panzano. The "Golden Basin" – cultivated since 1490, planted with Merlot and Cabernet for almost 400 years – became Motta's stage in 1992. He experimented with Chianti Classico for ten years, then the break: he left the Consorzio because the rules stood in the way of his vision. "I wasn't really happy with the result after ten years of work," he explained laconically. What followed was pure consistency – and, since 2008, a partnership with Stéphane Derenoncourt, perhaps the most influential consultant on the right bank of Bordeaux.

2016 was not an easy year in Valpolicella – and Romano Dal Forno still delivered. That sounds obvious, but it's not: in years like 1992, 2005, 2007 or 2014, there was simply no Amarone. That is the currency in which trust is bought here. Dal Forno Romano has its own clock ticking for the release of the large bottles: they come onto the market three years after the 0.75 litre bottle. What this means for 2016 is obvious. After six weeks of appassimento, 36 months in new barriques and long maturation in the large format, this Valpolicella has reached a level of maturity that only the large glass can appreciate.

The 2015 Valpolicella Superiore Monte Lodoletta is a particularly elegant, pretty and typical expression of the Dal Forno style. Black cherries dipped in rum, plum sauce, brown spices and a hint of cocoa rise from the glass. Silky and polished, it seamlessly washes over the palate with ripe red and blackcurrants, while leaving minerals and a fine layer of tannins behind.
